Creamy Lemon Pie

(Family Features) - Summer marks the season of many happy occasions, such as Father's Day, graduations, weddings and July 4. Even if you don't have any festivities planned, you can turn any day into a simple celebration of summer with the right recipe!

Sweetened condensed milk is the magical ingredient in many delicious desserts guaranteed to put a spring in your step. When combined with acidic fruit juice such as lemon juice, sweetened condensed milk thickens to form velvety pie fillings, puddings and other desserts. Creamy Lemon Pie

Ingredients
  • 3 egg yolks
  • 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
  • 1/2 cup lemon juice
  • 1 (8- or 9-inch) baked pie crust or graham cracker crumb crust
  • Whipped topping or whipped cream
  • Lemon zest (optional)

Preparation
    1. Preheat oven to 325°F.
    2. Beat egg yolks in medium bowl with rotary beater or fork; gradually beat in sweetened condensed milk and lemon juice. Pour into crust.
    3. Bake 30 to 35 minutes or until set. Remove from oven. Cool 1 hour. Chill at least 3 hours.
    4. Before serving, spread whipped topping or whipped cream over pie. Garnish with lemon zest (optional). Store leftovers covered in refrigerator.

Serves
Makes 1 (8- or 9-inch) pie
