Green Chile Quesadillas

Description
Extremely quick and easy to prepare, these make a great vegetarian alternative to traditional burgers and dogs.

Ingredients
  • 8 small tortillas
  • 1 1/3 cups Horizon Organic Mexican shredded cheese
  • 1/2 cup canned diced green chiles
  • 2 tablespoons Horizon Organic unsalted butter, melted
  • Salsa, guacamole and Horizon Organic sour cream, as accompaniments

Preparation
    1. Preheat grill to medium high.
    2. To assemble each quesadilla, sprinkle a tortilla with 1/3 cup cheese and 2 tablespoons diced green chiles. Top with a second tortilla to form sandwich.
    3. Brush one side of each quesadilla with melted butter and grill, butter-side down, until tortilla is golden and crisp and cheese begins to melt.
    4. Brush other side with butter and flip to finish grilling. Cut quesadillas into wedges and serve warm with salsa and sour cream.

Four-Grain Yogurt Pancakes

Description
A great, healthy start to the day. Kids love to help mix the batter.

Ingredients
  • 1 cup unbleached flour
  • 1/2 cup whole-wheat flour
  • 2 tablespoons each: cornmeal, soy flour, wheat germ and oat bran
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 1/2 teaspoons sugar
  • 2 large Horizon Organic eggs
  • 2 tablespoons Horizon Organic unsalted butter, melted
  • 2 cups Horizon Organic fat-free plain yogurt
  • 3/4 cup Horizon Organic fat-free milk

Preparation
    1. In large mixing bowl, combine flours and grains, baking powder, baking soda and sugar.
    2. Beat in eggs, melted butter, yogurt and fat-free milk. Batter will be lumpy.
    3. Lightly oil hot griddle. Bake pancakes on griddle at medium temperature. Serve immediately with butter, fresh fruit and syrup.
