Strawberry Pink Ribbon Cake

(Family Features) - Whether you're hosting a fundraising event or celebrating the completion of a support walk, continue to spread breast cancer awareness this October with a symbolic ribbon cake. 

Folded into loops and denoted by various colors, awareness ribbons are a subtle way to make a statement in support of a particular cause. Demonstrate your encouragement by whipping up a pink ribbon cake - the color for breast cancer awareness - using the Wilton Ribbon Pan. 

This Strawberry Pink Ribbon Cake uses a cake mix base for extra ease and convenience. Sour cream and pureed strawberries add delicious flavor and the signature pink color.

Once the cake has baked and cooled, continue to "think pink" and get ready to decorate.  For the richest pink, add rose icing color to homemade buttercream icing, or simply purchase canned white icing and color it pink. Perfect for a crowd, this cake serves 12. 

Strawberry Pink Ribbon Cake

Ingredients
  • 1 package (18.25 oz.) white cake mix (no pudding in the mix)
  • 1/2 cup sour cream
  • 4 egg whites
  • 2 tablespoons vegetable oil
  • Rose Icing Color
  • 1 package (16 oz.) thawed frozen, sweetened strawberries, pureed
  • 3-1/2 cups buttercream icing or white canned decorator icing

Preparation
    1. Preheat oven to 350°F. Spray ribbon cake pan with vegetable pan spray.
    2. In large bowl, combine cake mix, sour cream, egg whites, oil and, if desired, icing color with electric mixer. Beat on high 2 to 3 minutes; gradually add pureed strawberries. Continue mixing 2 to 3 minutes or until well blended. Divide batter evenly between prepared pans.
    3. Bake 35 to 40 minutes or until cake tester inserted in center comes out clean. Cool in pan on cooling rack 10 minutes; remove from pan and cool completely.
    4. Cut cake board to shape; cover with Silver Fanci-Foil. Tint 1-1/4 cups icing pink. Position cooled cake on prepared board. Spatula ice sides smooth with white icing; spatula ice top fold area of ribbon smooth with pink icing. Outline ribbon in pink with tip 4; fill in with tip 16 pink stars. Pipe tip 18 white shells on bottom border.
