Roasted Herbed Potatoes

  • 1 pound small red potatoes, washed
  • 3 tablespoons olive oil
  • 1/2 teaspoon coarse black pepper
  • 1 teaspoon salt
  • 1 teaspoon parsley
  • 1/2 teaspoon rosemary
  • 2 teaspoon chopped garlic

    1. Preheat oven to 400° F. Cut potatoes into wedges. Mix all other ingredients in large bowl, then add potatoes and toss. Arrange in single layer on lightly greased baking sheet. Cook for 25-30 minutes turning over once half-way through cooking for best browning. Check for doneness by poking with paring knife or fork.
