Honey Ginger Salad With Grilled Salmon

Honey Ginger Salad With Grilled Salmon

  • 12-16 ounces salmon fillet
  • 2 6-ounce packages Fresh Express Garden Salad
  • 2 cups cherry tomatoes, halved
  • Honey Ginger Dressing:
  • 5 tablespoons salad oil
  • 1 1/2 tablespoons sesame oil
  • 1/3 cup seasoned rice vinegar
  • 1 1/2 tablespoons honey
  • 1 tablespoon grated gingerroot
  • Dash hot pepper sauce, or to taste

    1. Prepare grill with a fairly hot fire. Arrange Garden Salad in large shallow bowl with tomatoes, set aside. In a screw-top jar combine all Dressing ingredients; cover and shake well; reserve 5 tablespoons dressing for salmon.
    2. Place salmon skin side down on hot grill, cover and grill for 10 minutes. Uncover grill, brush salmon with reserved Dressing; remove from grill to cutting board.
    3. Toss Salad and tomatoes with some of remaining Dressing; portion onto 4 dinner plates. Top each salad with a portion of salmon, serve immediately with whole wheat dinner rolls. Refrigerate any remaining Dressing.
