Family Reunion Giant Cupcake

There's plenty of flavor packed into this generously sized treat that easily serves 12. Cocoa and coffee share the billing with tangy sour cream and semi-sweet chocolate chips in this moist and tender cake.

The Large Cupcake pan makes baking this showstopper easy. The top and bottom bake in two sections, which are then put together with a small amount of icing to form the cupcake.

Decorate with sunny lemon yellow-tinted icing and plenty of sprinkles, studded with Fun Pix? showing off favorite family photos.

Family Reunion Giant Cupcake

Ingredients
  • 2 teaspoons instant coffee
  • 1/2 cup boiling water
  • 1/2 cup unsweetened cocoa powder
  • 3 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 1/2 cups (3 sticks) butter, softened
  • 2 1/2 cups granulated sugar
  • 4 eggs
  • 2 teaspoons vanilla extract
  • 1 cup sour cream
  • 1 cup mini semisweet chocolate chips
  • 1 can (16 oz.) white ready-to-use decorator icing
  • Lemon Yellow Icing Color
  • Jumbo Stars Sprinkles

Preparation
    1. Preheat oven to 325°F. Spray pan with vegetable pan spray with flour. In small bowl, dissolve instant coffee in water; stir in cocoa powder and mix well. Cool.
    2. In bowl, combine flour, baking soda, baking powder and salt. In large bowl, beat butter and sugar with electric mixer until light and fluffy. Beat in eggs, one at a time. Add vanilla; mix well. Combine cocoa mixture and sour cream. Add flour mixture alternately with sour cream mixture, beating after each addition until smooth. Fold in chocolate chips. Spoon 4-1/2 cups batter into top of cupcake pan; spoon remaining batter into bottom of pan.
    3. Bake 60-70 minutes or until toothpick inserted into center comes out clean. Cool in pan on wire rack 15 minutes. Remove from pan; cool completely. Arrange layers on serving plate, spreading small amount of icing between layers.
    4. Tint icing yellow. With Tip #1M, cover top of cupcake, following swirl lines on top of cake. Add sprinkles, fun pix and pictures.
