Giant Chocolate Chip-otle Oatmeal Cookie

(Family Features) - Surprise dad with a deliciously decadent cookie that has a spicy secret ingredient -- chipotle chili pepper powder. Baked in a giant cookie pan, the Giant Chocolate "Chip"-otle Oatmeal Cookie, with its unique flavor and colossal presentation, is a cookie like no other.

Giant Chocolate Chip-otle Oatmeal Cookie

Ingredients
  • 1 package (12 oz.) dark cocoa Candy Melts, divided
  • 3/4 cup butter, softened
  • 2/3 cup granulated sugar
  • 2/3 cup firmly packed brown sugar
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1-1/4 cups all-purpose flour
  • 2/3 cup unsweetened cocoa powder
  • 2/3 cup quick oats, uncooked
  • 1 teaspoon baking soda
  • 1 teaspoon chipotle chili pepper powder
  • 1/8 teaspoon salt
  • Orange Decorating Icing

Preparation
    1. Preheat oven to 375°F. Spray round giant cookie pan with vegetable pan spray. Chop 1 cup Candy Melts; set aside. Melt remaining candy following package instructions; cool slightly.
    2. In large bowl, cream butter and sugars with electric mixer until light and fluffy. Beat in egg, vanilla and melted candy. In separate bowl, combine flour, cocoa, oats, baking soda, chili powder and salt; mix well. Add to butter mixture; mix well. Stir chopped candy into cookie dough. Press into prepared pan.
    3. Bake 18 to 20 minutes or until set. Cool completely in pan on wire cooling grid. Decorate as desired with icing.
