RBI Salad

(Family Features) - Bring the ballgame home this Father's Day with a big league dinner combining two of Dad's favorite things -- baseball and eating.

Start by preparing Dad's ballpark favorites -- jumbo hot dogs, Italian sausage and burgers -- hot off the grill. Then, for a grand slam side, try an easy RBI Salad. It's simple, full of flavor and it covers the bases on providing a healthy alternative to standard stadium fare.

Instead of Runs Batted In, Dad will cheer for Red onions, Broccoflower and Iceberg lettuce. It's a new twist on the classic Iceberg wedge salad, which is making a major league comeback on restaurant menus and at home because it's delicious and so easy to prepare.

The RBI Salad starts with fresh, crisp Iceberg lettuce. Choose a head that's light to medium-green, and one that's dense and firm to the touch. Cut it into equal size wedges, much like you would an apple or an orange, and top each wedge with creamy ranch dressing, crunchy Broccoflower florets, sweet Italian red onion, and crumbled bacon. Serve it on a chilled salad plate and you'll have Dad thinking he's dining at his favorite steakhouse. It takes just moments to assemble and is so simple you can even draft the kids to help.

Dad and kids alike will love the bright green color and crunch of Broccoflower brand green cauliflower. A mild, sweet cross between broccoli and cauliflower, its nearest relative, Broccoflower makes a great salad topper in the RBI Salad, but it's equally delicious and nutritious when served alone, raw or cooked. When cooked, it tastes more like cauliflower, but with a milder, sweeter flavor.

Set Dad up with an ice-cold beverage and you've got a fun, casual Father's Day meal that will knock dinner out of the park. For more great recipe ideas, visit www.taproduce.com.
