Pumpkin Pecan Bundt Cake with Spiced Caramel Sauce

(Family Features) - I'll admit it doesn't take much for us to celebrate -the changing seasons, your local soccer team's win or simply that everyone is home for dinner. And now that October's here, we can all celebrate National Dessert Month!

Autumn is a perfect time to commemorate desserts, and the weather cooperates by nudging us into the kitchen for baking. As we head into the long, festive season of celebration, favorite flavors are top-of-mind, and at the top of my list is pumpkin, our traditional fall favorite.

  • As the weather gets cooler, I love to heat up the oven to make breads and muffins, or cookies and cakes, which are perfect for the crisp fall days and the colors of these baked pumpkin recipes, fit perfectly with the colors of the season.

  • Pumpkin is also just the right flavor to complement the spices of the season like cloves, nutmeg, allspice, ginger, cinnamon and mace.

  • I enjoy this pumpkin cake which is so easy to make, with a cake mix and pumpkin pie mix, which already includes the spices.  I then can enjoy the wonderful aroma as it fills my home as it  bakes; and when it is done, this autumn treat, rich with pecans and served with a warm, spiced caramel sauce will remind you why autumn baking is so rich in rewards.

Pumpkin Pecan Bundt Cake with Spiced Caramel Sauce

Consider making two Bundt cakes. You can enjoy one cake immediately and freeze the other to have on hand for unexpected guests.

  • 3/4 cup coarsely chopped pecans
  • 1 pkg. (18.25 ounces) yellow cake mix
  • 1 can (30 ounces) Libby's Easy Pumpkin Pie Mix, divided
  • 3 large eggs
  • 1/4 cup vegetable oil
  • 3/4 cup packed brown sugar
  • 2/3 cup (5 fluid-ounce can) Nestlé Carnation Evaporated Milk

    1. PREHEAT oven to 350° F. Grease 9- to 10-cup Bundt pan. Sprinkle pecans in bottom of prepared pan.
    2. BEAT cake mix, 2 cups pumpkin pie mix, eggs and oil in large mixer bowl for 2 minutes. Spoon into prepared pan.
    3. BAKE for 35 to 40 minutes or until wooden pick inserted in center of cake comes out clean. Cool in pan on wire rack for 15 minutes. Invert onto wire rack to cool completely. Transfer cake to serving platter.
    4. COMBINE remaining pumpkin pie mix, brown sugar and evaporated milk in medium, heavy-duty saucepan. Bring mixture to a boil over medium heat. Boil for 1 minute; remove from heat. Serve warm sauce with slices of cake.
