Beets and Brie Appetizer

(Family Features) - Do you have your special appetizers lined up for this holiday season? Here's one that is sure to become a sensation - Beets and Brie. It's a stand-out starter that will carry you through from Thanksgiving to New Year's ... and beyond.

For a delicious variation on the traditional baked brie, add sweet-tangy pickled beets. The convenient, ready-to-use beets with homemade flavor save preparation time. Gone are the days of spending extra time in the kitchen cooking fresh beets. With this recipe, just drain the liquid from the jar and chop the beets before combining with pecans, pear or cranberry preserves and green onion.

Spoon this mixture atop the wheel of brie cheese with the top rind removed. Just bake until softened and serve with crackers, bread or slices of fresh fruit for a colorful and unique appetizer.  The beautiful ruby-red beet mixture atop the creamy white brie makes a stunning presentation.

Requiring just five ingredients and less than 30 minutes, this one is hard to "beet"!

Beets and Brie Appetizer

  • 3/4 cup chopped Aunt Nellie's sliced pickled beets, well drained
  • 1/4 cup chopped pecans
  • 2 tablespoons pear or cranberry preserves or fruit spread
  • 1 tablespoon chopped green onion
  • 1 brie cheese wheel (15 ounces), 5 x 1-1/4 inches
  • Sliced apples, pears, bread or crackers, for serving

    1. Preheat oven to 425°F. In a small bowl, combine beets, pecans, preserves and green onion.
    2. Remove the top rind of the brie cheese, leaving the sides and bottom intact. Place cheese on foil-lined baking sheet. Spoon beet mixture onto the brie, mounding the mixture to cover the top.
    3. Bake 8 to 10 minutes just until cheese is softened and topping is warm. Let stand about 15 minutes. Transfer to serving plate. Serve with sliced apples, pears, bread or crackers.

Makes about 8 appetizer servings
