Best Ever Meatloaf

Ingredients
  • 2 pounds ground beef
  • 1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup
  • 1 envelope (about 1 ounce) dry onion soup and recipe mix
  • 1/2 cup dry bread crumbs
  • 1 egg, beaten
  • 1/4 cup water

Preparation
    1. Thoroughly mix the beef, 1/2 cup tomato soup, onion soup mix, bread crumbs and egg in a large bowl. Place the mixture into a 13 x 9 x 2-inch baking pan and firmly shape into an 8 x 4-inch loaf.
    2. Bake at 350°F for 1 hour 15 minutes or until the meatloaf is cooked through. Let the meatloaf stand for 10 minutes before slicing.
    3. Heat 2 tablespoons pan drippings, remaining tomato soup and water in a 1-quart saucepan over medium heat until the mixture is hot and bubbling. Serve the sauce with the meatloaf.

Fiesta Chicken and Rice Bake

Ingredients
  • 1 can (10 3/4 ounces) Campbell's Condensed Tomato Soup
  • 3/4 cup water*
  • 3/4 cup uncooked regular long-grain white rice
  • 1 teaspoon chili powder
  • 4 skinless, boneless chicken breasts (about 1 pound)
  • 1/4 cup shredded Cheddar cheese

Preparation
    1. Stir the soup, water, rice and chili powder in 2-quart shallow baking dish. Place the chicken on the rice mixture. Sprinkle with additional chili powder, if desired. Cover the baking dish.
    2. Bake at 375°F for 45 minutes or until chicken is cooked through and the rice is tender. Sprinkle with the cheese.

Sweet & Tangy Grilled Chicken Salad

Ingredients
  • 1 can (10 3/4 ounces) Campbell's Condensed Tomato soup
  • 2 tablespoons low-sodium soy sauce
  • 2 tablespoons vinegar
  • 2 tablespoons honey
  • 1/2 teaspoon garlic powder or 2 cloves garlic, minced
  • 1/4 teaspoon ground ginger
  • 4 skinless, boneless chicken breast halves (about 1 pound)
  • 8 cups mixed salad greens torn into bite-sized pieces
  • 2 cups fresh vegetables (sliced carrots, yellow pepper strips, broccoli flowerets and sliced cucumber)

Preparation
    1. Stir the soup, soy sauce, vinegar, honey, garlic powder and ginger in a shallow, nonmetallic dish or gallon-size resealable plastic bag. Reserve 3/4 cup of soup mixture for dressing. Add the chicken to the remaining soup mixture and turn to coat. Cover the dish or seal the bag and refrigerate for 15 minutes.
    2. Lightly oil the grill rack and heat the grill to medium. Grill the chicken for 15 minutes or until cooked through, turning and brushing often with the marinade. Discard any remaining marinade. Slice the chicken.
    3. Arrange the salad greens and vegetables on a platter. Top with the chicken. Drizzle the reserved dressing over the chicken before serving.
