  • 2/3 cup prepared Italian dressing

  • 2 boneless beef chuck shoulder steaks, cut 3/4 inch thick (about 1-1/2 pounds)
  • 12 small flour tortillas, warmed
  • Thinly sliced lettuce, chopped tomato, dairy sour cream, guacamole (optional)

    1. Combine marinade ingredients in small bowl. Place beef steaks and marinade in food-safe plastic bag; turn to coat. Close bag securely and marinate in refrigerator 6 hours or as long as overnight, turning occasionally.

Avocado Stuffed Salmon

  • 2 packages lemon butter grilled salmon, defrosted
  • 1 cup spicy Wholly Guacamole
  • 1 egg yolk
  • 1/4 cup bread crumbs

  • Sea salt and freshly cracked pepper to taste

    1. Preheat your oven to 350°F. Using a sharp serrated knife, cut a pocket into the side of each piece of salmon.
    2. In a bowl, combine guacamole, egg yolk, bread crumbs and lemon zest to make stuffing.
    3. Stuff fish with avocado mixture; season each fillet with salt and pepper. Bake for 8 minutes and serve immediately.
