Lickety-Split Classic Desserts


Caramel Apple Sundae Pie, Lemon-Ginger Refrigerator Roll,
Easy Southern Banana Pudding, Ginger Snap-Apple Mallow Crisp, Tiramisu Parfaits and Cherry Orange Delight

Cherry Orange Delight, Tiramisu Parfaits, Caramel Apple Sundae Pie and Lemon-Ginger Refrigerator Roll (Family Features) - Dessert makes any meal special. Celebrate this sweet heritage, from caramel apple pie to marshmallow and ginger snap-topped fruit crisps, refrigerator cake rolls, and ever-popular Easy Southern Banana Pudding. With just the right ingredients, you and your busy family can have classic desserts on the dinner table in half the time.

When you're stocking your dessert pantry, start with favorite classic ingredients - sweet, crispy vanilla wafers or ginger snaps - crisp cookies made with real molasses and ginger. Add a few boxes of gelatin and pudding - in all kinds of flavors - that can be enjoyed as is or transformed into a variety of luscious treats. Keep cream cheese on hand in the refrigerator and whipped topping in the freezer. And you'll be ready to whip up classic desserts - lickety-split!

Caramel Apple Sundae Pie
Prep: 15 minutes
Cook: 5 minutes

6 tablespoons butter or margarine, divided
35 Nilla Wafers, finely crushed*
2 tablespoons granulated sugar
3/4 cup caramel topping, divided
1 quart (4 cups) ice cream, softened
2 medium apples, peeled, cored and coarsely chopped
2 tablespoons light brown sugar
  1. MELT 4 tablespoons of butter; mix with wafer crumbs and granulated sugar until well blended. Press mixture firmly onto bottom and up side of 9-inch pie plate.
  2. DRIZZLE 1/2 cup of caramel topping evenly on prepared crust. Top with scoops of ice cream. Freeze 4 hours or until ready to serve.
  3. COOK apple pieces in remaining 2 tablespoons butter and brown sugar in large skillet on medium heat 5 minutes or until apples are tender, stirring frequently. Cool.
  4. SPOON apples over pie and drizzle with remaining 1/4 cup topping just before serving.
Makes 10 servings, 1 slice each.

*Substitute 25 finely crushed Nabisco Ginger Snaps for Nilla Wafers.

Lemon-Ginger Refrigerator Roll
Prep: 20 minutes plus refrigerating

1 cup cold milk
1 package (4-serving size)
Jell-O Lemon Flavor Instant Pudding & Pie Filling, or any flavor
1-1/2 cups thawed frozen whipped topping
30 Nabisco Ginger Snaps
  1. POUR milk into medium bowl. Add pudding mix. Beat with wire whisk 2 minutes or until well blended. Gently stir in whipped topping.
  2. SPREAD about 1-1/2 teaspoons of the pudding mixture onto each cookie. Begin stacking cookies together, standing on edge on serving platter to make a log. Frost with remaining pudding mixture.
  3. REFRIGERATE overnight. Cut diagonally into 12 slices to serve.
Makes 12 servings, 1 slice each.

Tip: Be sure to refrigerate this dessert at least 8 hours to allow cookies to soften to desired cake-like texture.

Easy Southern Banana Pudding
Prep: 20 minutes plus refrigerating

3 cups cold milk
2 packages (4-serving size each) Jell-O Vanilla Flavor Instant Pudding & Pie Filling
32 Nilla Wafers
2 bananas, sliced
2 cups thawed frozen whipped topping
  1. POUR milk into large bowl. Add pudding mixes. Beat with wire whisk 2 minutes or until well blended. Let stand 5 minutes.
  2. ARRANGE layer of wafers on bottom and up side of 2-quart serving bowl. Add layer of banana slices; top with 1/3 of the pudding. Repeat layers, ending with pudding. Spread whipped topping over pudding.
  3. REFRIGERATE 3 hours or until ready to serve.
Makes 12 servings, about 1/2 cup each.

Ginger Snap-Apple Mallow Crisp
Prep: 15 minutes
Bake: 25 minutes

4 medium cooking apples, peeled, cored and thinly sliced (about 4 cups)
1 cup miniature marshmallows
18 Nabisco Ginger Snaps, finely crushed
1/2 cup chopped pecans
1/4 cup (1/2 stick) butter or margarine, softened
  1. PLACE apples in greased 8-inch square baking pan. Top with marshmallows; set aside.
  2. MIX ginger snap crumbs, pecans and butter in medium bowl until mixture resembles coarse crumbs. Sprinkle evenly over marshmallow layer.
  3. BAKE at 350°F for 20 to 25 minutes or until apples are tender, covering loosely with foil after 10 minutes to prevent over browning, if necessary.
Makes 9 servings, about 1/2 cup each.

Tiramisu Parfaits
Prep: 20 minutes

20 Nilla Wafers, divided
1 container (8 ounces) whipped cream cheese spread
3 tablespoons powdered sugar
1/3 cup cold brewed coffee, divided
1/2 teaspoon vanilla
1 cup thawed frozen whipped topping
  1. RESERVE 4 wafers for garnish. Coarsely break remaining 16 wafers; set aside.
  2. BEAT cream cheese, sugar, 3 tablespoons of the coffee and vanilla in medium bowl with electric mixer on medium speed until well blended. Gently stir in whipped topping.
  3. DRIZZLE remaining coffee over wafer pieces in small bowl. Spoon 2 tablespoons of the cream cheese mixture into each of 4 dessert dishes; top with 1 to 2 tablespoons soaked wafer pieces. Repeat layers, ending with cream cheese mixture.
  4. REFRIGERATE at least 1 hour. Top with reserved wafers just before serving.
Makes 4 servings, 1 parfait each.

Tip: Serve topped with a small dollop of additional thawed frozen whipped topping.

Cherry Orange Delight
Prep: 15 minutes plus refrigerating

2-1/2 cups boiling water
3 packages (4-serving size each) Jell-O Brand Cherry Flavor Gelatin
2-3/4 cups cold water
1 can (11 ounces or 15 ounces) mandarin orange segments, drained
4 ounces (1/2 of 8-ounce package) cream cheese, softened
2 tablespoons sugar
1 tub (8 ounces) frozen whipped topping, thawed
  1. STIR boiling water into gelatin in medium bowl at least 2 minutes until completely dissolved. Stir in cold water. Refrigerate about 1-1/4 hours or until slightly thickened (consistency of unbeaten egg whites). Gently stir in oranges.
  2. BEAT cream cheese and sugar in separate medium bowl with wire whisk until well blended. Add whipped topping; stir with wire whisk until well blended. Spoon into large serving bowl; cover with gelatin mixture.
  3. REFRIGERATE 2 hours or until firm.

Makes 16 servings, about 1/2 cup each.
