Easy, Light and Luscious Turkey

Fresh Lemon Pepper Turkey,
Tropical Glazed Grilled Turkey and
Teriyaki Turkey Burgers

So, what's sizzling on Karmel's grill these days? Turkey. "Turkey
is lean, it's a great source of protein and it tastes great.
Plus, it can take on a world of flavors," she says.
With a variety of turkey products from which to choose, including
ground turkey, tenderloins, cutlets, strips, brats and sausages -
there's a recipe and a flavor for everyone. Substitute light and
flavorful Teriyaki Turkey Burgers for that ho-hum burger you've
been grilling. Spice up your life with Tropical Glazed Grilled
Turkey, finished with a luscious pineapple and honey sauce. Or
jazz it up with Fresh Lemon Pepper Turkey, with a zippy marinade
of lemon, green onion, soy and garlic.
Turkey-on-the-grill weekday meals can be as easy as this recipe:
Take one package of hot Italian link turkey sausage and one
bottle of your favorite barbecue sauce. Fire up the grill and
sizzle the sausage over medium heat, turning every 5 minutes or
so. Brush the sauce on the sausage during the last 5 minutes of
cooking. Grill for 15 minutes total, or until a meat thermometer
inserted in the sausage reaches an internal temperature of 170°F.
Now, sit down to the dinner table and enjoy a lean entree with
luscious flavor - and no clean-up!
Talkin' Turkey
America's favorite gobbler is great on the grill. Here's the why
and how.
- Why turkey? According to the National Turkey Federation,
turkey has the lowest fat content of any other meat, including
chicken, and more protein per portion than chicken or beef.
Turkey white meat is also the lowest in calories.
- How do I grill turkey? The simplest way is to use what Karmel
calls the "Grilling Trilogy" - olive oil, kosher salt and freshly
ground pepper. Just brush or spray the turkey breast, cutlets,
strips or sausage with olive oil, then sprinkle with salt and
pepper. Grill over medium heat, turning once halfway through the
cooking time.
- How do I know when turkey is done on the grill? Using a meat
thermometer is the only accurate way to determine a safe
temperature. Insert the thermometer in the thickest part of the
turkey. Turkey is done when an instant-read thermometer reads
165°F for white meat or 180°F for dark meat. For doneness

Fresh Lemon Pepper Turkey
1 pound Honeysuckle White or Shady Brook Farms Breast Cutlets, Chops or Tenderloin
1/4 cup fresh lemon juice (reserve lemon rind)
1/4 cup chopped green onions
1 tablespoon soy sauce
1 tablespoon olive oil
1/4 teaspoon ground ginger
1/4 teaspoon red pepper flakes
2 tablespoons grated lemon peel
1 tablespoon minced garlic
1/4 teaspoon freshly cracked black pepper
Combine lemon juice, onion, soy sauce, oil, ginger and red
pepper. Pour over turkey, coating evenly. Marinate in
refrigerator 20 minutes to 3 hours. Remove turkey from marinade.
Combine lemon peel, garlic and black pepper. Rub over turkey,
coating evenly. Grill 5 minutes on each side or until internal
temperature reaches 165° to 170°F.
Makes 4 servings
Tropical Glazed Grilled Turkey
1 pound Honeysuckle White or Shady Brook Farms Breast Cutlets, Chops or Tenderloin
1 (15-ounce) can sliced pineapple in juice
1/4 cup honey
1 tablespoon reduced-fat margarine, melted
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
1/4 teaspoon salt
Drain pineapple, reserving juice. Combine honey, 2 tablespoons
pineapple juice, melted margarine and spices. Pour remaining
pineapple juice over turkey and let stand 15 minutes.
Remove turkey from pineapple juice and grill 4 minutes on one
side, brushing with honey glaze. Add pineapple slices to grill,
turning to brown on both sides and brushing with glaze. Turn
turkey, brush with glaze and top with pineapple. Cook an
additional 3 to 5 minutes or until internal temperature reaches
165° to 170°F.

Teriyaki Turkey Burgers
2 pounds Honeysuckle White or Shady Brook Farms Ground Turkey
1/4 cup finely chopped onion
1/4 teaspoon freshly cracked black pepper
2 cloves garlic
2 teaspoons fresh, coarsely chopped ginger
1/2 cup soy sauce
2 tablespoons sugar
1/4 cup orange juice
In large bowl, mix together turkey, onion and pepper and set
aside. Extract juices from garlic and ginger into small bowl with
a garlic press. Add remaining ingredients to juices and mix into
turkey. Make into patties and grill, turning once during cooking,
until internal temperature reaches 170°F.
