Fire Roasted Tomato-Shrimp Veracruz

1 tablespoon olive oil
1 lb uncooked peeled deveined medium shrimp, tails removed (if desired)
4 medium green onions, sliced (1/4 cup)
1 medium fresh jalapeño or serrano chile, seeded, finely chopped
1 teaspoon grated orange peel
1 teaspoon chopped fresh thyme leaves or 1/2 teaspoon dried thyme leaves
1 can (14.5 oz) Muir Glen® organic fire roasted diced tomatoes, undrained
- In 12-inch skillet, heat oil over medium-high heat. Cook shrimp, green onions, chile, orange peel and thyme in oil 1 minute, stirring frequently.
- Stir in tomatoes. Heat to boiling. Reduce heat; simmer uncovered about 5 minutes or until shrimp are pink and firm and sauce is slightly thickened, stirring occasionally.

Broccoli Mac 'n Cheese

2 1/3 cups uncooked whole wheat penne pasta (8 oz)
1 small red bell pepper, coarsely chopped (about 1 cup)
1 bag (24 oz) Green Giant® frozen broccoli & three cheese sauce
2 cups cubed cooked chicken
1/4 cup fat-free (skim) milk
1/8 teaspoon ground red pepper (cayenne)
1/3 cup plain dry bread crumbs
3 tablespoons shredded Parmesan cheese
1/2 teaspoon Italian seasoning
1 tablespoon olive oil
- Heat oven to 375°F. Spray 13x9-inch baking dish with cooking spray. Cook pasta as directed on package - except omit salt and add bell pepper last 3 minutes of cook time. Drain; return to saucepan.
- Meanwhile, cook broccoli & cheese sauce as directed on bag. Stir cooked broccoli mixture, chicken, milk and ground red pepper into pasta. Pour into baking dish.
- In small bowl, stir together bread crumbs, Parmesan cheese and Italian seasoning; stir in oil, using fork. Sprinkle bread crumb mixture over top of pasta mixture.
- Bake 15 to 20 minutes or until top is golden brown and pasta is hot.

1 bag (10 oz) Cascadian Farm® frozen organic strawberries
1 bag (10 oz) Cascadian Farm® frozen organic raspberries
1/4 cup sugar
2 tablespoons all-purpose flour
1 1/2 cups Cascadian Farm® organic oats & honey granola
Vanilla reduced-fat ice cream or vanilla yogurt, if desired
- Heat oven to 375°F. In ungreased 8-inch square (2-quart) glass baking dish, stir together frozen berries, sugar and flour until fruit is coated.
- Bake 20 minutes. Stir; sprinkle with granola.
- Bake 15 to 20 minutes longer or until light golden brown and bubbly. Let stand 5 to 10 minutes before serving. Serve warm with ice cream.
