"This South Beach Diet Quick and Easy Cookbook is meant to be one small step in our strategy to make healthy eating easier for the modern `fast family,' says Dr. Agatston. "If you keep your kitchen stocked and these recipes on hand, you'll be well on your way to good health."

If you are trying to eat well and keep your weight in check, don't skip meals, says Dr. Agatston. That's because hunger sets you up to overeat, which can be perilous during the holidays. Eat these tasty fajitas as is or top them with chopped lettuce, fresh cilantro or salsa.

4 (8-inch) whole-wheat tortillas
1 tablespoon plus 2 teaspoons fresh lime juice, divided
1 tablespoon plus 1 1/2 teaspoons extra virgin olive oil, divided
1 garlic clove, minced
1 teaspoon chili powder
1 1/2 pounds pork cutlets, about « inch thick
1 large red bell pepper, cut into thin strips
1 small onion, thinly sliced
Salt and freshly ground black pepper

Heat oven or toaster oven to 200°F. Roll tortillas in foil and place in oven to warm.
