Vegetarian Cooking Made Easy —
For The Whole Family


Crunchy Oriental (Family Features) - Truly yummy vegetarian recipes the whole family loves can be challenging to find. The new Betty Crocker Everyday Vegetarian Cookbook (Wiley, $24.95) provides 200 taste-packed temptations your family will love!  This Crunchy Oriental "Chicken" Salad is one of these delicious recipes and uses soy chicken nuggets.  In fact, you'll find an entire chapter of the book devoted to meat replacement products.

For ultra convenience, consider using bags of preshredded carrots, cabbage, and salad greens from your favorite produce department.

Crunchy Oriental "Chicken" Salad
Prep Time: 25 Minutes
Start to Finish: 25 Minutes

Dressing
1/3 cup mayonnaise or salad dressing
1/4 cup Asian sesame dressing and marinade
Salad
1 package (10 or 10.5 oz) frozen chicken-style breaded soy-protein nuggets
8 cups torn mixed salad greens
1 cup shredded red cabbage
1 cup shredded carrots (1 1/2 medium)
2 medium green onions, sliced (2 tablespoons)
1 cup wide chow mein noodles
  1. In small bowl, mix dressing ingredients with wire whisk until creamy.
  2. Heat nuggets as directed on package.
  3. Divide salad greens, cabbage, carrots and onions unto 4 plates or into 4 shallow bowls. Top with nuggets; sprinkle with noodles. Drizzle with dressing.
