From Court to Kitchen:
The Dips You'll Dunk Into

Peach Salsa

(Family Features) - If you are like many families, watching the college basketball tournament is a tradition you look forward to all year. Even when the season is over you want to savor the fun you had cheering with your family.

Helping to bring the game into your home, Hidden Valley has invited the wives of some of college basketball's favorite coaches to create their own winning recipes using a packet of Hidden Valley Original Ranch Salad Dressing & Seasoning Mix. These women brought their game to the kitchen by putting a new twist on their favorite dip recipes, and sharing the recipes with their fans.

Kelly Ryan, wife of University of Wisconsin Head Coach Bo Ryan, says, "I'm so excited to have a competition of my own to be a part of this season. Nothing can beat combining two of America's favorites - basketball and the flavor of ranch dressing. I've even shared my recipe with the team and my family."

Following are some fun tips to encourage college basketball fever at your house:
  • Bring the Competition Home - Create a tournament of your own! Invite other basketball loving families over to watch the games and ask them to bring one of their favorite family dips. Have a taste test to decide whose dip is the winner.
  • Score Two Points for Good Health - Studies show that children consume more vegetables when paired with a moderate amount of ranch dressing, so be sure to serve creamy ranch dip with fresh vegetables as a game time snack.
  • The Flavor of Ranch Always Wins - Hidden Valley Original Ranch Salad Dressing & Seasoning Mix can be used to flavor everything from cheese dip to salsa. It's a simple way to reinvent typical game-watching foods that will have your guests cheering.

Peach Salsa
Recipe created by Melanie Felton (University of Georgia, Georgia Bulldogs)

4 peaches, halved, pitted, and cut into 1/2-inch dice
1/2 small red onion, cut into 1/4-inch dice
4 green onions, including green tops, thinly sliced
2 medium tomatoes, cored, seeded, and cut into 1/2-inch dice
1 jalapeño chili, seeds and ribs removed, finely minced
1/2 cup chopped fresh cilantro leaves
Juice of 1 large lemon
Juice of 1 lime
2 tablespoons pure olive oil
1 package (1.0 ounces) Hidden Valley Original Ranch Salad Dressing & Seasoning Mix

In a medium bowl, combine the peaches, red onion, green onions, tomatoes, jalapeño, and cilantro. In a measuring cup, stir together the lemon juice, lime juice, oil, and package of Hidden Valley Original Ranch Salad Dressing & Seasoning Mix. Stir until the seasoning mix dissolves, and then pour over the peach mixture. Stir gently to combine. Transfer to a serving bowl, cover, and set aside for 1 hour to allow the flavors to meld.

Makes about 3 cups

Serve with: Tortilla chips, corn chips or pita chips.

Do-Ahead: This dip is best when made within 8 hours of serving, but it can be prepared up to 1 day in advance. Cover and refrigerate. Remove from the refrigerator 45 minutes before serving. Serve the salsa at room temperature.
