Stuffed Cheesy Jalapeño Poppers

Summertime is in full swing and the cicadas are singing! Gardens are in full bloom and harvest season is upon us. I have so many favorite “backyard” recipes, such as a wonderful basil pesto BLT sandwich piled high with hand-picked lettuce and a sunny vine-ripened tomato or fully loaded garden veggie lasagna featuring zucchini, tomatoes and onions. These fresh dishes are always so satisfying after a day of play in the bright summer sun!

There are so many classic recipes to enjoy from a backyard garden, and these Stuffed Cheesy Jalapeño Poppers are a family favorite that continue to find their way into my kitchen! Baked, grilled or fresh-picked jalapeños always hit the spot to keep summer sizzling and can be prepped in a variety of ways.

Easy to grow and care for, jalapeños add a wonderful addition to any garden space, big or small. The spice jalapeños add to the kitchen will certainly have you reaching for a cold drink, so why not try a refreshing jalapeño-infused classic mojito?! Crushed mint leaves, thin-sliced jalapeños muddled with a pour of rum, simple syrup to your liking and a splash of club soda makes this drink come together for any summertime occasion, so go enjoy the “heat” of the season and get spicy!

Stuffed Cheesy Jalapeño Poppers

Servings: 4

  • 2 ounces cream cheese
  • 1 ounce cheddar cheese, shredded
  • salt, to taste
  • pepper, to taste
  • 4 jalapeños, halved and seeded
  • barbecue sauce (optional)

Heat grill to high or preheat oven to 375 F.

Blend cream cheese and cheddar cheese with salt and pepper, to taste. Fill jalapeño halves with cheese mixture.

If grilling, dab poppers with barbecue sauce.

Grill 5 minutes or bake 15 minutes.
