Party Prep Pointers for Stress-Free Holiday Entertaining

(Family Features) Thoughts of hosting and entertaining during one of the busiest seasons of the year can be stressful. With so much party preparation for the holidays, from decor to drinks and appetizers to activities, it’s easy to see how even the most experienced hosts can get a little flustered.

One way to make sure you get to enjoy this year’s festivities is to streamline preparation without sacrificing flavor, quality or appearance. By limiting the number of drinks and dishes you serve, you can wow your guests with both your culinary expertise and your smile.

  • Stick to one or two signature cocktails so you won’t have to stock the bar (which can be expensive) or take drink orders and play bartender all night. Save even more time by serving make-ahead cocktails that simply require adding soda when ready to drink. Add white and red wine options, and offer seltzer and cranberry or pomegranate juice for mocktails.
  • Make a festive centerpiece that’s also edible, such as this Wreath Centerpiece from Kaukauna Cheese. Assemble it the day before or the morning of the party, eliminating last-minute stress. It’s simple to make and appropriate for nearly any holiday gathering. Plus, the “No-Artificial-Anything” Cheese Ball, with no additives or artificial ingredients, can appeal to the taste buds of hungry guests.
  • Let your hors d’oeuvres serve double duty as both appetizer and party decor. To make it nearly effortless, head to your local grocery store’s deli section. Pick up cured meats, cheeses, pickled vegetables, assorted olives, breads, crackers, nuts and fruits. Arrange on a large platter, board or tray then garnish with rosemary sprigs and scatter with pomegranate seeds for a festive finish in a flash.

  3. Insert pretzel sticks into mini cheese balls up to 1 hour prior to serving. Store in refrigerator. Remove from refrigerator about 15 minutes before serving. Garnish with rosemary sprigs, if desired.

A Sicilian Twist on Holiday Entertaining

(Family Features) When it comes to preparing a spread for a holiday gathering, some may look to traditional wine varieties such as Chardonnay or Cabernet Sauvignon. However, as holiday traditions become less traditional, you can also branch out in your selection of wines.

Produced from the indigenous grapes of Sicily, wines from Sicilia DOC offer fresh taste, quality and variety. The wines come to life when paired with a variation of holiday dishes.

These three tips can help you pair Sicilian wines with the dishes you may serve as part of your holiday spread:

For the Light White Wine Fan
With a low alcohol percentage and fruity notes, an option such as Grillo can be a fan favorite at any holiday gathering and makes for a perfect hostess gift. This white wine features notes of white peaches and grapefruit and can pair well with seafood appetizers, baked casseroles, vegetarian sides or a well-known Sicilian dish like this Green Bean and Blood Orange Salad.

For Guests Looking for a Graceful Red Wine
A modern take on Pinot Noir, Frappato is a light-to-medium-bodied wine with a lingering freshness that’s persistent and balanced with notes of cherry and strawberry. This wine pairs well with both white and dark meat of flavorful holiday turkeys as well as pastas, pizza, roasted meats, potatoes and cheeses.

For Friends Who Favor a Complex Red
For guests who favor Cabernet Sauvignon or Merlot, an option such as Nero d’Avola is a nice alternative, with aromas of ripe cherry, rose, sweet spices, licorice and cocoa. As a go-to red wine, it pairs well with a hearty charcuterie platter, roasted meats, lamb, pizza and pastas.

Holiday Guesting 101

(Family Features) If you manage to avoid hosting duties this holiday season, you may be dodging some of the hardest work, but remember that being a good guest goes beyond arriving on time and taking your shoes off at the door. This holiday season, ensure your host gets to enjoy the festivities by putting these ideas to practice – it may earn you an invitation for years to come.

Make a holiday playlist.  Offer to put together a holiday playlist for the host who will undoubtedly have his or her hands full prepping for the holiday celebration. Try to choose songs specific to the guests, host and overall theme. A good playlist can be a conversation starter for everyone at the party.

Don't arrive empty-handed. Even if your host shrugs off an offer for help, a gesture of appreciation is always appropriate. It may be a bottle of wine, a seasonal flower arrangement or, better yet, an appetizer or dessert to share, such as this mouthwatering Slow Cooker Banana Cake. This crowd-pleasing cake is made using a Crock-Pot® Cook & Carry Slow Cooker, which has a locking lid and travel clips to help you get to your holiday celebration without making a mess. The 6-quart, removable pot can be used as a serving dish, and is dishwasher safe to make clean-up a breeze.

Stay off your phone. It may seem obvious, but these days, looking at your phone is almost as habitual as breathing, and chances are you don’t mean to appear standoffish or rude by sneaking a quick peek. However, playing with your phone can detract from time you get to spend with family and friends, many of whom you probably don’t get to see often. Tuck away your phone for the party and live in the moment.

Pitch in to help clean. No host likes to be stuck in the kitchen while the rest of the party carries on. After the meal, offer your help to clear the table, put away perishable items and get the kitchen back in order so your host can join the merry-making. If you’ll be opening gifts, grab a garbage bag and collect debris to help keep the mess under control.

6 Simple, Festive Cocktails for the Holidays

(Family Features) Eggnog Martini and Maple Amaretto Sour are two holiday cocktails that could easily be found on a festive bar menu. However, you can make them yourself in the comfort of your own home. Dazzle guests with an easy, simple trick: extracts.

A simple drop of an extract – peppermint, maple, rum or almond – can transform a holiday cocktail or warm drink into a truly special experience. Add rum extract and nutmeg to white chocolate liqueur and cream for an Eggnog Martini. Or try a few drops of maple extract with coffee, whiskey and half and half for a festive Irish Coffee.

Find these cocktails and more recipes at McCormick.com or on Facebook and Pinterest.

  1. Chocolate Coconut Martini

A dusting of delicious coconut and rich chocolate syrup makes for a drink that’s a dessert and cocktail in one. Coconut extract takes the decadent flavor to the next level.

  1. Eggnog Martini

There’s no taste that says “holiday” quite like eggnog. Swap the actual rum or bourbon for rum extract then mix with white chocolate liqueur and cream for a less alcoholic version. Top with snowy whipped cream and a sprinkle of nutmeg.

  1. Maple Amaretto Sour

Give the sweet-tart Amaretto Sour – made with amaretto, simple syrup and lemon juice – the seasonal treatment with warming maple extract.

  1. Almond Ale Shandy

This nutty riff on a shandy calls for almond extract, which joins pale ale and cilantro in this lemony, fizzy drink. For a non-alcoholic version, just replace the beer with micro-brewed ginger ale.

  1. Peppermint Martini

The crisp bite of peppermint extract and the smooth sweetness of white chocolate liqueur unite in this quintessential winter martini. Be sure to use colorful mints for a candy-dipped rim that’s both pretty and tasty.

  1. Maple Irish Coffee

For a seasonal twist on Irish coffee, add a few drops of maple extract. It brings authentic maple flavor to this warm favorite when combined with hot coffee and whiskey.

  • 1 1/2    cups O Organics all-purpose flour
  • 8          tablespoons unsalted butter, slightly softened
  • 1          teaspoon kosher salt
  • 1          tablespoon O Organics granulated sugar
  • cold water, as needed (about 4-6 tablespoons)

Filling:

  • 1          can (15 ounces) O Organics 100 percent pure pumpkin
  • 1/2       cup whole milk
  • 1/2       cup pure maple syrup
  • 2          large eggs
  • 1          teaspoon O Organics ground cinnamon
  • 1/4       teaspoon ground nutmeg
  • 1/2       teaspoon O Organics ground ginger
  1. To make crust: Place flour, butter, salt, sugar and water in large bowl. Using fingers, mix ingredients together until dough ball forms. Flatten into 1-inch thick disk and wrap in parchment paper. Let rest 1 hour in refrigerator before rolling out.
  2. Heat oven to 375° F. Roll out dough and press into pie plate.
  3. To make filling: In medium bowl, whisk together pumpkin, milk, syrup, eggs, cinnamon, nutmeg and ginger. Pour into pie plate.
  4. Bake 40-55 minutes until filling is slightly jiggly but set. Let cool 4 hours. Serve.

Notes: Using measuring cup as scoop for flour actually overfills it. Instead, fill cup lightly with spoon and level off top with butter knife. Do not roll dough all the way to edge to keep dough from sticking to surface. Keep surface and rolling pin floured and continue turning dough. Pie dough can be made and frozen ahead of time for easy use – just thaw in refrigerator before using. It can keep up to 6 months in freezer.

  • 1 1/2    teaspoons milk
  1. Heat oven to 375° F. Using mixer, combine pumpkin, cream cheese, maple syrup, cinnamon, pumpkin pie spice and vanilla until well mixed. Set aside.
  2. Spread pie dough. Using 5-inch round cutter, make circles. Whisk together whipping cream, maple syrup and cinnamon for brushing.
  3. Taking round piece of dough, place about 3 tablespoons filling in center and fold dough over to create half-moon shape. Brush edges with whipping cream mixture. Using fork tines, seal edges of pastry. Repeat with each dough circle.
  4. Place pies on parchment-lined baking sheet. Brush tops with whipping cream mixture. Bake 16-20 minutes until bottoms are golden brown. Let cool 30 minutes.
  5. To make icing: Whisk to combine cream cheese, powdered sugar and milk. Drizzle over pies. Serve.

Notes: Use lid from small pan to cut dough circles for pies. For easier drizzling, load icing into small zip-top bag. Squeeze into corner and twist top to seal. Cut corner and drizzle over pies.

  3. Heat oven to 350° F.
  4. To make filling: In large bowl, whisk to combine pumpkin, eggs, whipping cream, sugar, pumpkin pie spice, ginger and salt. Pour into crust.
