Shrimp Scampi

Cook time: 20 minutes
Servings: 4

  • 8          ounces pasta linguine
  • 2          tablespoons butter
  • 2          tablespoons extra-virgin olive oil
  • 4          garlic cloves, minced
  • 1/2       cup dry white wine or seafood broth
  • 3/4       teaspoon kosher salt
  • 1          dash crushed red pepper flakes
  • 1/4       teaspoon black pepper
  • 1 1/2    pounds large or extra-large Aqua Star shrimp, shelled
  • 1/3       cup parsley, chopped
  • 1/2       lemon, juice only
  1. Cook pasta according to package directions.
  2. In large skillet, melt butter and oil. Add garlic and saute until fragrant. Add wine or broth, salt, red pepper flakes and black pepper. Bring to simmer and reduce by half.
  3. Add shrimp and saute until shrimp turn pink and opaque, approximately 2-4 minutes depending on size. Stir in parsley, lemon juice and cooked pasta.

Pulled Pork Sliders with Tangy Red Slaw

Slaw:

  • 1          tablespoon olive oil
  • 2          tablespoons apple cider vinegar
  • 3/4       teaspoon sugar
  • 1/8       teaspoon cayenne pepper
  • 1/4       cup thinly sliced celery
  • 1/4       cup finely diced green bell pepper
  • 1          cup Aunt Nellie’s Whole Holland Style Onions, drained and coarsely chopped
  • 1          jar (16 ounces) Aunt Nellie’s Sweet & Sour Red Cabbage, drained

Sliders:

  • 1          pound pulled pork, heated through
  • 1/4       cup hickory smoked barbecue sauce, warm
  • 12        small pull-apart dinner rolls, split crosswise and lightly toasted
  1. To make slaw: In large bowl, combine oil, vinegar, sugar and cayenne pepper; whisk to combine. Add celery, bell pepper, onions and red cabbage; toss to coat.
  2. To make sliders: In medium bowl, mix pork and barbecue sauce. To assemble, spoon pork evenly over bottom half of each roll. Top with slaw and top half of each roll.

Note: If desired, slaw can be served warm. In saucepan over medium-low or medium heat, cook slaw about 5 minutes, or until heated through, stirring frequently.

Lemon-Butter 4 Bean Ravioli

  • 1          package (10 ounces) fresh cheese ravioli
  • 1          teaspoon olive oil
  • 2          cups combination of sliced button mushrooms, chopped kale and grape tomatoes
  • 2          tablespoons unsalted butter, divided
  • 2          large cloves garlic, minced
  • 1          can (15 ounces) READ 4 Bean Salad
  • 1-2       tablespoons fresh lemon juice
  • crushed red pepper flakes (optional)
  1. Cook ravioli according to package directions. Drain and set aside.
  2. Heat medium skillet over medium heat. Add olive oil; swirl to coat.
  3. Add mushrooms, kale, tomatoes and 1 tablespoon butter. Cook 6 minutes, or until mushrooms are soft and tomatoes burst, stirring occasionally. Remove from heat.
  4. Return pasta to medium heat. Add remaining butter and minced garlic. Cook 2 minutes, or until garlic is fragrant, stirring frequently. Stir in bean salad; cook 1 minute, or until heated through.
  5. Gently stir vegetables into pasta. Drizzle with lemon juice. Toss gently and top with red pepper flakes, if desired.

Candied Bacon

Prep time: 5 minutes
Cook time: 25 minutes

  • 1          pound (1 package) Omaha Steaks Applewood Smoked Steak-Cut Bacon
  • 1          tablespoon fresh ground black pepper
  • 1          cup packed light brown sugar
  1. Heat oven to 375° F.
  2. Place wire rack on foil-lined baking sheet. Place strips of bacon on wire rack and sprinkle with black pepper. Lightly pat brown sugar on top of bacon in thin layer.
  3. Place baking sheet on center rack in oven and bake 25 minutes, or until brown sugar melts and bacon is crisp.
  4. Remove from oven and cool 10 minutes. Using tongs, transfer bacon to parchment-lined baking sheet and cool to room temperature.
  5. Store in airtight container up to 3 days at room temperature.

Quick Pickles

Prep time: 10 minutes
Cook time: 5 minutes
Yield: 1 1/2 cups

  • 1/2       cup white vinegar
  • 2          teaspoons sugar
  • 1          teaspoon mustard seed
  • 1          teaspoon salt
  • 1          clove garlic, crushed
  • 1/2       teaspoon red pepper flakes (optional)
  • 1          teaspoon dried dill, chopped, or 2 tablespoons fresh dill leaves
  • 1          bay leaf
  • 4          cucumbers, cut into angled 1-inch slices
  1. Heat small saucepan over medium high heat. Add vinegar, sugar, mustard seed, salt, garlic and red pepper flakes, if desired; cook until mixture begins to simmer and sugar dissolves. Remove from heat.
  2. In heat-proof bowl, toss dill, bay leaf and sliced cucumbers. Pour simmering liquid over cucumbers and stir to evenly coat. Cool to room temperature or chill before serving. 

Note: Pickles may be made up to 3 days in advance. Refrigerate in covered non-reactive container.

Connecticut-Style Shrimp

Prep time: 5 minutes
Cook time: 10 minutes
Servings: 4

  • 4          tablespoons unsalted butter
  • 2          tablespoons chives
  • 1/4       teaspoon salt
  • 1/8       teaspoon black pepper
  • 12        large, cleaned, uncooked Omaha Steaks Wild Argentinian Red Shrimp
  1. Heat medium skillet to medium-high heat. Add butter; cook until melted.
  2. Add chives, salt, pepper and shrimp to pan. Cook 2 minutes, turn shrimp and cook 2 minutes, or until shrimp is opaque and cooked through. Remove from heat and serve.

Dry-Brined New York Strips with Grilled Brown Butter Balsamic Onions

Prep time: 1-12 hours
Cook time: 30-40 minutes
Servings: 4

Dry Brine:

  • 4          tablespoons Kosher salt
  • 1          tablespoon coarse ground pepper
  • 4          (11-ounce) Omaha Steaks Private Reserve Boneless New York Strips, thawed

Butter and Balsamic:

  • 4          tablespoons salted butter
  • 2          tablespoons balsamic vinegar
  • 2          teaspoons fresh thyme

Grilled Onions:

  • 2          large sweet onions
  • 4          wooden skewers, soaked
  • 1          tablespoon olive oil
  • salt, to taste
  • pepper, to taste
  1. To make dry brine: Combine salt and pepper; season steaks generously on all sides. Place steaks on elevated rack on baking sheet and refrigerate at least 1 hour or overnight.
  2. To make butter and balsamic: Heat small skillet to medium high heat. Add butter and cook until butter begins to brown and smell nutty. Remove from heat and add balsamic vinegar and thyme. Set aside.
  3. To make grilled onions: Peel off outer layers of onions. Slice into 1/2-inch slices. Lay onions on flat surface. Push skewers through centers of onions; two onion slices per skewer. Brush onions with olive oil and season with salt and pepper, to taste.
  4. To cook steaks and onions: Make two-zone fire on charcoal grill with coals on one side and no coals on the other.
  5. Place onions on cool side of grill; flip and rotate every 10 minutes until golden brown, approximately 25-30 minutes. Total time will depend on how hot coals are and how close onions are to fire. When onions are golden and tender, brush with brown butter balsamic mixture. 
  6. On hot side of grill, during last 15 minutes of cook time for onions, cook steaks to desired temperature. When steaks are 5 F from desired temperature, remove from grill and let rest 5-10 minutes.
  7. Remove onions from grill. Carefully remove onions from skewers and place in serving dish.  Top with remaining brown butter balsamic mixture and serve with steaks.

Pierogies:

  • 1          package Mrs. T’s Classic Onion Pierogies
  • 1-2       tablespoons olive oil

Tri-Tip Steak:

  • 1          teaspoon salt
  • 1          teaspoon pepper
  • 1/2       teaspoon onion powder
  • 1/2       teaspoon garlic powder
  • 1          tri-tip steak (2-3 pounds)

Chimichurri Sauce:

  • 1          cup fresh Italian parsley, packed
  • 1/4       cup fresh cilantro
  • 1/2       cup extra-virgin olive oil
  • 1/3       cup red wine vinegar
  • 3-4       garlic cloves, peeled
  • 1          teaspoon crushed red pepper flakes
  • 1          teaspoon salt
  • 1/2       teaspoon fresh ground black pepper
  1. To prepare Pierogies: Toss pierogies in olive oil.
  2. To prepare Tri-Tip Steak: In small bowl, combine salt, pepper, onion powder and garlic powder; season steak on all sides.
  3. To make Chimichurri Sauce: In food processor, pulse parsley, cilantro, olive oil, vinegar, garlic, red pepper, salt and black pepper until well combined but small pieces of herbs remain. Pour into serving bowl, cover and refrigerate until ready to use.
  4. Heat grill to 400° F for two-zone cooking. Grill steak over direct heat 3-4 minutes per side.
  5. After flipping steak, place pierogies over indirect heat.
  6. Close grill lid and cook 3-4 minutes.
  7. Move steak to indirect heat and move pierogies to direct heat.
  8. Remove from grill when pierogies are golden brown and steak is cooked to preferred doneness. Allow steak to rest before slicing.
  9. Layer one pierogy, one slice steak and drizzle of chimichurri sauce to assemble each bite.

Green Bean and Blood Orange Salad

  • Salt
  • 2 pounds thin green beans
  • 6 blood oranges
  • 1/4 cup balsamic vinegar
  • 1 tablespoon honey
  • pinch of red pepper flakes
  • maple syrup
  • almonds
  1. Add salt to large pot of boiling water. Add green beans and cook until tender and bright green. Drain beans in colander and transfer to bowl of ice water to cool. Once cool, drain and pat dry with towel.
  2. Peel four oranges and remove white pith. Working over bowl, cut between membranes to release sections into bowl. Zest one remaining orange and juice both uncut oranges; reserve zest. Transfer juice to saucepan and add vinegar, honey and pepper flakes. Bring to boil then simmer over moderate heat until reduced to syrup, 10 minutes. Season with salt.
  3. In large bowl, toss beans, orange sections and 3 tablespoons vinegar syrup. Transfer to serving platter; drizzle with maple syrup, almonds and orange zest.

Pair each serving with a glass of Grillo.

Apple Butter Bacon-Wrapped Shrimp

Servings: 10

  • 3/4       cup Musselman’s Apple Butter
  • 1/2       cup maple syrup
  • 1/2       teaspoon red pepper flakes
  • 1/2       teaspoon salt
  • 1/2       teaspoon smoked paprika
  • 10        pieces bacon
  • 10        extra-large shrimp, cleaned and deveined
  • chopped cilantro, for garnish (optional)
  1. Heat oven to 400° F. Line rimmed baking sheet with parchment paper.
  2. In medium-sized skillet over medium heat, add apple butter, maple syrup, red pepper flakes, salt and paprika. Whisk until mixture is thick and cooked down by half, about 10 minutes. Set aside.
  3. In large skillet over medium heat, add bacon slices and cook until browned but still flexible.  Remove from pan and drain on paper towel-lined plate.
  4. Wrap one bacon slice around each shrimp, secure with toothpick and place onto prepared baking sheet.
  5. Once all shrimp have been wrapped, baste tops with apple butter mixture.
  6. Bake 5 minutes then flip and baste other side of shrimp. Bake another 5 minutes. Continue to flip and baste shrimp (2 minutes each time) until shrimp is fully cooked. Do not overcook as glaze can burn. Sprinkle with cilantro, if desired.

Apple Brie Bites

Servings: 24

  • 1          sheet puff pastry, thawed
  • 5          ounces Brie cheese
  • 1/2       cup Musselman's Apple Butter
  • 1/4       cup pecans, chopped
  1. Heat oven to 400° F. Grease mini muffin pan.
  2. Press seams of puff pastry sheet together. Cut sheet into quarters then each quarter into six pieces. 
  3. Use rolling pin to flatten each piece of pastry into square shape. Place one square into each muffin cup.
  4. Put 1/2 teaspoon brie, 1 teaspoon apple butter and 1/2 teaspoon chopped pecans into each muffin cup.
  5. Bake 13-15 minutes until golden brown. Serve warm.

Middle Eastern-Inspired Bean Salad

Prep time: 20 minutes
Servings: 6

  • 1          can (15 ounces) READ 3 or 4 Bean Salad
  • 1/2       cup halved cherry or grape tomatoes
  • 1          small cucumber (4-5 inches long), cut in half lengthwise then thinly sliced crosswise
  • 2          green onions, thinly sliced
  • 1/2       cup chopped fresh parsley
  • 2          tablespoons chopped fresh mint
  • 1          small clove garlic, minced
  • 1/4       teaspoon crushed red pepper flakes

Dressing:

  • 2          tablespoons prepared hummus
  • 1          tablespoon fresh lemon juice
  • 1/4-1/2   teaspoon za'atar seasoning blend
  1. Drain bean salad. Discard liquid. Place bean salad in large bowl.
  2. Add tomatoes, cucumber, onions, parsley, mint, garlic and red pepper flakes to bean salad. Toss to combine.
  3. To make dressing: Combine hummus, lemon juice and seasoning; set aside.
  4. Add dressing to salad just before serving; toss to combine well. Serve at room temperature or chilled.

Pickled Beet and Red Quinoa Salad with Orange Vinaigrette

Prep time: 20 minutes
Cook time: 15-20 minutes
Servings: 8

Vinaigrette:

  • 1/4       cup fresh orange juice
  • 1          tablespoon orange zest
  • 1/2       teaspoon coarsely ground black pepper
  • 1/4       teaspoon salt (optional)
  • 2          tablespoons olive oil

Salad:

  • 1          jar (16 ounces) Aunt Nellie's Baby Whole Pickled Beets
  • 1          can (15 ounces) chickpeas, rinsed and drained
  • 1/2       cup thinly sliced green onion
  • 1/2       cup chopped fresh parsley
  • 1/2       cup red quinoa, cooked according to package directions (about 1 1/2 cups cooked)
  • 1/2       cup coarsely chopped almonds, toasted
  • 1/3       cup crumbled reduced-fat or traditional feta cheese
  • 1          tablespoon orange zest
  1. To make vinaigrette: In small bowl, whisk together orange juice, orange zest, black pepper, salt, if desired, and olive oil; set aside.
  2. To make salad: Drain beets. Place in large bowl; set aside.
  3. Add chickpeas, green onion, parsley and quinoa to beets. Add vinaigrette; toss to combine well.
  4. Just before serving, add almonds to salad; toss to combine well. Sprinkle with feta cheese and orange zest. Serve at room temperature or chilled.

Herbed Mediterranean Flatbread

Prep time: 15 minutes
Cook time: 10-12 minutes
Servings: 4

  • 1          jar (16 ounces) Aunt Nellie's Holland-Style Onions
  • 1          jar (7 1/2 ounces) quartered, marinated artichoke hearts
  • 1/4       cup finely chopped red bell pepper
  • 1/4       cup chopped fresh parsley
  • 2          tablespoons chopped or sliced Kalamata olives
  • 1/4       teaspoon crushed red pepper flakes
  • coarsely ground black pepper
  • 2          tablespoons shredded Parmesan cheese, divided
  • 2          teaspoons olive oil
  • 1/2       teaspoon dried thyme leaves, crushed
  • 1          clove garlic, minced
  • 2          whole-grain round or square flatbreads (about 6-7 inches diameter)
  • fresh basil (optional)
  1. Heat oven to 400° F. Drain onions. Pat dry. Discard liquid. Drain artichokes well. Discard liquid.
  2. Press onions with spatula to crush lightly. Pat dry again. Place in large bowl. Coarsely chop artichokes. Add to bowl with onions. Stir in bell pepper, parsley, olives, red pepper flakes, black pepper and 1 tablespoon Parmesan cheese; set aside.
  3. In small bowl, stir together olive oil, thyme and garlic. Brush over one side of flatbreads. Place on baking sheet; bake 2 minutes. Remove from oven.
  4. Top each flatbread with onion mixture. Sprinkle with remaining Parmesan cheese. Return to oven. Bake 8-10 minutes, or until heated through and flatbread is crisp.
  5. Cut each flatbread in half. Sprinkle with fresh basil, if desired.

Beet and Berry Chutney

Prep time: 20 minutes
Servings: 10

  • 1/2       cup orange marmalade
  • 1          jar (15 1/2 ounces) Aunt Nellie’s Harvard Beets, not drained
  • 1/4-1/2 teaspoon crushed red pepper flakes
  • 1          tablespoon finely chopped candied ginger (optional)
  • 1 1/2    cups berries (fresh or frozen unsweetened cranberries, blueberries, raspberries or strawberries, cut in half or quartered, if large)
  1. In medium saucepan over medium heat, stir marmalade until melted. Stir in beets and red pepper. Cook 3-5 minutes until liquid is reduced by about half, stirring frequently. Add ginger, if desired.
  2. If using only cranberries, add to pan with beet mixture and cook until they just begin to pop. If also using other berries, add to beet-cranberry mixture; stir and heat through. If using only blueberries, raspberries or strawberries, add to beet mixture after reducing liquid. Stir and heat through.
  3. Remove pan from heat; cool to room temperature before serving.

Note: Chutney can also be served chilled. Store, covered, in a refrigerator up to 1 week.

  • 1 bunch cilantro

  • 1 lime, juiced
  • Tortilla chips
  1. Chop 2 cups fruit, dice onion, chop cilantro and seed and mince jalapeno.
  2. Combine ingredients and stir in lime juice. Serve alongside tortilla chips.
