Crepes:

  • 1 cup flour
  • 1 tablespoon sugar
  • 1/2 teaspoon salt
  • 1cup whole milk
  • 2 eggs
  • 1 teaspoon vanilla
  • butter, for cooking

Apple Topping:

  • butter
  • 2 tablespoons brown sugar

  • 1/8 teaspoon nutmeg
  • salt, to taste
  • maple syrup

Ricotta Filling:

  • 1 cup ricotta cheese
  • 1 lemon, zest and juice only
  • 2-3 tablespoons sugar, or to taste
  1. To make crepes: In bowl, combine flour, sugar and salt. Add milk, eggs and vanilla then, using whisk, combine thoroughly. Mixture should be silky smooth. Refrigerate.
  2. To make apple topping: In pan over medium heat, heat butter and brown sugar until bubbly and golden.
  3. Add apples, cinnamon, nutmeg and salt, to taste; cook over medium-low heat until apples are soft. Turn off heat and finish with maple syrup.
  4. To make ricotta filling: Combine ricotta, lemon zest, lemon juice and sugar, mix well and set aside.
  5. In nonstick pan over medium-low heat, melt small amount of butter.
  6. Add one ladle crepe batter, cook until bubbles form, flip and cook until golden. Repeat with remaining batter. Stack crepes to keep warm and soft.
  7. Spread ricotta mixture thinly onto crepes and fold into quarters. Top with apple mixture and serve.

Apple, Tomato and Goat Cheese Frittata

  • 6 eggs
  • 1 teaspoon hot pepper sauce
  • 2 teaspoons kosher salt
  • 20 turns fresh cracked pepper
  • 1/4 cup whole milk

  • 1 zucchini, sliced
  • 1 small jicama, sliced

  • 1/2 pound pork tenderloin
  • 3 tablespoons olive oil

  • 1/2 cup shredded carrots

  5. Let pork rest 3 minutes then slice into strips.
  6. Thinly slice half of remaining apple into thin sticks around same size of shredded cabbage. Reserve remaining half.
  7. In serving bowl, toss apple sticks, carrots, red cabbage and green cabbage.
  8. In bowl, mix honey, mayonnaise, mustard and vinegar into dressing. Add additional salt and pepper, to taste.
  9. Mix dressing and cabbage; refrigerate at least 1 hour prior to serving.
  10. Cut remaining apple half into thin wedges.
  11. Top taco shells with pork, slaw, sour cream and squeeze of lime juice. Top with apple wedges.

Tart Cherry Unity Pie

Prep time: 20 minutes
Cook time: 55 minutes
Servings: 8

Pie:

  • 1 pie crust (9 inches)
  • 2 cups canned tart cherry pie filling
  • 2 cups canned apple pie filling
  • 1 egg, beaten (for egg wash)

Streusel:

  • 1/2 cup all-purpose flour
  • 1/4 cup brown sugar
  • 2 tablespoons granulated sugar
  • 1/3 cup pecans, roughly chopped
  • 1 pinch salt
  • 4 tablespoons butter, melted

Pumpkin Spice Whipped Cream:

  • 1 cup heavy cream
  • 2 tablespoons powdered sugar
  • 1/2 teaspoon pumpkin spice
  1. Preheat oven to 400 F.
  2. Fit pie crust to 9-inch pie dish. Crimp edges and use fork to poke holes in bottom. Place pie crust in freezer to chill.
  3. In large bowl, combine tart cherry pie filling and apple pie filling. Set aside.
  4. To make streusel: In bowl, use fork to mix flour, brown sugar, granulated sugar, pecans and salt. Pour butter over dry ingredients and mix until ingredients come together in clumps.
  5. To assemble pie: Pour cherry-apple filling into prepared pie crust and sprinkle streusel on top. Brush beaten egg onto exposed pie crust edges.
  6. Bake 25 minutes. At 10-minute mark, cover pie dish with foil to prevent crust from over-browning. After 25 minutes, lower oven temperature to 375 F and bake 30 minutes.
  7. To make pumpkin spice whipped cream: In large bowl or bowl of stand mixer, add heavy cream, powdered sugar and pumpkin spice. Use hand mixer or beater attachment on stand mixer to beat on medium-high speed 3-5 minutes until stiff peaks form. Refrigerate whipped cream until ready to serve.
  8. Let pie cool 2-3 hours then dollop pumpkin spice whipped cream on top, slice and serve.
  9. Substitution: Storebought whipped cream topped with pumpkin spice can be used in place of homemade pumpkin spice whipped cream.

Classic Apple Lattice Tart

Servings: 8-10

  • 2-3 sheets puff pastry dough
  • 5 Envy Apples
  • 2 tablespoons sugar
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon cinnamon sugar
  • ice cream, custard or cream, for serving (optional)
  1. Preheat oven to 365 F.
  2. Use two sheets semi-thawed pastry to line fluted tart pan approximately 10 inches, pressing and trimming neatly to fit; chill 15 minutes.
  3. Peel, core and thinly slice apples into large bowl; sprinkle with sugar, lemon zest and cornstarch then toss well to evenly coat.
  4. Arrange apple slices in pastry-lined tart pan, laying flat.
  5. Beat egg with milk. Brush egg wash around pastry rim.
  6. Cut 1/2-inch strips from remaining pastry sheet and make lattice pattern over apples, crimping edges once lattice is completed.
  7. Brush tart with egg wash and sprinkle with cinnamon sugar.
  8. Bake 35-40 minutes, or until pastry is golden. Allow to cool at least 15 minutes before slicing. Serve with ice cream, custard or cream, if desired.

Servings: 12

  7. Bake 20-25 minutes until muffin mix is set and apple topping is golden. Allow muffins to cool 5 minutes before removing from tin.
  8. Serve with butter or dust with powdered sugar, if desired.

Stilton Cheese Pizza

Yield: 1 pizza

  • 1 tablespoon pizza sauce
  • 1 tablespoon sweet chili sauce
  • 1 storebought pizza crust
  • 1/2 cup mozzarella cheese, divided
  • 1/3 cup stilton cheese, divided
  • 1 Envy Apple
  • 4 slices prosciutto
  • fresh arugula leaves, for garnish
  • fresh basil, for garnish
  • toasted walnuts (optional)
  1. Preheat oven to 450 F.
  2. Combine pizza sauce and sweet chili sauce. Spread sauce over pizza crust.
  3. Sprinkle with half of the mozzarella cheese and half of the stilton cheese.
  4. Cut apple in half then core and slice into thin wedges. Arrange apple over cheese then top with remaining cheese.

Servings: 2

  • 1 tablespoon butter
  • 4 slices sourdough bread

  5. Using basting brush, coat portobellos on both sides with olive oil mixture. Grill stem sides down 2 minutes then flip. Add goat cheese to portobellos and grill 2-3 minutes until cheese is melted. Remove from grill.
  6. Use remaining olive oil to coat apple rounds. Grill apple rounds 1-2 minutes per side to lightly char.
  7. Serve portobellos with apple rounds on brioche buns with lettuce and mayonnaise.

Baked Brie with Pecans and Cranberry Orange Chutney

Servings: 8

  • 1 bag (12 ounces) fresh cranberries
  • 1/2 cup maple syrup, plus 1 teaspoon for garnish, divided
  • 1/2 cup water
  • 1 orange, zest and juice only
  • 1 teaspoon freshly chopped thyme, plus additional for garnish, divided
  • 1 teaspoon freshly chopped rosemary
  • 1 tablespoon bourbon (optional)
  • 1 round brie (13.4 ounces)
  • 1/2 cup roasted pecan pieces
  • crackers
  • toasted bread
  • apple slices
  1. Preheat oven to 350 F. Line baking sheet with parchment paper or silicone baking mat.
  2. In medium saucepan over medium-high heat, bring cranberries (reserving some for garnish), 1/2 cup maple syrup and water to boil. Reduce heat to medium-low and cook, stirring occasionally, until cranberries pop and mixture thickens, 8-10 minutes.
  3. Remove cranberry mixture from heat and stir in orange zest, orange juice, 1 teaspoon thyme, rosemary and bourbon, if desired.
  4. Place brie on parchment-lined baking sheet. Bake 5-7 minutes, or until inside of cheese softens while outside remains intact.
  5. Transfer brie to serving platter and top with chutney and toasted pecans. Drizzle remaining maple syrup over brie and garnish with remaining fresh thyme and reserved cranberries. Serve with crackers, toasted bread and apple slices.

Pecan Snack Mix with Cranberries and Chocolate

Prep time: 10 minutes
Cook time: 5 minutes, plus 10 minutes cooling time
 

  • 1 cup pecan halves
  • 1 cup rice squares cereal (wheat or cinnamon)
  • 1/2 cup pretzels
  • 2 tablespoons unsalted butter
  • 1 tablespoon brown sugar
  • 1 1/2 tablespoons pure maple syrup
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup dried cranberries
  • 1/2 cup dark chocolate chips
  1. In large, microwave-safe bowl, add pecans, rice squares cereal and pretzels. In small, microwave-safe bowl, add butter, brown sugar, maple syrup, salt and nutmeg. Microwave butter mixture 1-2 minutes until melted then pour over dry mix. Toss well to combine.
  2. Microwave snack mix in 45-second intervals, about 4-5 intervals total, until mix is fragrant, golden and toasty.
  3. Cool mix completely then stir in cranberries and dark chocolate chips.

Baked Apples with Coconut and Crumble Topping

  • 6 Envy Apples
  • 3/4 cup dark chocolate
  • 1/2 cup chopped roasted hazelnuts
  • 1 cup instant or rolled oats
  • 1/2 cup dried coconut
  • 2 tablespoons flour
  • 1/3 cup butter
  • 2 tablespoons brown sugar

  1. Core apples then score skin around apple a few times. Cut small slice from top and bottom to make apple more stable and give room for crumble topping.
  2. Finely chop chocolate and combine with hazelnuts.
  3. Arrange apple slices in lined baking dish.

  6. Combine oats, coconut, flour, butter and brown sugar; mix well.
  7. Top each apple generously with crumble mixture, creating small mound on top of each apple; sprinkle with reserved chocolate and hazelnut mixture.
  8. Bake apples 20-25 minutes, or until crumble is golden and apples start to soften.
  9. Serve with drizzle of maple syrup or honey.

Apples and Pesto Farfalle

  • 1 pound farfalle pasta
  • 3 1/2 teaspoons kosher salt, plus additional for cooking pasta, divided
  • 1/3 cup extra-virgin olive oil, plus additional for cooking pasta, to taste, divided
  • 1 bunch parsley leaves
  • 1 cup toasted almonds
  • 1 cup shredded Parmesan
  • 2 tablespoons lemon juice
  • 30 turns fresh cracked pepper
  • 2 cups cooked peas
  • 2 Envy Apples, diced
  • 1 bunch chives, thinly sliced
  • 1 block Parmesan
  • 20 shrimp
  • 2 tablespoons canola oil
  • 1/2 teaspoons coarse pepper
  1. Cook pasta in salted boiling water until just tender. Drain and toss gently with olive oil, to taste, then set aside.
  2. In food processor, pulse parsley leaves, almonds, shredded Parmesan, 2 teaspoons kosher salt, lemon juice and cracked pepper. Once pulsed, turn processor on high and drizzle in 1/3 cup olive oil until well incorporated.
  3. Toss pasta with fresh pesto until well coated. Fold in peas, apples and chives. Using peeler, shave thin slices off Parmesan block over pasta for garnish.
  4. Preheat grill or grill pan over high heat.
  5. Toss shrimp in canola oil, 1 1/2 teaspoons salt and coarse pepper. Grill 2 minutes on each side, or until charred slightly. Spread evenly over pasta and serve.

Crisp Apple Tacos

  • 2 Envy Apples
  • 1/2 pound pork tenderloin
  • 3 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 3 rosemary sprigs
  • 1/2 cup shredded carrots
  • 1/2 cup shredded red cabbage
  • 1 cup shredded green cabbage
  • 4 tablespoons honey
  • 1 cup mayonnaise
  • 1 tablespoon mustard
  • 1 tablespoon white vinegar
  • salt, to taste
  • pepper, to taste
  • 12 tortillas
  • 2 tablespoons sour cream
  • 1 lime, cut into wedges
  1. Slice half of one apple into thick wedges; reserve. Slice remaining half into thin sticks; reserve. Slice second apple into thin wedges; reserve.
  2. Cut pork crosswise into 1-inch round medallions. Coat pork medallions with olive oil, salt and pepper then add to saucepan over medium heat. Add thick apple wedges to saucepan.
  3. Add rosemary to saucepan and cook 2-3 minutes. Flip pork and cook 2-3 minutes until pork is slightly golden and cooked through.
  4. Let pork rest 3 minutes then slice into strips.
  5. In serving bowl, toss thin apple sticks, carrots, red cabbage and green cabbage. Mix honey, mayonnaise, mustard and vinegar. Add salt and pepper, to taste.
  6. Mix dressing and cabbage; refrigerate at least 1 hour prior to serving.
  7. Top tortillas with pork, slaw, sour cream and squeezes of lime. Top with thin apple wedges.
