  • 1 3/4    cups coconut milk
  • 2          tablespoons basil
  • 1          tablespoon xylitol (sugar substitute)
  • 1          ounce cilantro
  • 1          ounce fresh lime juice
  • 1/2       teaspoon salt
  • 1/2       teaspoon garlic
  • 1          teaspoon lime zest (optional)
  • 20        ounces boneless, cooked chicken breast
  • 20        ounces broccoli flower clusters
  1. In bowl, mix coconut milk, basil, xylitol, cilantro, lime juice, salt and garlic. For more citrus flavor, add lime zest, if desired.
  2. Add chicken, broccoli and sauce to 1-gallon zip-top freezer bag. Squeeze out any air and seal bag. Freeze bag flat up to 1 month.
  3. To cook: Thaw in refrigerator overnight. Heat oven to 350° F.
  4. Place in glass 8-by-8-inch pan and bake 20-25 minutes.

Burrito Beef

Prep time: 15 minutes
Cook time: 8 hours
Servings: 6

  • 2          pounds beef arm chuck roast
  • 4          tablespoons green taco sauce
  • 1          teaspoon minced garlic
  • 2          large scallions or spring onions, chopped
  • 1          jalapeno pepper, diced
  • 2          teaspoons chili powder
  • 1/2       teaspoon cumin
  • 1/2       teaspoon salt
  1. Trim fat from beef. In slow cooker on low heat, cook beef, taco sauce, garlic, onions, jalapeno, chili powder, cumin and salt 8 hours, or until beef is tender.
  2. Using two forks, remove beef and shred. Mix beef with 1/2 cup cooking juices before serving.
  3. A Low-Sugar Swap to Satisfy Cravings

  • 1          head large (6-7-inch diameter) cauliflower

  • 2          ounces cream cheese
  • 1 1/2    teaspoons ground mustard
  • 1 1/2    cups shredded cheddar cheese, divided
  • 1          clove garlic, minced
  • 1/4       teaspoon white pepper
  • 1/4       teaspoon pepper sauce
  1. Heat oven to 375° F and prepare 9-by-9-inch baking dish with nonstick cooking spray. Heat large pot of water to boiling and add 1/2 teaspoon salt.
  2. Remove stem and leaves from cauliflower. Cut into small pieces and place in boiling water; cook until crisp-tender; about 5 minutes. Drain well then pat between paper towels to remove moisture.
  3. In medium saucepan over medium heat, bring cream to simmer. Whisk cream cheese and powdered mustard into simmering cream until smooth. Add 1 cup cheddar cheese, garlic, remaining salt, white pepper and pepper sauce, whisking until cheese melts; about 1-2 minutes. Remove from heat and stir in cauliflower.
  4. Pour into baking dish and top with remaining cheese. Bake 15 minutes until browned and bubbly.

Chive and Orange Blossom Honey Waffles and Spicy Garlic Honey Chicken

Chicken:

  • 8          boneless, skinless chicken thighs
  • 2          cups buttermilk
  • 2          tablespoons kosher salt, divided
  • 3/4       teaspoon ground black pepper, divided
  • 1/4       teaspoon rosemary, chopped
  • 2          tablespoons orange blossom honey
  • 2          cups all-purpose flour
  • 2          teaspoons cayenne pepper
  • 1          teaspoon garlic powder
  • 1          teaspoon onion powder
  • 2          teaspoons paprika
  • 1/2       teaspoon ancho chile powder
  • vegetable oil, as needed

Waffles:

  • 1 1/2    cups all-purpose flour
  • 2          teaspoons orange blossom honey
  • 1          teaspoon orange zest
  • 1          teaspoon kosher salt
  • 1          teaspoon baking powder
  • 1 1/4    cups whole milk
  • 2          large eggs
  • 1/4       cup fresh chives, chopped
  • 3/4       cup sharp cheddar cheese, shredded
  • honey
  1. To make chicken: Rinse chicken thighs and pat dry with paper towels; place in large bowl.
  2. In separate bowl, combine buttermilk, 1 tablespoon salt, 1/4 teaspoon black pepper, rosemary and honey. Pour buttermilk mixture over chicken; cover and let marinate 8 hours or overnight.
  3. In separate mixing bowl, combine flour, remaining salt, remaining pepper, cayenne, garlic powder, onion powder, paprika and ancho chile powder; stir.
  4. Remove each piece of chicken from buttermilk, shake to remove excess liquid and dredge in flour mixture. Shake off excess.
  5. In deep fryer, heat oil to 375° F. Fry chicken until internal temperature reaches 175° F or juices run clear, approximately 5 minutes per thigh.
  6. Drain on paper towels.
  7. To make waffles: In large mixing bowl, mix flour, honey, orange zest, salt, baking powder, milk, eggs, chives and cheese until combined.
  8. Use waffle maker to cook four waffles in batches.
  9. Place chicken on waffles and drizzle with honey.

  • 1          pound red or white potatoes, scrubbed and cut into 1/2-inch pieces
  • water
  • 1/2       small onion, coarsely chopped (about 1/2 cup)
  • nonstick cooking spray
  • 1/2       teaspoon salt, divided
  • 1/4       teaspoon pepper
  • 1          cup reduced-fat and reduced-sodium, chopped, cooked ham (about 4 ounces)
  • 1          cup (4 ounces) shredded Swiss or cheddar cheese
  • 4          eggs
  • 1 1/2    cups skim milk
  • 1          tablespoon mustard
  1. Heat oven to 350° F.
  2. In large saucepan, cover potato pieces with enough water to just submerge. Bring to boil. Reduce heat; simmer, covered, 5 minutes. Add onion. Return to simmer, covered, about 5 minutes, or until potatoes are just tender. Drain well. Cool slightly.
  3. Coat 8-by-8-by-2-inch baking dish with nonstick cooking spray. Place potato-onion mixture in baking dish. Sprinkle with 1/4 teaspoon salt and pepper. Gently stir to combine. Sprinkle ham and cheese on top.
  4. In medium bowl, lightly beat eggs. Whisk in milk, mustard and remaining salt. Pour over layers in baking dish. Bake, uncovered, 40-45 minutes, or until knife inserted near center comes out clean. Let stand 5 minutes before serving.

Brown Sugar Bundt Cake

  • Nonstick cooking spray
  • 2          cups all-purpose flour, spooned and leveled
  • 1          teaspoon baking powder
  • 1/2       teaspoon baking soda
  • 1          teaspoon kosher salt
  • 10        tablespoons unsalted butter, at room temperature
  • 1 3/4    cups packed C&H Golden Brown Sugar
  • 1/4       cup C&H Granulated Sugar
  • 2          large eggs, at room temperature
  • 1 1/2    teaspoons vanilla
  • 1          cup full-fat Greek yogurt
  • C&H Confectioners’ Sugar, for dusting
  1. Heat oven to 350° F.
  2. Grease 10-cup bundt pan with nonstick cooking spray. Set aside.
  3. In medium bowl, whisk flour, baking powder, baking soda and salt.
  4. In bowl of stand mixer fitted with paddle attachment, beat butter, brown sugar and granulated sugar until light and fluffy. Add eggs, one at a time, mixing well after each addition. Add vanilla and mix on low speed.
  5. With mixer on low, add flour mixture in three additions, alternating with yogurt. Begin and end with flour mixture. Mix until just combined.
  6. Pour batter into prepared bundt pan and use offset spatula to level batter.
  7. Bake 50-55 minutes, or until cake is golden brown and toothpick inserted in center of cake comes out clean. If cake browns too quickly while baking, cover with foil after 35 minutes.
  8. Remove from oven and cool on baking rack 20 minutes. Invert pan onto baking rack and gently tap bottom of pan to release cake.
  9. Cool completely before dusting with confectioners’ sugar.

Bunny Oatmeal

  • 1/3       cup instant oats
  • 3/4       cup fat-free milk
  • 1/4       teaspoon cinnamon
  • 1/4       teaspoon vanilla
  • 1          teaspoon brown sugar
  • 2/3       small banana
  • 2          fresh blueberries
  • 1/2       small strawberry
  • chocolate syrup (optional)
  • 1          glass milk (8 ounces)
  1. In microwave-safe bowl, stir oats, milk, cinnamon, vanilla and brown sugar. Microwave on high 30-60 seconds and stir.
  2. Cut banana in half crosswise. Cut 1 1/8-inch thick coin slice from flat ends of each banana half. Place two banana slices in upper third of oatmeal bowl, side by side, to make eyes. Top each banana slice with one blueberry.
  3. Place remaining banana halves at top of bowl, hanging out, to create ears.
  4. Place strawberry in middle of bowl to make nose then drizzle chocolate, if desired, to make mouth and whiskers.
  5. Serve with 8-ounce glass of real milk for added nutrition.

  • 3/4       cup fat-free milk
  • 1          glass milk (8 ounces)
  1. Heat oven to 375° F. Lightly coat 8-by-8-inch casserole dish with nonstick cooking spray. In bottom of casserole dish, arrange ham, potatoes, spinach and cheese.
  2. In large bowl, beat eggs and milk. Pour mixture over ingredients in casserole dish. Bake 25-30 minutes, or until lightly browned and puffed.
  3. Serve with 8-ounce glass of real milk for added nutrition.

Vegetarian Stuffed Peppers

  • 6             large sweet bell peppers
  • 1/2         cup diced sweet onion
  • 1             cup cherry tomatoes, sliced in half
  • 1             cup frozen corn, thawed
  • 1 1/2     cups cooked black beans plain (drained and rinsed if using canned beans)
  • 2             cups cooked brown rice
  • 1/2         teaspoon chipotle chili powder
  • 1/2         teaspoon dried oregano
  • 1/2         teaspoon ground cumin
  • 3/4         teaspoon kosher salt
  • 1/2         teaspoon black pepper
  • 1 1/2     cups shredded Sharp Cheddar Cheese, divided
  1. Preheat the oven to 350º F. Line a rimmed half sheet pan with non-stick aluminum foil.
  2. Slice the tops off of the sweet bell peppers. Use a spoon to scoop the seeds and white membranes from the insides of the peppers. Discard the pepper tops and seeds. Place the peppers onto the prepared half sheet pan; briefly set aside.
  3. In a large bowl, stir together the diced onion, cherry tomatoes, corn, black beans, and brown rice until combined. Sprinkle the chili powder, oregano, salt, and pepper over top before stirring to distribute the seasonings throughout. Fold 1 cup of the Cheddar cheese into the filling, reserving the remaining cheese for later.
  4. Stuff the open cavities of the sweet bell peppers tightly with filling, mounding a bit of the filling over the top edge of the peppers. Sprinkle the remaining Cheddar cheese over top of the filling. Bake the stuffed peppers for 30 to 35 minutes or until filling is heated through, the peppers soften, and the exteriors begin to wrinkle. Serve immediately.

  • 1 bag (1 1/2 pounds) Dynamic Duo or Terrific Trio Little Potatoes
  • 6 ounces plain cream cheese at room temperature
  • 1/3 cup finely shredded orange cheddar cheese
  • 3 tablespoons finely chopped fresh chives
  • 1/8 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 jalapeno, finely diced (optional)
  • 1 pound thinly sliced bacon, rashers cut in half
  1. Heat oven to 400° F.
  2. Boil potatoes until fork tender, approximately 15-20 minutes. Cut in half and allow to cool.
    In bowl, use spatula to combine cream cheese, cheddar, chives, salt, pepper and jalapeno, if desired.
  3. Once chilled, spread cream cheese on half of cut potatoes and sandwich each with other halves. Wrap each potato using half rasher of bacon around cut middle to ensure cheese doesn't escape.
  4. Bake on middle rack 10 minutes. Flip and bake 10 minutes.
  5. Turn oven to broil. Broil 2 minutes, turn once and broil 2 minutes until bacon reaches desired crispiness.

Tip: Boil potatoes 2 days ahead. Fill and wrap potatoes 1 day ahead then bake and serve on game day.

A Sweet-Heat Snack

Finger foods and watch parties go hand-in-hand, which is why these baby back ribs are ideal for grabbing a couple (or more) and heading to your favorite spot on the couch. Glazed with a mixture of honey, chipotle peppers and mangoes for some sweet heat, they're cooked low and slow for fall-off-the-bone flavor.

Baby Back Ribs with Honey, Chipotle and Mango Glaze

  • 2 racks baby back ribs
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 1 can chipotle peppers in adobo sauce
  • 4 ripe mangoes, cubed
  • 1 cup honey
  1. Remove ribs from package; rinse and pat dry. Remove membrane. Place in shallow pan, sprinkle with salt and pepper and set aside.
  2. In small saucepan over medium heat, cook chipotle peppers, mangoes and honey, stirring constantly, until cooked down and thick enough to coat back of spoon.
  3. Heat grill to 225-240° F.
  4. Wrap ribs and 2/3 of sauce mixture tightly in aluminum foil and place over indirect heat. Close lid. After 2 hours, flip ribs and cook 2 hours. Open aluminum and remove ribs, place directly on grill and brush with remaining sauce. Cook 30 minutes. Remove from grill and serve hot.

5 tips to create holiday meal centerpieces

(Family Features) A cheese board, plate or course can be a delightful way to savor the season with family and friends, bringing together a medley of tastes and textures.

This year, try serving up a board with real, quality cheeses that also set a celebratory tone with these tips from the experts at Real California Milk, representing California's dairy farm families.

Mix it up. When selecting cheeses, create a range of flavors and textures from soft to hard and mild to sharp, and even pungent varieties. Consider these examples:

  • A bloomy rind cheese such as Brie, Camembert or Formagella
  • A soft or washed-rind cheese like Teleme or Crescenza
  • A semi-firm cheese such as Gouda, St. George or toma
  • A very hard cheese such as dry jack, aged Gouda or aged white cheddar
  • A highly flavorful or pungent cheese such as blue or flavored jack

Add contrast. Flavorful breads thinly sliced or broken into smaller pieces can enhance contrast in both flavor and texture. For a simple solution, try serving breadsticks as part of this California Continental Cheese Board alongside Brie, toma and pepper jack cheeses.

Be patient (but not too patient). Aged cheeses should be allowed time to come to room temperature. Larger pieces typically take 1-2 hours for the full flavor to develop. However, fresh cheeses should be treated like milk, so don’t allow them to sit out for more than a short time.

Peppermint Shortbread Cookies

Prep time: 15 minutes, plus 30 minutes freeze time
Cook time: 15 minutes
Servings: 40

  • 2-2 1/2             sticks unsalted butter, softened
  • 3/4       cup powdered sugar
  • 1          teaspoon pure vanilla extract
  • 1          teaspoon salt
  • 2 1/3    cups all-purpose flour
  • 3/4       cup peppermint crunch baking chips
  1. In stand mixer fitted with paddle attachment, cream butter, powdered sugar, vanilla and salt until smooth. Gradually add flour and mix on low until combined. Add baking chips and continue mixing on low until fully combined.
  2. On wax paper or parchment paper, form dough into 12-14-inch log and freeze at least 30 minutes, or until firm.
  3. Heat oven to 350° F.
  4. Cut shortbread dough into 1/4-inch slices; bake 13-15 minutes on parchment-lined baking sheets.

Holiday Baked Brie

Prep time: 10 minutes
Cook time: 14 minutes
Servings: 8

  • 2          tablespoons unsalted butter
  • 8          ounces button mushrooms, sliced
  • kosher salt
  • ground black pepper
  • 1          brie round (8 ounces)
  • 3          tablespoons honey
  • 1/4       cup pomegranate arils
  • 1/4       cup shelled pistachios
  • crackers or toasted bread, for serving
  1. Heat oven to 350° F. In large skillet, heat butter over medium-high heat. Add mushrooms; cook 8-10 minutes, or until deep golden brown, stirring frequently. Season with salt and pepper; remove from heat.
  2. Place brie on parchment-lined rimmed baking pan; drizzle with honey. Transfer to oven and bake 5-7 minutes, or until inside of cheese is softened but outside remains intact.
  3. Transfer brie to serving platter; top with pomegranate arils, pistachios and mushrooms. Serve with crackers or bread.

Cheese Buds

Prep time: 15 minutes
Cook time: 15 minutes, plus 1 hour chill time
Servings: 12

  • 1          cup cake flour or all-purpose flour
  • 1          cup grated extra-sharp white cheddar cheese
  • 1/2       cup unsalted butter, cold and cut into chunks
  • 1          teaspoon coarse sea salt
  • 1/8       teaspoon cayenne pepper
  • 40        pecan halves
  • 1          egg white, whisked with 1 teaspoon cold water
  • smoked paprika
  1. Heat oven to 350° F. Line baking sheet with parchment paper.
  2. Add flour, cheese, butter chunks, salt and cayenne pepper to food processor. Process until ingredients form into ball, about 1 minute.
  3. Remove dough from food processor, wrap with plastic wrap and press into flat round. Place in refrigerator 1 hour.
  4. Dust counter with flour and roll out dough to 1/4-inch thick. Using 1-inch round cookie cutter, cut out rounds and place on parchment paper-lined baking sheets.
  5. Place one pecan on top of each round. Using pastry brush, lightly paint each cracker with egg wash. Sprinkle with smoked paprika.
  6. Bake 12-15 minutes, or until buds just start to brown around bottom edges.
  7. Remove from oven to cooling rack. Store in airtight container up to 1 week or freeze 1 month.

Note: Cheese buds can be made plain without pecans, or pecans can be chopped and sprinkled on after egg wash and smoked paprika.

Roasted Garlic-Whipped Feta Crostini

  • 1          bulb garlic (about 12 cloves)
  • 4          tablespoons olive oil, divided
  • 1          teaspoon salt, divided
  • 1          teaspoon pepper, divided
  • 32        slices baguette
  • 8          ounces feta cheese
  • 1/2       cup whole milk
  • 2          tablespoons lemon juice
  • 1/2       cup pomegranate seeds
  • 1/4       cup parsley, minced
  1. Heat oven to 400° F.
  2. Slice garlic bulb in half, exposing garlic heads; place in center of large piece of foil. Drizzle each half with 1 tablespoon olive oil, 1/4 teaspoon salt and 1/4 teaspoon pepper. Wrap foil tightly around garlic and roast until caramelized, about 30 minutes.
  3. Place baguette slices on large baking sheet and drizzle with olive oil. Bake on middle rack until golden brown, about 10 minutes; set aside.
  4. Place feta cheese, milk, lemon juice, remaining salt and remaining pepper in high-speed food processor. Once garlic finishes roasting, add garlic cloves to food processor. Pulse until whipped and creamy, adding more milk as needed to reach desired consistency. Adjust seasonings, to taste, if necessary.
  5. To serve, spread each crostini with whipped feta and sprinkle with pomegranate seeds and minced parsley.

Friday Night is Pizza Night

Just look at that Cheese and Sausage Tomato Pie. Sizzling sausage, melting mellow cheeses, tangy tomato and crispy, crunchy crust. Homemade pizza: the perfect way to end the work and school week.

Making your own pizza dough is a snap. Flour, yeast, water and oil mix together quickly. The dough rests for 10 minutes then you’re ready to roll.

Sausage-Pepper Calzones

Yield: 6 calzones

Dough:

  • 2-2 1/4             cups Pillsbury Best All-Purpose Flour, divided
  • 1/4       cup cornmeal
  • 1          envelope Fleischmann’s RapidRise Yeast
  • 3/4       teaspoon salt
  • 1          cup hot water (120-130 F)
  • 1          tablespoon olive oil

Sausage-Pepper Filling:

  • 1          package Jimmy Dean Fresh Sausage
  • 1 1/2    cups sliced bell pepper
  • 1          medium onion, sliced
  • 2          cloves garlic, minced
  • 1 1/2    cups shredded Wisconsin mozzarella cheese
  • 1          cup shredded Wisconsin provolone cheese
  • olive oil
  • 1          teaspoon crushed red pepper (optional)
  1. To make dough: In large bowl, combine 1 cup flour, cornmeal, undissolved yeast and salt. Stir water and oil into flour mixture. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8-10 minutes. Cover; let rest 10 minutes.
  2. Heat oven to 400° F.
  3. To make Sausage-Pepper Filling: In skillet, cook sausage over medium-high heat until browned, stirring to crumble. Add bell pepper, onion and garlic; cook until tender, about 5-10 minutes, stirring frequently. Let cool. Stir in cheeses.
  4.  Divide dough into six equal pieces; roll each into 8-inch circle. Place about 1 cup Sausage-Pepper Filling on one half of each circle; moisten edges.
  5. Fold dough over filling; press with tines of fork to seal. Place on greased baking sheet. With sharp knife, make three 1-inch slits across top of each calzone. Brush top with olive oil. If desired, sprinkle with crushed red pepper.
  6. Bake 20-25 minutes, or until done. Serve warm.

My Own Pizza

Yield: 16 individual pizzas

Dough:

  • 5 1/2-6             cups Pillsbury Best All-Purpose Flour, divided
  • 2          envelopes Fleischmann’s RapidRise Yeast
  • 1 1/2    teaspoons salt
  • 2          cups hot water (120-130 F)
  • 1/4       cup olive oil
  • 1 1/2    cups prepared pizza sauce
  • 1          package Jimmy Dean Fresh Sausage, cooked, crumbled and drained
  • sliced olives
  • tomatoes
  • peppers
  • 1          cup shredded Wisconsin mozzarella cheese
  • 1          cup shredded Wisconsin cheddar cheese
  1. In large bowl, combine 2 cups flour, undissolved yeast and salt. Gradually stir water and olive oil into flour mixture. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8-10 minutes. Cover; let rest 10 minutes.
  2. Heat oven to 400° F.
  3. On lightly floured surface, divide dough into 16 pieces. Form into smooth balls; roll into 7-inch circles. Place on greased baking sheets. Top with pizza sauce, sausage and vegetables.
  4. Sprinkle with cheeses.
  5. Bake 20-25 minutes or until golden. Serve warm.

  • peppers (optional)
  • mushrooms (optional)
  • 1 1/4    cups prepared pizza sauce
  1. In large bowl, combine 1 cup flour, sugar, undissolved yeast and salt. Gradually add water and 2 tablespoons peanut oil to flour mixture.
  2. Using electric mixer, beat 2 minutes at medium speed, scraping bowl occasionally. Stir in enough remaining flour to make soft dough. Knead on lightly floured surface until smooth and elastic, about 8-10 minutes. Cover; let rest 10 minutes.
  3. Heat oven to 450° F.
  4. Roll dough into 12-inch circle; place on greased 12-inch pizza pan or baking sheet. Form standing rim by pinching edges of dough; prick dough randomly with fork. Let rest 10 minutes. Bake 5 minutes. Remove from pan; place on wire cooling rack.
  5. Brush crust surface with remaining peanut oil; spread pizza sauce evenly on crust. Sprinkle with sausage; top with cheeses; add toppings as desired. Bake 10 minutes, or until crust is golden. Cut into wedges and serve immediately.

Dough:

  • 2 1/2-3             cups Pillsbury Best All-Purpose Flour, divided
  • 1          tablespoon sugar

  • 1          small bell pepper, seeded and diced

  • 1/4       teaspoon pepper
  • 2          tablespoons shredded Wisconsin parmesan cheese

Honey Leches French Toast

Honey Leches:

  • 2          tablespoons blueberry honey
  • 1/4       cup evaporated milk
  • 1/4       cup light coconut milk
  • 3          large eggs
  • 1          teaspoon pure vanilla extract
  • 1/2       teaspoon ground cinnamon

Berry Garnish:

  • 1/2       cup fresh raspberries
  • 1/2       cup fresh blueberries
  • 1/2       cup fresh strawberries, sliced

Hot Honey:

  • 1/2       cup blueberry honey
  • 1/2       teaspoon cayenne pepper

Pound Cake:

  • 8          small slices premade pound cake
  • nonstick cooking spray
  1. To make Honey Leches: In mixing bowl, whisk blueberry honey, evaporated milk, coconut milk, eggs, vanilla extract and cinnamon to evenly combine. Keep chilled.
  2. To make Berry Garnish: In mixing bowl, lightly toss raspberries, blueberries and strawberries to evenly combine. Keep chilled.
  3. To make Hot Honey: In small mixing bowl, whisk blueberry honey and cayenne pepper to evenly combine. Keep warm so hot honey is pourable.
  4. Heat electric griddle to 375° F.
  5. Arrange pound cake slices, side by side, flat, in casserole dish or pan with sides. Pour Honey Leches over and around pound cake slices; soak 1 minute.
  6. Lightly coat griddle with nonstick cooking spray. Remove pound cake slices from Honey Leches, allowing liquid to drain off, then place each slice on hot griddle.
  7. On griddle, cook pound cake slices approximately 2 minutes on each side until golden crispy and hot throughout.
  8. To serve, place two overlapping pound cake slices on plate (four plates total). Top each with approximately 1/4 cup mixed berries then drizzle each with approximately 2 tablespoons hot honey.

  • 18        cubes (1 inch each) seedless watermelon
  • 6          cubes smoked turkey breast
  • 6          cubes cheddar cheese
  • 6          coffee stirrers or beverage straws
  1. In small plate with dividers, assemble watermelon sticks with yogurt in one section and berries in separate section.
  2. To make Watermelon Kebabs: Skewer watermelon, turkey and cheese cubes on stirrers or straws. Assemble in third section of plate.

Brooklyn Bacon Bonanza Burger

  • 4          thick chunks Jarlsberg cheese
  • 1          tablespoon hot sauce
  • 1/4       cup mayonnaise
  • 1          pound ground beef
  • 1/2       pound ground pork
  • 1          onion, finely chopped (about 1 cup)
  • 1          cup chopped cooked bacon
  • 3          tablespoons sundried tomato paste
  • 3          tablespoons breadcrumbs
  • kosher salt
  • freshly ground black pepper
  • nonstick cooking spray
  • 4          eggs for frying (optional)
  • 4          hamburger buns
  • 8          thin slices tomato
  1. Place cheese in freezer about 1 hour ahead of time.
  2. Heat grill to medium-high heat. In small bowl, mix hot sauce and mayonnaise; set aside.
  3. In large bowl, season beef, pork, onion, bacon, tomato paste and breadcrumbs with salt and pepper. Using hands, mix until well combined.
  4. Using hands, form meat mixture into four balls. With thumb, make indentation in centers of balls and place one chunk cheese in center of each. Begin shaping burgers around cheese until patties form.
  5. Spray grill grates with nonstick spray. Grill burgers, turning frequently, until cooked through and cheese begins to ooze out, about 8-10 minutes.
  6. In nonstick skillet, fry eggs, if desired; set aside. Serve burgers on hamburger buns with chipotle-mayo, tomato slices and fried eggs.

Blended Tacos

Blended Tacos

Yield: 12 tacos

  • 1          teaspoon chili powder
  • 1/4       teaspoon garlic powder
  • 1/4       teaspoon onion powder
  • 1          teaspoon ground cumin
  • 1          teaspoon salt
  • 1/2       cup water
  • 1          teaspoon vegetable oil
  • 1          pound button mushrooms, finely chopped
  • 1          pound 80 percent lean ground beef
  • 12        crunchy taco shells, warmed
  • 2          cups grated cheddar cheese (optional)
  • 1          large tomatoes, diced (optional)
  • 1          head iceberg lettuce, shredded (optional)
  1. In small bowl, mix chili powder, garlic powder, onion powder, cumin and salt. Stir in water and set aside.
  2. In large skillet over medium-high heat, heat oil. Add chopped mushrooms and ground beef and cook thoroughly, about 7-10 minutes. Carefully drain excess grease, if necessary.
  3. Add seasoning mixture to mushroom-meat mixture and stir to combine. Bring to simmer and cook 3-5 minutes.
  4. To assemble, add about 1/4 cup mushroom-meat mixture to bottom of each taco shell. Layer shells with cheese, tomatoes and lettuce, if desired.
