Chicken Gyro Bowls

Cook time: 4-6 hours
Servings: 6

Chicken Gyro Meat:

  • 1/4 cup Holland House Sherry Cooking Wine
  • 3/4 cup chicken broth
  • 2 tablespoons lemon juice
  • 1 1/2 tablespoons dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium yellow onion, roughly chopped
  • 2 pounds boneless, skinless chicken breasts, thawed
  • 4 large garlic cloves, minced

Gyro Bowls:

  • 2 cups long-grain rice
  • 1 medium cucumber, seeded and sliced
  • 1 large tomato, chopped
  • 1 cup shredded iceberg lettuce
  • 1/2 cup crumbled feta cheese
  • 1 1/2 cups tzatziki sauce
  • black pepper, to taste
  • 4 pitas, warmed and cut into wedges
  1. To make chicken gyro meat: In small bowl or liquid measuring cup, whisk cooking wine, chicken broth and lemon juice; set aside.
  2. In separate small bowl, combine dried oregano, salt and pepper; set aside.
  3. Add chopped onion to bottom of slow cooker and lay chicken breasts on top of onions.
  4. Pour cooking wine mixture over onions and chicken.
  5. Sprinkle half of oregano mixture over top of chicken. Flip chicken over and sprinkle remaining oregano mixture over chicken.
  6. Evenly distribute minced garlic over chicken.
  7. Cover slow cooker with lid and cook on high 4-6 hours or low 6-8 hours.
  8. Shred cooked chicken then use wooden spoon to mix shredded chicken, onions and remaining liquid together. Turn off slow cooker and let mixture sit, with lid on, while preparing rice.
  9. To make gyro bowls: Cook rice according to package instructions.
  10. Place rice in bowls and top with chicken gyro mixture, cucumber, tomato, lettuce, feta, tzatziki sauce and black pepper, to taste. Serve with pita wedges.

Pastry Brunch Cups

Servings: 18

  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 1/2 cups milk
  • 1 cup shredded Swiss cheese
  • 2 sheets puff pastry
  • 18 eggs
  • 2 cups diced ham
  • chopped fresh green onions

Heat oven 375 F.

  1. In small saucepan, melt butter. Whisk flour with butter. Gradually pour in milk, whisking each time. Bring to simmer, whisking until mixture starts to thicken. Remove from heat; stir in Swiss cheese. Set aside.
  2. Use rolling pin to thin out puff pastries. Cut each into nine squares. Line pastry squares in muffin cups, pressing bottoms down firmly and moving pastries up sides for edges to come up just over muffin tins. Fill each cup with 1 teaspoon cheese sauce. Crack one egg into each cup and sprinkle each with diced ham.
  3. Bake 10-15 minutes until eggs set. Sprinkle with chopped green onions.

Breakfast Burrito

  • 1 Silver Fern Farms New Zealand 100% Grass-Fed New York Strip Steak (10 ounces)
  • oil
  • salt, to taste
  • pepper, to taste
  • 1/2 onion, finely chopped
  • 1 red bell pepper, sliced lengthwise
  • 4 large mushrooms, sliced
  • 1 teaspoon cumin
  • 1 teaspoon paprika
  • 1/2-1 teaspoon chili powder
  • 1 tomato, finely chopped
  • 8 eggs
  • 1/2 cup milk
  • 4 large tortillas
  • 1 cup spinach
  • 1 1/2 ounces feta cheese, crumbled
  • 1/4 cup cilantro
  • 1 avocado
  • lime wedges (optional)
  • hot sauce (optional)
  1. Remove steak from packaging and set aside 10 minutes. Once steak reaches room temperature, heat pan over medium-high heat.
  2. Rub steak with oil and season with salt and pepper, to taste.
  3. Cook until medium-rare, approximately 3-4 minutes each side. Remove from pan and cover loosely with tinfoil to rest 5 minutes.
  4. Reduce heat to medium and add splash of oil. Add onion; cook 1 minute. Add red bell pepper and mushrooms; cook 1 minute.
  5. Add cumin, paprika and chili powder; stir through.
  6. When veggies are tender (about 2 minutes), add tomato and cook until soft. Season with salt and pepper, to taste.
  7. In large bowl, whisk eggs, milk and salt and pepper, to taste.
  8. Heat pan to medium heat and add splash of oil.
  9. Pour egg mixture into pan and cook, lifting and folding eggs until thickened and no visible liquid egg remains. Do not stir constantly.
  10. Lay tortillas on flat surface or plate.
  11. In center of tortilla, add cooked veggies and top with thinly sliced beef. Add handful of spinach, scrambled eggs, crumbled feta, cilantro and avocado. Fold bottom of tortilla and roll.
  12. Serve with lime wedges and hot sauce, if desired.

Lemon Ricotta Doughnuts

Prep time: 20 minutes

Cook time: 7 minutes

Doughnuts:

  • Vegetable oil, for frying
  • 2 cups all-purpose flour
  • 1 3/4 cups Domino Golden Sugar, divided
  • 2 tablespoons baking powder
  • 1/4 teaspoon salt
  • 2 tablespoons lemon zest
  • 5 large eggs
  • 1 3/4 cups ricotta cheese
  • 1 tablespoon pure vanilla extract

Lemon Curd (optional):

  • 1 stick unsalted butter, softened
  • 1 1/2 cups Domino Golden Sugar
  • 2 large eggs
  • 2 egg yolks
  • 4 lemons, zest and juice only
  • 1/8 teaspoon salt
  1. To make doughnuts: In large saucepan, preheat oil to 350 F. Prepare cookie sheet with paper towel to drain doughnuts once out of hot oil.
  2. In bowl, mix flour, 3/4 cup sugar, baking powder and salt. Add lemon zest, eggs, ricotta cheese and vanilla extract; mix until well combined.
  3. Use ice cream scoop to scoop small amounts dough into oil, 4-5 pieces at a time. Fry each batch until golden brown, about 7 minutes. Keep oil at or near 350 F; if oil is too hot, doughnuts will turn golden brown but centers may still be raw. Remove from oil and drain in paper towel. Repeat with remaining dough.
  4. While still hot, toss doughnuts with remaining sugar.
  5. To make lemon curd, if desired: In large bowl of stand mixer, cream butter and sugar until light and fluffy. Add eggs and egg yolks, one at a time. Add lemon zest, lemon juice and salt.
  6. Transfer mixture to saucepan and cook at low-medium heat until thick and creamy, stirring constantly. Remove from heat and let cool before serving with doughnuts.

Grilled Portobello Gyros with Yogurt Dill Sauce

  • 4          portobello mushrooms
  • 1          tablespoon extra-virgin olive oil
  • 1/2       teaspoon dried oregano
  • 1/4       teaspoon smoked paprika
  • 2          yellow bell peppers, sliced

Yogurt Dill Sauce:

  • 1          English cucumber, grated
  • 1          cup whole-milk

Greek yogurt

  • 1/2       cup sour cream
  • 2          tablespoons extra-virgin olive oil
  • 1/2       small lemon, juice only
  • 2          cloves garlic, minced
  • 1          teaspoon salt
  • 1          tablespoon minced fresh dill
  • 4          pita breads or naan
  • 2          tomatoes, thinly sliced
  • 1/2       red onion, thinly sliced
  • 1/2       head green lettuce
  • crumbled feta cheese (optional)
  1. Remove stems from mushrooms and brush caps with wet towel. Using spoon, carefully scrape out gills. Slice mushrooms into 1/4-inch pieces and place in medium bowl with olive oil, oregano and smoked paprika.
  2. Preheat indoor grill pan over medium-high heat. Add mushrooms and peppers; grill, tossing occasionally, until tender, 5-7 minutes.
  3. To make yogurt dill sauce: Squeeze grated cucumber in clean towel to remove excess liquid. Add to large bowl with yogurt, sour cream, olive oil, lemon juice, garlic, salt and dill. Stir to combine.
  4. To serve, place mushrooms and peppers in middle of pita bread. Top with tomatoes, onion, lettuce, feta, if desired, and big dollop of yogurt dill sauce.

Creamy Spinach, Mushroom and Lasagna Soup

  • 1          tablespoon extra-virgin olive oil
  • 2          cloves garlic, minced
  • 1          medium onion, small diced
  • 8          ounces crimini mushrooms, sliced
  • 1          jar (24 ounces) marinara sauce
  • 1          can (15 ounces) diced tomatoes
  • 2          tablespoons tomato paste
  • 2          teaspoons balsamic vinegar
  • 1          teaspoon granulated sugar
  • 1          tablespoon dried basil
  • 1/2       teaspoon salt
  • 1          teaspoon oregano
  • 1/2       teaspoon black pepper
  • 1          bay leaf
  • 3          cups vegetable broth
  • 6          lasagna noodles, broken into pieces
  • 1/2       cup heavy cream
  • 5          ounces fresh baby spinach
  • 1          cup whole-milk ricotta cheese
  • 1/2       cup shredded mozzarella cheese, for topping
  1. Heat large pot over medium heat.
  2. Add olive oil, garlic, onion and mushrooms. Cook, stirring occasionally, until onions and mushrooms soften, 4-5 minutes.
  3. Add marinara, diced tomatoes, tomato paste, vinegar, sugar, basil, salt, oregano, pepper, bay leaf and broth. Bring to boil over high heat then reduce heat to low and simmer.
  4. Add lasagna noodles and cook, stirring often, until softened, about 15 minutes. Remove from heat and remove bay leaf.
  5. Stir in heavy cream and spinach until wilted, 2-3 minutes.
  6. Divide between bowls and top with dollop of ricotta and sprinkle of mozzarella.

Roasted Chicken Thighs and Veggies with Mushroom Orzo Risotto

Total time: 1 hour, 10 minutes
Servings: 4

Chicken:

  • 8          boneless, skinless chicken thighs
  • salt, to taste
  • pepper, to taste
  • 6          tablespoons unsalted butter
  • 16        ounces crimini mushrooms, quartered
  • 3          zucchini, sliced in half moons
  • 3          large carrots, thinly sliced
  • 4          sprigs fresh rosemary, leaves removed and roughly chopped
  • 4          cloves garlic, minced

Orzo:

  • 4          cups chicken or vegetable broth
  • 1          tablespoon unsalted butter
  • 1          tablespoon extra-virgin olive oil
  • 1          small yellow onion, diced
  • 2          garlic cloves, minced
  • 16        ounces crimini mushrooms, finely chopped
  • 1          cup uncooked orzo pasta
  • 1/8       teaspoon black pepper
  • 1/3       cup white wine
  • 1/3       cup shredded Parmesan cheese
  1. To make chicken: Preheat oven to 450 F.
  2. Pat chicken dry. Season with salt and pepper, to taste. In large skillet over medium-high heat, melt butter. Sear chicken until browned, 4-5 minutes on each side.
  3. In large bowl, toss mushrooms, zucchini, carrots, garlic and rosemary. On large baking sheet, spread vegetables. Nestle chicken into vegetables. Drizzle with butter and juices from pan.
  4. Bake 20 minutes until chicken is cooked through and vegetables are tender.
  5. To make orzo: In small pot over medium-low heat, warm broth.
  6. Using skillet from chicken, add butter and olive oil over medium heat. Add onion, garlic and mushrooms. Cook, stirring occasionally, until onions soften, 3-4 minutes.
  7. Add orzo and black pepper. Stir and cook 2 minutes. Add white wine and cook until evaporated, about 1 minute.
  8. Add warm broth to orzo 2/3 cup at a time, stirring until liquid is absorbed. Repeat with remaining broth, waiting until last batch is absorbed before adding more. Remove from heat and stir in Parmesan.
  9. Serve in individual bowls with chicken and roasted vegetables atop mushroom orzo risotto.

Asian Barbecue Sesame Salmon with Noodles and Veggies

Sauce:

  • 1/2       cup soy sauce
  • 2          tablespoons brown sugar
  • 1          tablespoon rice vinegar
  • 2          cloves garlic, minced
  • 1          teaspoon fresh ginger, minced
  • 1          teaspoon chili garlic sauce (optional)
  • 1          tablespoon toasted sesame oil
  • 2          tablespoons barbecue sauce
  • 2          tablespoons water
  • 2          teaspoons cornstarch
  • 1 1/2    pounds salmon (4 filets)
  • 12        ounces stir-fry (pad thai) rice noodles
  • 1          tablespoon toasted sesame oil
  • 1          pound white mushrooms, sliced
  • 1          cup sugar snap peas
  • 1          large broccoli head, cut into bite-size florets
  • 2-3       green onions, thinly sliced, for garnish
  • sesame seeds, for garnish
  1. Preheat oven to 400 F.
  2. In small saucepan, whisk soy sauce; brown sugar; rice vinegar; garlic; ginger; chili garlic sauce, if desired; sesame oil; and barbecue sauce. Bring to boil over high heat then reduce heat to simmer.
  3. In small bowl, whisk water and cornstarch. Pour into pan and cook on low, whisking often, until sauce thickens, 3-5 minutes. Remove from heat and set aside.
  4. Pour 3 tablespoons sauce into small bowl. Brush salmon filets with reserved sauce and place on baking sheet. Bake 15 minutes, or until salmon is flaky. Discard small bowl sauce if any remains.
  5. Cook stir-fry noodles according to package directions. Drain, rinse and set aside.
  6. Heat large skillet over medium heat. Add sesame oil. Add mushrooms, snap peas and broccoli. Cook, stirring often, until veggies are tender-crisp, 7-8 minutes. Add noodles and remaining sauce from pan; toss to combine.
  7. To serve, divide noodles, veggies and salmon between plates.
  8. Top with sliced green onions and sesame seeds.

Vegetarian Ramen Zoodle Bowls

Servings: 4

  • 4          large eggs
  • ice water
  • 2          cups fresh water
  • 1          quart vegetable broth
  • 5          ounces (3 cups) broccoli florets, cut into bite-size pieces
  • 10        ounces (4 cups) spiralized zucchini
  • 5          ounces (5 packed cups) baby spinach
  • 1          tablespoon, plus 2 teaspoons, white miso paste
  • 1/4       teaspoon kosher salt, plus additional, to taste, divided
  • 1          tablespoon toasted sesame oil, plus additional for garnish, to taste
  • 2          cups mung bean sprouts, for garnish
  • chili garlic sauce, for garnish
  • 1          cup shredded raw carrot, for garnish
  • 4          tablespoons crushed peanuts, for garnish
  1. In large saucepan of gently boiling water, cook eggs 7 minutes then transfer to bowl of ice water.
  2. Drain cooking water from saucepan then add broth and fresh water. Bring to simmer over medium-high heat. Add broccoli and cook 3 minutes then add zucchini and spinach. Continue cooking until spinach is wilted and zucchini is crisp-tender, 2-3 minutes. Remove from heat.
  3. Ladle about 1/2 cup broth from saucepan into small bowl. Add miso paste and 1/4 teaspoon salt; whisk to combine. Return mixture to soup, add sesame oil and stir to combine. Add additional salt, to taste. Cover to keep warm.
  4. Remove eggs from ice bath; peel then cut in half lengthwise. Ladle 2 cups soup into four serving bowls. Top each portion with one egg and 1/2 cup sprouts. Drizzle with chili garlic sauce and additional sesame oil, to taste. Top each serving with 1/4 cup shredded carrot and 1 tablespoon crushed peanuts.

Nutritional information per serving: 10 grams net carbs; 17 grams total carbs; 7 grams fiber; 16 grams protein; 13 grams fat; 253 calories.

Broccolini and Bacon Egg Bites

  • Nonstick cooking spray
  • 5          slices (4 ounces) no-sugar- added bacon
  • 5          large eggs
  • 3          ounces cream cheese
  • 2          tablespoons feta cheese
  • 1          tablespoon hot sauce
  • 1/2       teaspoon kosher salt, plus additional, to taste, divided
  • 4 1/2    ounces broccolini (5-7 stalks), stalks and florets thinly sliced
  • 1          tablespoon water
  • 1 1/2    cups baby arugula
  • 1          tablespoon lemon juice
  • 1          tablespoon extra-virgin olive oil
  • freshly ground black pepper, to taste
  • 1 cup fresh blueberries
  1. Preheat oven to 350 F. Lightly coat eight silicone egg-bite mold cups or eight cups of standard nonstick muffin tin with nonstick cooking spray and set in large baking pan.
  2. In large nonstick skillet, cook bacon over medium heat until golden, about 5 minutes per side. Transfer to paper towel-lined plate to drain. Chop bacon into small pieces.
  3. In blender, puree eggs, cream cheese, feta cheese, hot sauce and 1/4 teaspoon salt until smooth.
  4. Pour off all but 1 tablespoon fat from skillet. Add broccolini, water and 1/4 teaspoon salt. Cook over medium-high heat, stirring frequently, until broccolini is tender, 3-5 minutes. Remove from heat.
  5. Fill each egg cup with 1 teaspoon bacon and 1 tablespoon broccolini. Top with egg mixture, filling cups to about 1/8 inch from top. Add just enough boiled water to baking pan to come halfway up sides of molds.
  6. Bake egg bites until set, 20-25 minutes. Take pan from oven then take molds from water bath. Let egg bites cool then remove from molds.
  7. In medium bowl, toss arugula, lemon juice, oil and salt and pepper, to taste. Place 3/4 cup salad, two egg bites and 1/4 cup blueberries on four plates and serve.

Flourless Salted Peanut Butter Chocolate Chip Cookies

  • 1          cup sugar-free smooth or creamy peanut butter
  • 2          teaspoons stevia extract powder
  • 1/2       teaspoon baking soda
  • 1/4       teaspoon kosher salt
  • 1          large egg
  • 1          teaspoon vanilla extract
  • 1/2       cup sugar-free semisweet chocolate chips
  • 1 teaspoon flaky sea salt
  1. Set oven racks in upper- and lower-third positions. Preheat oven to 350 F. Line two cookie sheets with parchment paper.
  2. In medium bowl, use handheld electric mixer on medium speed to beat peanut butter, stevia, baking soda and salt, scraping down sides if needed, until well combined, about 1 minute. Reduce speed to low, add egg and vanilla extract; beat until combined.
  3. Shape dough into 24 balls (about 1 tablespoon each) and place 2 inches apart on prepared cookie sheets. Using tines of fork, carefully flatten each ball, creating crisscross pattern.
  4. Bake, rotating cookie sheets from top to bottom and back to front halfway through, until edges begin to brown and cookies are set, 7-9 minutes. Cookies should not be browned. Let cool 10 minutes on cookie sheets then carefully transfer to cooling rack to cool completely.
  5. In small microwave-safe bowl, add chocolate chips and microwave on high in 20-second increments, stirring after each, until melted, about 1 minute.
  6. Dip dry fork into chocolate then drizzle over cookies. Sprinkle with sea salt.

Dressing:

  • 1/2 cup olive oil
  • 1 cup fresh cilantro
  • 1/2 avocado
  • 1 teaspoon garlic

Quinoa Salad:

  • 1 cup quinoa
  • leafy greens (optional)

  • 1 lime, juice only

Spiced Citrus Ginger Mocktail

  • 2 tablespoons pine nuts
  • 2 tablespoons lemon juice
  • 2 tablespoons minced shallot
  • 3 tablespoons extra-virgin olive oil
  • 1 pinch red pepper flakes
  • 1/4 teaspoon ground sumac
  • salt
  • freshly ground black pepper
  • 1 package (5-6 ounces) fresh baby spinach, washed and dried
  • 1 1/2 cups shredded, cooked chicken (about 8 ounces)
  • 1 cup red California grapes, sliced
  • 1/4 cup crumbled feta cheese
  • 4 whole-wheat pita breads (6 1/2 inches each), warmed and halved
  1. In small skillet over medium-high heat, toast pine nuts, stirring constantly until toasted, about 5 minutes. Transfer to bowl and let cool. In large bowl, whisk lemon juice, shallot, olive oil, red pepper flakes, sumac, salt and pepper. Add spinach, chicken, grapes, feta and pine nuts; toss to mix. Stuff into pita breads and serve.

Grape and Salmon Power Salad

  • 3/4 cup pearled barley
  • 3 cups firmly packed kale leaves, torn and sliced into ribbons

  • 8 ounces cold, cooked salmon, skin and bones removed
  • 1/2 cup walnuts, lightly toasted and coarsely chopped

Dressing:

  • 1/4 cup freshly squeezed lemon juice
  • 1 clove garlic, mashed
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1 pinch cayenne pepper
  • 1/2 cup extra-virgin olive oil
  1. Cook barley according to package directions. Drain and cool.
  2. Tenderize kale by blanching in boiling water 2-3 seconds or microwaving 1 minute. Rinse pieces in cold water to stop cooking; squeeze dry. Fluff and uncrimp dry kale pieces with fingers. In medium bowl, mix barley, kale, grapes, salmon and walnuts.
  3. To make dressing: In small bowl, whisk lemon juice, garlic, salt, pepper and cayenne. Gradually mix in olive oil. Pour onto salad and fold gently to combine.

Easy Shrimp Skewers

Servings: 5

  • 10        wooden skewers
  • water
  • 2          medium zucchinis, cut into large chunks
  • 2          medium bell peppers (any color), cut into large chunks
  • 2          red onions, cut into large chunks
  • 1          cup cherry tomatoes
  • 10-12   ounces cooked shrimp, peeled, deveined, tails on
  • olive oil
  • sea salt, to taste
  • 1          lemon, juice only
  1. In bowl, soak skewer sticks in water at least 10 minutes to prevent burning on grill). Preheat grill to medium-high heat.
  2. Build skewers by alternating zucchinis, bell peppers, onions, tomatoes and shrimp, pushing ingredients closely together on each skewer. Brush each with olive oil and sprinkle with sea salt, to taste.
  3. Cook skewers about 9 minutes, rotating every 3 minutes until veggies and shrimp are seared but not overcooked. Remove and place on large platter.
  4. Drizzle with lemon juice and serve.

Seared Salmon with Mediterranean Salsa

  • 2          tablespoons olive oil
  • 4-6       salmon filets (each about 1-inch thick)
  • sea salt, to taste
  • 1          can chickpeas, drained and rinsed
  • 1          can quartered or chopped artichoke hearts, drained
  • 1          cup diced cucumber
  • 1          cup diced cherry tomatoes
  • 1/3       cup diced red onion
  • 1/2       cup crumbled feta cheese
  • 1          handful fresh spinach, chopped
  • balsamic glaze
  1. In skillet over medium-high heat, heat olive oil. Sear salmon filets 4 minutes. Sprinkle tops of each salmon filet with sea salt, to taste. Flip and cook 4 minutes until barely done. Remove to serving platter.
  2. In medium bowl, make salsa by gently folding together chickpeas, artichoke hearts, cucumber, tomatoes, red onion, feta and spinach. Sprinkle with sea salt, to taste. Drizzle with balsamic glaze and spoon salsa over each salmon filet.
  3. Refrigerate leftover salsa.

New Zealand Grass-Fed Lamb Steaks with Yogurt and Cilantro Marinade

Servings: 1-2

Lamb:

  • 2 Silver Fern Farms 100% New Zealand Grass-Fed Lamb Steaks (4 ounces each)
  • sea salt, to taste
  • freshly ground pepper, to taste

Marinade:

  • 1          lemon, zest and juice only
  • 2          cloves garlic, crushed
  • 1/2       teaspoon ground cumin
  • 1/4       cup fresh cilantro, chopped
  • 1/4       cup natural yogurt
  • 1          prepared vegetable couscous
  • crumbled feta cheese
  1. To prepare lamb: Season lamb steaks with salt and pepper, to taste.
  2. To make marinade: In resealable bag or mixing bowl, combine lemon zest and juice, garlic, cumin, cilantro and yogurt.
  3. Using pastry brush or spoon, coat lamb steaks with marinade and let rest 15 minutes.
  4. Wipe excess marinade from lamb steaks. Reserve remaining marinade in bag.
  5. On grill warmed to high heat or skillet over medium-high heat, cook lamb steaks approximately 3-4 minutes on the first sides for medium-rare steaks then flip to cook other sides for 3-4 minutes.
  6. Once lamb steaks are cooked to desired doneness, transfer to cutting board or plate, cover with tinfoil and let rest 5 minutes. 
  7. Slice lamb steaks across grain and serve over vegetable couscous.
  8. Drizzle with remaining marinade, if desired, and garnish with crumbled feta cheese.

Ruby Beet Chicken Salad Skewers

Cook time: 20 minutes

  • 1          jar (16 ounces) Aunt Nellie’s Baby Whole Pickled Beets
  • 2          large boneless, skinless chicken breast halves (about 1 pound)
  • 1/2       teaspoon salt, plus additional, to taste, divided
  • 1/2       teaspoon pepper, plus additional, to taste, divided
  • 4 1/2    tablespoons stone ground mustard, divided
  • 1 1/2    tablespoons, plus 1/3 cup, orange marmalade, divided
  • 2          tablespoons minced fresh chives
  • 1          large lemon, zest and juice (1/3 cup juice)
  • 1/4       cup olive oil
  • 1          bag (9 ounces) leafy romaine lettuce pieces
  • 1/3       cup chopped almonds, toasted
  • 1/3       cup crumbled blue, feta or goat cheese
  1. Heat oven to 375° F. Drain beets; set aside.
  2. Season both sides of chicken with salt and pepper, to taste. In small bowl, combine 1 1/2 tablespoons mustard and 1 1/2 tablespoons marmalade. Brush mixture over chicken until completely coated. Bake chicken on rimmed baking sheet lined with aluminum foil about 20-25 minutes, or until juices run clear; set aside.
  3. To make vinaigrette: In medium bowl, combine remaining mustard, remaining marmalade, chives, lemon zest and juice, 1/2 teaspoon salt and 1/2 teaspoon pepper. Slowly pour in oil while whisking vigorously until completely combined.
  4. Slice cooled chicken into 1-inch pieces. Onto each skewer, thread one beet, one piece of chicken and 4-5 pieces of lettuce; repeat two times for each skewer, adding one beet at ends. Repeat to make eight skewers. Place skewers on large serving platter.
  5. Stir vinaigrette; drizzle lightly over skewers. Sprinkle with almonds and cheese. Serve with remaining vinaigrette.

Mediterranean 3-Bean Quinoa Salad

  • 2          cans (15 ounces each) READ 3 Bean Salad
  • 1          cup halved grape tomatoes
  • 1          cup crumbled feta cheese

  • 1/4       cup chopped fresh cilantro or parsley
  1. Drain bean salad; reserve 3 tablespoons liquid.
  2. In large bowl, combine bean salad, tomatoes, feta cheese, quinoa, olives and bell pepper. Add reserved bean liquid, lemon juice and balsamic vinegar. Stir gently to coat ingredients.
  3. Top with cilantro or parsley. Serve immediately.

Greek Cucumber Walnut Bites

  • 1/2       cup walnuts, chopped
  • 1          English cucumber, ends trimmed (about 14 ounces)
  • 1/2       cup roasted red pepper hummus
  • 1/2       cup reduced-fat crumbled feta cheese
  • 5          cherry tomatoes, quartered
  1. Heat oven to 350 F.
  2. On small baking sheet, arrange walnuts evenly. Bake 8 minutes, checking frequently, until toasted.
  3. Slice cucumber crosswise into 3/4-inch thick slices. Using small spoon, gently scoop out and discard center of each cucumber slice, leaving bottom and sides intact.
  4. In small bowl, stir 6 tablespoons chopped walnuts and hummus. Spoon walnut-hummus mixture into each cucumber slice and top with reserved chopped walnuts, feta cheese and quartered tomatoes.

Banana Bread Overnight Oats

  • 3          ripe bananas, sliced
  • 2          cups old-fashioned oats
  • 1          tablespoon ground cinnamon
  • 1/2       teaspoon salt
  • 1          teaspoon vanilla
  • 3/4       cup chopped California walnuts, divided
  • 1          tablespoon maple syrup
  • 3          cups skim milk
  1. In large container with lid, add sliced bananas. Use potato masher or fork to mash bananas until smooth.
  2. Add oats, cinnamon, salt, vanilla, half the chopped walnuts, maple syrup and milk. Combine thoroughly and refrigerate overnight.
  3. To serve, divide among four canning jars or glass containers with lids. Top each with remaining walnuts before serving.
