Pop Up Some Winter Fun

Furikake Popcorn

Yield: 2-3 servings

Furikake Seasoning:

  • 1 nori sheet, broken into pieces
  • 1 tablespoon toasted sesame seeds, divided
  • 1/2 teaspoon salt
  • 1/2 teaspoon granulated sugar
  • 6 cups popped popcorn
  • 2 tablespoons butter, melted
  1. To make furikake seasoning: In spice grinder or using mortar and pestle, grind nori with 1/2 tablespoon sesame seeds until finely ground. Transfer to small bowl; stir in remaining sesame seeds, salt and sugar.
  2. In large bowl, toss popcorn with butter and furikake seasoning until evenly coated.
  3. Tips: Use store-bought furikake seasoning and season to taste.
  4. To toast sesame seeds: In small dry skillet over medium heat, cook sesame seeds 2-3 minutes, or until lightly golden and fragrant. Let cool completely before using.

Jamaican Jerk Popcorn

Yield: 4-6 servings

  • 1/4 cup butter
  • 1 tablespoon minced, seeded scotch bonnet chili pepper
  • 1 teaspoon grated lime zest
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground allspice
  • 1/2 teaspoon pepper
  • 1/4 teaspoon ground ginger
  • 1/8 teaspoon garlic powder
  • 1/8 teaspoon ground cinnamon
  • 1/8 teaspoon ground cloves
  • 1/8 teaspoon ground nutmeg
  • 1/8 teaspoon onion powder
  • 1/4 teaspoon salt
  • 8 cups popped popcorn
  1. In small saucepan, combine butter, chili pepper, lime zest, chili powder, thyme, allspice, pepper, ginger, garlic powder, cinnamon, cloves, nutmeg, onion powder and salt. Cook over low heat 3-5 minutes, or until butter melts and mixture is fragrant.
  2. In large bowl, toss popcorn with spice mixture until evenly coated.

Tip: Omit scotch bonnet pepper and substitute 1/4 teaspoon cayenne pepper, if preferred.

Cheesy Pepperoni Pizza Popcorn

Yield: 6-8 servings (1 cup each)

  • 1/4 cup nonfat Parmesan cheese
  • 2 teaspoons garlic powder
  • 1/4 teaspoon dried oregano
  • 1/4 teaspoon dried marjoram leaves
  • 1/4 teaspoon dried basil leaves
  • 1/8 teaspoon dried sage
  • black pepper, to taste
  • 12 cups air-popped popcorn
  • 3/4 cup turkey pepperoni, cut into bite-size bits
  • olive oil cooking spray
  1. In small bowl, combine Parmesan cheese, garlic powder, oregano, marjoram, basil, sage and pepper; mix well.
  2. In large bowl, combine popcorn and turkey pepperoni; spray lightly with olive oil cooking spray.
  3. Sprinkle popcorn and pepperoni with cheese mixture; toss to coat evenly.

Rocky Road Popcorn Clusters

Yield: 3 dozen

  • 1 bag (6 ounces) semi-sweet chocolate chips
  • 1 teaspoon vegetable oil
  • 4 cups popped popcorn
  • 1 1/2 cups miniature marshmallows
  • 3/4 cup chopped walnuts
  1. In small microwave-safe bowl, heat chocolate chips in microwave on high 1 minute, until melted. Stir in vegetable oil.
  2. In large bowl, add popcorn, marshmallows and walnuts. Pour melted chocolate over mixture, tossing to coat.
  3. Drop mixture by tablespoonful onto wax paper-lined jellyroll pan.
  4. Refrigerate until firm, about 2 hours, or overnight.

Fresh Ginger Cookies

(Culinary.net) Sweet treats are a favorite food, especially when they have a unique or unusual twist that makes them stand out from the crowd. When a dessert isn’t the classic chocolate or vanilla flavor, it can pique eaters’ interest. Cupcakes, macaroons and even pies have some intense flavors, however, it’s hard to top the delightful taste of these Fresh Ginger Cookies.

They are sweet and sugary with the perfect amount of ginger. Baked until golden brown, this dessert is a showstopper for family events and celebrations alike. Even the little ones will love to munch on this sweet treat with fresh, appealing flavor.

In a mixing bowl, mix flour, baking soda, ground ginger, ground cinnamon and salt until combined.

In a separate bowl, add butter, sugar and brown sugar then beat until fluffy. Add an egg and fresh ginger then beat the mixture again. Gradually add dry ingredients to this mixture until combined.  

In a small bowl, add sugar. With a spoon, scoop out a small portion of dough and roll it into a small ball before rolling in sugar.

Repeat with the remaining dough then arrange balls on a cookie sheet and bake for 14 minutes until golden brown. Make sure your little ones wait to enjoy until the cookies have cooled completely.

From parties to picnics, these cookies can be a hit. They are simple to make, don’t take much time to bake and are unique enough to bring along to nearly any occasion. With ground and fresh ginger, these cookies are equally as appetizing as they are satisfying and sure to turn heads in the kitchen.

Fresh Ginger Cookies

Servings: 24

  • 2          cups flour
  • 1 1/2    teaspoons baking soda
  • 1 1/2    teaspoons ground ginger
  • 1          teaspoon ground cinnamon
  • 1/8       teaspoon salt
  • 3/4       cup salted butter, softened
  • 1          cup, plus 3 tablespoons, sugar, divided
  • 1/4       cup brown sugar
  • 1          egg
  • 1/4       cup grated fresh ginger
  1. Heat oven to 350 F.
  2. In medium bowl, whisk flour, baking soda, ground ginger, cinnamon and salt. Set aside.
  3. In stand mixer, beat butter, 1 cup sugar and brown sugar until fluffy. Add egg and fresh ginger; beat until combined. Gradually add dry ingredients to mixer until combined.
  4. In small bowl, add remaining sugar. Using spoon, portion out dough, roll into balls then roll in sugar. Arrange balls on baking sheet at least 1 inch apart.
  5. Bake 14 minutes, or until edges are golden brown. Transfer cookies to cooling rack and cool completely.

Ginger Beef and Broccoli Stir-Fry

Prep time: 15 minutes
Cook time: 10 minutes
Servings: 5

  • 1/2       cup Kitchen Basics Unsalted Beef Stock
  • 2          tablespoons reduced-sodium soy sauce
  • 1          tablespoon honey
  • 1          teaspoon McCormick Garlic Powder
  • 1          teaspoon McCormick Ground Ginger
  • 1/2       teaspoon McCormick Crushed Red Pepper
  • 1          pound flank steak, thinly sliced
  • 1/2       package (from 14-ounce box) Simply Asia Lo Mein Noodles
  • 3          tablespoons vegetable oil, divided
  • 1 1/2    cups broccoli florets
  • 1          cup thinly sliced onion
  • 1          tablespoon cornstarch
  1. In medium bowl, mix stock, soy sauce, honey, garlic powder, ginger and red pepper until well blended. Reserve 1/3 cup of marinade. Place sliced flank steak and remaining marinade in large, re-sealable plastic bag; turn to coat well. Refrigerate 30 minutes.
  2. Cook noodles according to package directions. Drain. Spread noodles on sheet pan. Set aside. 
  3. In large skillet on high heat, heat 2 tablespoons oil. Remove beef from marinade. Discard remaining marinade in bag. Add beef to skillet; stir-fry 3 minutes, or until beef is no longer pink. Using tongs, remove beef from skillet. Add remaining oil, broccoli and onion; stir-fry 3-5 minutes, or until tender-crisp.
  4. In small bowl, mix reserved marinade and cornstarch until smooth. Add to skillet; stirring constantly, bring to boil on medium heat and boil 1 minute. Return beef and noodles to skillet. Cook and stir until heated through.

Tip: Place raw flank steak in freezer 30 minutes to make it easier to slice.

Nutrition information per serving: 395 calories, 15 g total fat, 4 g saturated fat, 58 mg cholesterol, 577 mg sodium, 38 g carbohydrates, 2 g fiber, 27 g protein.

Pot Sticker Noodle Stir-Fry

Prep time: 10 minutes
Cook time: 20 minutes
Servings: 5

  • 1/3       package (from 14-ounce box) Simply Asia Udon Noodles
  • 1          tablespoon oil
  • 1          tablespoon minced fresh ginger
  • 1          pound ground pork
  • 1/2       cup Kitchen Basics Unsalted Chicken Stock
  • 2          tablespoons reduced-sodium soy sauce
  • 1          teaspoon McCormick Garlic Powder
  • 1/8       teaspoon McCormick Crushed Red Pepper
  • 1          cup shredded green cabbage
  • 2          tablespoons finely chopped green onion
  1. Cook noodles as directed on package. Drain. Set aside. 
  2. In large saucepan over medium heat, heat oil. Add ginger; cook and stir 30 seconds-1 minute, or until fragrant. Add ground pork; cook and stir until no longer pink. Drain fat.  
  3. Stir in stock, soy sauce, garlic powder and red pepper. Bring to gentle boil. Add noodles and cabbage; cook and stir 5 minutes, or until heated through. Remove from heat. Sprinkle with green onion. 

Nutrition information per serving: 321 calories, 17 g total fat, 6 g saturated fat, 61 mg cholesterol, 480 mg sodium, 22 g carbohydrates, 1 g fiber, 20 g protein.
