Classic Apple Lattice Tart

Servings: 8-10

  • 2-3 sheets puff pastry dough
  • 5 Envy Apples
  • 2 tablespoons sugar
  • 1 teaspoon finely grated lemon zest
  • 1 tablespoon cornstarch
  • 1 egg
  • 1 tablespoon milk
  • 1 tablespoon cinnamon sugar
  • ice cream, custard or cream, for serving (optional)
  1. Preheat oven to 365 F.
  2. Use two sheets semi-thawed pastry to line fluted tart pan approximately 10 inches, pressing and trimming neatly to fit; chill 15 minutes.
  3. Peel, core and thinly slice apples into large bowl; sprinkle with sugar, lemon zest and cornstarch then toss well to evenly coat.
  4. Arrange apple slices in pastry-lined tart pan, laying flat.
  5. Beat egg with milk. Brush egg wash around pastry rim.
  6. Cut 1/2-inch strips from remaining pastry sheet and make lattice pattern over apples, crimping edges once lattice is completed.
  7. Brush tart with egg wash and sprinkle with cinnamon sugar.
  8. Bake 35-40 minutes, or until pastry is golden. Allow to cool at least 15 minutes before slicing. Serve with ice cream, custard or cream, if desired.

Apple and Date Muffins

Servings: 12

  • 2 Envy Apples
  • 1 tablespoon maple syrup
  • 1 cup flour
  • 1 cup bran flakes
  • 3/4 cup brown sugar
  • 1/2 cup chopped dates
  • 1/2 teaspoon pumpkin pie spice
  • 2 teaspoons baking powder
  • 1 cup butter, melted
  • 1 egg, beaten
  • 3/4 cup milk
  • butter or powdered sugar, for serving (optional)
  1. Preheat oven to 375 F and line muffin pan with cupcake papers.
  2. Peel and core apples and dice finely; toss with maple syrup.
  3. In large bowl, combine flour, bran flakes, brown sugar, dates, pumpkin pie spice and baking powder; mix well.
  4. In separate bowl, whisk melted butter, egg and milk.
  5. Add half maple-apple mixture to dry ingredients.
  6. Pour wet ingredients into dry and fold together until mixed. Spoon evenly into muffin tin cupcake papers. Add 1 teaspoon remaining maple-apple mixture to top of each muffin.
  7. Bake 20-25 minutes until muffin mix is set and apple topping is golden. Allow muffins to cool 5 minutes before removing from tin.
  8. Serve with butter or dust with powdered sugar, if desired.

Stilton Cheese Pizza

Yield: 1 pizza

  • 1 tablespoon pizza sauce
  • 1 tablespoon sweet chili sauce
  • 1 storebought pizza crust
  • 1/2 cup mozzarella cheese, divided
  • 1/3 cup stilton cheese, divided
  • 1 Envy Apple
  • 4 slices prosciutto
  • fresh arugula leaves, for garnish
  • fresh basil, for garnish
  • toasted walnuts (optional)
  1. Preheat oven to 450 F.
  2. Combine pizza sauce and sweet chili sauce. Spread sauce over pizza crust.
  3. Sprinkle with half of the mozzarella cheese and half of the stilton cheese.
  4. Cut apple in half then core and slice into thin wedges. Arrange apple over cheese then top with remaining cheese.
  5. Cook pizza 7-10 minutes until pale golden and starting to bubble. Add prosciutto and cook 2-3 minutes until golden and bubbling.
  6. Serve with fresh arugula and basil. Sprinkle with toasted walnuts, if desired.

Apple, Bacon and Brie Cheese Toasties

Servings: 2

  • 1 tablespoon butter
  • 4 slices sourdough bread
  • 1 teaspoon honey mustard, plus additional for serving (optional)
  • 4 slices cooked bacon
  • 1 Envy Apple, peeled, cored and thinly sliced
  • 1 3/4 ounces brie cheese, sliced
  • side salad, for serving (optional)
  1. Butter one side of each bread slice.
  2. Lay out two slices bread, buttered sides down. Top with honey mustard then layer with two bacon slices, apple slices and brie cheese slices. Top with remaining slices bread, buttered sides up, to create two sandwiches.
  3. Heat grill pan or frying pan and cook sandwiches until golden brown on each side and cheese is beginning to bubble.
  4. Cut sandwiches in half and serve with side salad or extra honey mustard, if desired.

Creamy Vegan California Grape Ice Cream

Prep time: 20 minutes
Cook time: 10-15 minutes, plus 6-8 hours freeze time
Servings: 8 (1/2 cup per serving)

  • 1          pound stemmed black Grapes from California
  • 12        ounces vanilla oat coffee creamer, well chilled
  • 12        ounces unsweetened oat coffee creamer, well chilled
  1. In high-speed blender, puree grapes until smooth. Transfer to medium saucepan and bring to simmer. Reduce heat to low and cook 10-15 minutes, or until reduced to 1 cup. Cover and refrigerate until well chilled.
  2. Stir creamer into pureed grapes and pour into stainless steel mixer bowl. Using stand mixer, mix well. Cover and freeze 6-8 hours or overnight.

Substitution: For lighter color, use 3/4 pound black grapes and 1/4 pound red.

Note: Make sure stainless steel bowl is well chilled or frozen before making ice cream.

Caramelized Bananas

  •             Butter, for melting in pan
  • 2          bananas
  • 1/2       teaspoon cinnamon
  • 2          tablespoons maple syrup
  • vanilla ice cream (optional)
  1. In medium skillet over medium heat, melt butter. Slice bananas evenly into 1/2-inch-thick coins. Once skillet is hot, add banana slices.
  2. Sprinkle in cinnamon, pour in maple syrup and toss gently to coat both sides. Cook bananas 4 minutes on each side until caramelized. Remove from heat and serve with vanilla ice cream, if desired.

Tips: Be sure bananas are not overly ripe. Green tinge is preferred as bananas will hold up better to heat. Sugar burns quickly watch closely when caramelizing.

Peanut Butter Ice Cream Sandwiches

  • 24        fresh baked chocolate chip cookies (about 3 inches in diameter), cooled
  • 1 1/2    cups creamy or crunchy peanut butter
  • 1 1/2    quarts vanilla ice cream, slightly softened
  • chopped peanuts, for topping (optional)
  • mini chocolate chips, for topping (optional)
  • toasted coconut, for topping (optional)
  1. On 12 cookies, top sides down, spread layer of peanut butter. Add one scoop of ice cream to each. Create sandwiches by topping with remaining cookies.
  2. Roll edges of ice cream in chopped peanuts, mini chocolate chips or toasted coconut, if desired. Place on baking sheet in freezer and freeze until firm.
  3. Serve slightly frozen.

Watermelon Ice Cream Bars

Servings: 8

Watermelon Curd:

  • 3/4 cup watermelon juice
  • 2 tablespoons lime juice
  • 1/2 cup honey
  • 1 pinch salt
  • 3 eggs, lightly beaten
  • 1/2 cup butter (1 stick), cut into small cubes

Crust:

  • 8 graham crackers, crushed
  • 2 tablespoons honey
  • 1 pinch salt
  • 4 tablespoons butter, melted and cooled
  • basil leaves, for garnish

Whipped Cream:

  • 1 cup heavy whipping cream
  1. To make watermelon curd: In medium, heavy-bottomed saucepan, combine watermelon juice, lime juice, honey and salt. Stir to combine then add eggs.
  2. Place pan over medium heat and cook, adding cubed butter to pan and stirring constantly, until mixture thickens and coats back of wooden spoon. Immediately remove from heat and carefully pour through fine mesh sieve. Cool completely in refrigerator.
  3. To make crust: Preheat oven to 350 F.
  4. In food processor, pulse graham crackers until rough crumbs form. Add honey, salt and melted butter; pulse until mixture resembles wet sand.
  5. Line 8-by-8-inch pan with parchment paper then press graham cracker mixture into bottom of pan in even layer. Bake crust about 10 minutes, or until just beginning to brown. Allow crust to cool completely.

Watermelon Gelato

Servings: 8

  • 2 cups pureed watermelon
  • 1/2 cup sugar
  • 1 1/2 tablespoons cornstarch
  • 1 cup fat-free half-and-half
  • 3 tablespoons lemon juice
  • 1/2 cup whipping cream
  1. In blender, blend watermelon, sugar, cornstarch, half-and-half, lemon juice and whipping cream until smooth.
  2. Using ice cream maker, process gelato according to manufacturer's instructions.
  3. To make whipped cream: When crust and curd are completely cooled, in large bowl, whip cream until stiff peaks form.
  4. Gently push cream to one side of bowl and pour in watermelon curd. Using spatula, gently fold cream and watermelon curd together until no streaks are visible.
  5. Pour creamy watermelon mixture over graham cracker crust. Freeze dessert completely, 4-6 hours or overnight.
  6. When ready to serve, loosen sides with small spatula or butter knife. Turn out onto cutting board and use large spatula to flip so graham cracker crust is on bottom. Cut into eight bars and top each with basil leaf.

Cheesecake Ice Cream with Fruit Swirls

  • 12        ounces cream cheese, cut into cubes
  • 3/4       cup sugar
  • 1          cup sour cream
  • 3/4       cup half-and-half
  • 2          teaspoons vanilla
  • 1 1/4    teaspoons lemon juice, divided
  • 1          dash salt
  • 1/3       cup blueberry, raspberry, cherry, strawberry, peach or apricot fruit spread
  1. In large mixer bowl of electric mixer, beat cream cheese and sugar on medium speed until fluffy. Add sour cream, half-and-half, vanilla, 1 teaspoon lemon juice and salt. Beat on low speed until combined then beat on medium speed until smooth. Cover and refrigerate 2-24 hours, or until cold.
  2. Pour cream cheese mixture into 1 1/2-quart ice cream freezer. Freeze according to manufacturer’s directions.
  3. In small bowl, stir fruit spread and remaining lemon juice.
  4. Spoon about one-third of ice cream into 2-quart food storage container. Spoon about half of fruit spread mixture in dollops over ice cream. Repeat layers. Top with remaining ice cream. Cover and freeze 4-24 hours.
  5. To serve, scoop ice cream into dessert dishes.

Coconut Ice Cream:

  • 2          cups heavy whipping cream
  • 1/2       cup sweetened condensed milk
  • 1/2       cup coconut milk
  • 1/2       teaspoon salt
  • mint leaves, for garnish (optional)
  1. To make berry ice cream: In blender, pulse frozen berries, sweetened condensed milk, honey and salt until smooth, scraping down sides.
  2. Pour mixture into 5-by-9-inch loaf pan. Freeze uncovered 4 hours, or until set.
  3. To make coconut ice cream: In large mixing bowl, beat whipping cream until stiff peaks form.
  4. In medium bowl, whisk sweetened condensed milk, coconut milk, salt and 1 cup whipped cream until combined. Add remaining whipped cream and whisk until combined.
  5. Pour into 5-by-9-inch loaf pan. Freeze uncovered 4 hours, or until set.
  6. Scoop desired amount of each ice cream into bowls to serve. Garnish with mint leaves, if desired.

  • 6          medium Honeycrisp apples, peeled and cubed
  • 1          tablespoon white flour
  • 1/2       cup white sugar
  • 1/2       teaspoon ground cinnamon

  • 2          lemons, juice only

Topping:

  • 1          cup quick oats
  • 1          cup white flour
  • 1/2       cup light brown sugar
  • 1/2       cup dark brown sugar

  • 1          teaspoon cinnamon powder
  • 1/2       cup unsalted butter, melted
  • 1/8       teaspoon salt
  • vanilla ice cream (optional)
  1. Preheat oven to 350 F.
  2. To make filling: In medium bowl, add apples, flour, sugar, cinnamon, cloves and lemon juice. Toss to evenly coat. Spread evenly in 8-by-8-inch baking dish.
  3. To make topping: In medium bowl, add oats, flour, brown sugars, baking powder, cinnamon, melted butter and salt. Fork mixture to create crumbles. Pour crumble topping over apple mixture.
  4. Bake 30-40 minutes, or until golden brown. Let stand 10 minutes before serving.
  5. Serve warm with vanilla ice cream.

  • 1 1/2    cups California walnuts, divided
  • 1/4       cup all-purpose flour
  • 1/3       cup brown sugar
  • 1/2       cup quick-cooking oats
  • 1/2       teaspoon ground cinnamon
  • 1/2       cup butter, chilled and sliced into 1-tablespoon pieces

Apple Pear Filling:

  • 3          Granny Smith apples, peeled and sliced into 1/4-inch slices
  • 2          D’Anjou pears, peeled and sliced into 1/4-inch slices
  • 1/2       cup granulated sugar
  • 2          tablespoons cornstarch
  • 1          teaspoon cinnamon
  • 1/8       teaspoon salt
  • 1          tablespoon lemon juice
  • ice cream (optional)
  • caramel sauce (optional)
  1. To make walnut crisp topping: In food processor, pulse 1 cup walnuts until finely ground.
  2. In small bowl, combine ground walnuts, flour, brown sugar, oats and cinnamon. Cut butter into mixture until coarse crumb forms.
  3. Coarsely chop remaining walnuts and stir into crumb mixture until incorporated. Set aside.
  4. To make apple pear filling: Preheat oven to 350 F.
  5. In bowl, toss apples, pears, sugar, cornstarch, cinnamon, salt and lemon juice.
  6. Place fruit mixture in bottom of 10-inch cast-iron pan or baking dish.
  7. Sprinkle walnut crisp topping mixture over fruit.
  8. Bake 45 minutes, or until fruit mixture is hot and bubbly and topping is golden brown.
  9. Top with ice cream and caramel sauce, if desired.

Pumpkin Walnut Sage Risotto

Total time: 30 minutes
Servings: 6

Risotto:

  • 6          cups vegetable stock
  • 1/4       cup olive oil
  • 1/2       large yellow onion, finely diced
  • 1 1/2    cups Arborio rice
  • 1          cup pumpkin puree
  • 1/4       cup grated pecorino cheese

Walnut Sage Pesto:

  • 2          cloves fresh garlic
  • 1          cup California walnuts
  • 1/2       cup fresh sage leaves, plus additional for garnish, if desired
  • 1/2       cup grated pecorino cheese, plus additional for garnish, if desired
  • 2          tablespoons olive oil
  • kosher salt, to taste
  • black pepper, to taste
  1. To make risotto: In medium pot over medium-low heat, heat vegetable stock.
  2. In large, heavy pot over medium heat, heat olive oil. Add onion and cook, stirring often, 5 minutes, or until soft.
  3. Add rice and cook, stirring often, 2-3 minutes until rice is translucent except for white center.
  4. Add hot stock 1 cup at a time, stirring frequently. As stock is absorbed, add another cup. Continue until all stock has been incorporated and rice is cooked al dente, about 20 minutes. Stir in pumpkin and cheese.
  5. To make walnut sage pesto: In bowl of food processor, combine garlic and walnuts; pulse until minced. Add 1/2 cup sage leaves, 1/2 cup cheese and olive oil; pulse until coarse pesto forms. Season with salt, to taste.
  6. In final few minutes, add 1/2 cup walnut sage pesto to risotto, stirring until well incorporated. Season with kosher salt and black pepper, to taste. Garnish with remaining pesto, cheese and fresh sage, if desired.
