- 1 pound Bob Evans Original Recipe Roll Sausage
- 1 medium onion, chopped (optional)
- 1/2 cup chopped green bell pepper (optional)
- 1 1.3 ounce envelope Sloppy Joe seasoning mix
- 1 6-ounce can tomato paste
- 1 1/4 cups water
- 8 sandwich buns, split and toasted
- In large saucepan, over medium heat crumble and cook sausage, onion and pepper until sausage is browned. Stir in seasoning mix, tomato paste and water. Bring to a boil, reduce heat to low and simmer 10 minutes. Serve on buns.

Makes 4 servings

Bacon French Toast Bake
- 1 small loaf challah or brioche bread, cut into 1/2-inch-thick slices
- nonstick cooking spray
- 6 large eggs
- 1 cup heavy cream
- 1 cup whole milk
- 1/2 cup grated Gruyere cheese
- 1/3 cup maple syrup
- 1 teaspoon ground cinnamon
- 4 slices Smithfield Bacon, cooked and chopped
- 1/4 cup grated Swiss cheese
- 1/2 cup blackberries
- 1 teaspoon powdered sugar, for dusting
- Leave bread slices out, at room temperature, at least 3 hours, or until slightly stale.
- Generously coat 9-inch baking dish with nonstick cooking spray. Arrange bread, slightly overlapping.
- In large bowl, whisk eggs, heavy cream, milk, Gruyere cheese, maple syrup and cinnamon. Add chopped bacon, saving 2 tablespoons for later. Pour over bread in baking dish. With hands, press down on bread to submerge.
- Cover baking dish with plastic wrap. Refrigerate at least 5 hours, or overnight.
- Heat oven to 375 F. Remove plastic. Sprinkle remaining bacon and Swiss cheese over top of bread mixture.
- Bake 45-50 minutes, or until golden brown and set.
- Top with blackberries and dust with powdered sugar before serving.
Sausage and Ciabatta Stuffing
- 1 large loaf ciabatta bread, cut into 1-inch cubes
- 4 tablespoons unsalted butter, divided
- 1 pound Smithfield Fresh Sausage Roll
- 1 cup carrots, diced
- 1 1/2 cups onion, diced
- 2 cups celery, diced
- 2 cups chicken broth
- 1/3 cup olive oil
- 2 tablespoons chopped parsley, plus additional for garnish
- 2 tablespoons chopped rosemary
- salt, to taste
- freshly ground black pepper, to taste
- Heat oven to 325 F.
- Bake ciabatta bread cubes until lightly toasted, about 15 minutes. Set aside. Increase oven temperature to 375 F.
- In skillet over medium-high heat, melt 1 tablespoon butter.
- Cook sausage, breaking meat into medium pieces, until browned, about 8-10 minutes. Transfer sausage to large bowl; set aside.
- Add remaining butter to skillet; cook carrots, onions and celery until soft, 5-7 minutes, and transfer to bowl with sausage.
- In large bowl, mix bread cubes, chicken broth, olive oil, parsley, rosemary and salt and pepper, to taste. Add vegetable and sausage mixture to bread cubes mixture and combine.
- Spread evenly in greased 9-by-13-inch baking dish. Bake until golden brown and bread is slightly crisp on top, 30-35 minutes.
- Garnish with additional parsley before serving.
Tip: Recipe can be made one day before and refrigerated overnight.

- Roast, uncovered, 15 minutes. Add garlic to vegetables; toss well. Return to oven and continue roasting 15 minutes, or until vegetables are tender and lightly browned.
Note: 1 tablespoon chopped fresh thyme may be substituted for dried thyme leaves.
Spicy Carrot-Sweet Potato Casserole

- 1 jar (15.5 ounces) Aunt Nellie’s Glazed Small Sliced Carrots
- 1/4 cup orange juice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground ginger
- 1/2 teaspoon grated orange peel
- 1 cup cooked sweet potato pieces (about 2 inches each)
- 1/4 cup coarsely chopped pecans
- Heat oven to 350°F. In large bowl, gently stir together carrots with jarred liquid, orange juice, cinnamon, ginger and orange peel.
- Spray 1 1/2- to 2-quart baking dish with nonstick cooking spray. Arrange sweet potatoes in dish. Pour carrot mixture over potatoes. Sprinkle with pecans.
- Bake 30 minutes, or until bubbling and heated through. Allow to stand 5-10 minutes before serving.

Beet, Feta and Walnut Scones
Servings: 8

- 1 jar (16 ounces) Aunt Nellie’s Sliced Pickled Beets
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon ground black pepper
- 1/2 cup milk (2 percent or skim)
- 1/3 cup olive oil
- 1 egg, beaten
- 1/4 cup thinly sliced green onion
- 1 tablespoon chopped fresh rosemary
- 1 small clove garlic, minced
- 2/3 cup crumbled feta cheese (not fat-free)
- 1/2 cup coarsely chopped toasted walnuts
- 8 rosemary sprigs
- Heat oven to 400°F.
- Drain beets well. Chop coarsely; set aside on paper towels.
- In large bowl, whisk together flour, baking powder, salt and pepper.
- In small bowl, whisk together milk, oil and egg. Stir in onion, rosemary and garlic. Add milk mixture to flour mixture. Stir to combine. Gently stir in feta and walnuts, just until combined, then add beets and stir gently to combine.
- Turn out onto lightly floured surface. Knead dough three to four times to smooth. Pat into 9-inch round on ungreased baking sheet. Cut into 8 triangles; do not separate. Lightly press rosemary sprigs into each scone.
- Bake 20 minutes, or until light golden-brown. Cool on baking sheet; set on wire rack. Serve warm or at room temperature.
Quick Sausage and German Potato Salad Skillet
Servings: 4

- 2 teaspoons olive or vegetable oil
- 1 medium red or yellow onion, cut into 1/2-inch thick wedges
- 1 cup chopped red bell pepper
- 3/4 pound pre-cooked smoked chicken or turkey sausage links
- 1 can (15 ounces) READ German Potato Salad
- 1/4 teaspoon cracked black pepper
- chopped parsley (optional)
- In large skillet, heat oil over medium heat. Add onion and bell pepper. Cook and stir 1 minute. Add sausages; continue cooking 5 minutes until browned and heated through, turning occasionally. Remove sausages from skillet.
- Add potato salad and black pepper to skillet. Stir to combine with onion mixture. Return sausages to skillet. Cook 2-3 minutes until heated through. Sprinkle with parsley, if desired.

Don’t skip meals.
Although skipping breakfast may seem like a good way to cut calories, it’s a plan that can actually backfire, making you hungrier as the day wears on, and more likely to overeat or sneak unhealthy snacks. Start each day with a well-rounded breakfast to fuel your body. Apply a similar approach to events later in the day, as well. You may be tempted to skip a meal so you can enjoy the treats at a party, but chances are you’ll end up overdoing it with high-calorie indulgences, so make sure you fuel up ahead of time.
Love what you eat.
Be mindful of the food you eat and make every bite count. Enjoying each delicious taste will make it easier to stick to a sensible eating plan. - 2 Flatout Flatbreads
- 1/2 cup barbecue sauce
- 1/3 cup cheddar cheese, shredded
- 1/3 cup mozzarella cheese, shredded
- 6 ounces grilled chicken breast, torn into pieces
- 1 tablespoon red onion, diced
- 1 tablespoon cilantro, chopped
- Heat oven to 400°F.
- Spray large baking sheet with non-stick baking spray. Place flatbreads on baking sheet. On each flatbread, evenly spread 2 tablespoons barbecue sauce.
- Sprinkle both cheeses over flatbreads. Mix remaining barbecue sauce with grilled chicken and place on pizzas. Top with diced onion. Bake 5 minutes. Sprinkle cilantro on top and serve.
Thin Crust Pepperoni Pizza
- 1 Flatout Flatbread Artisan Thin Pizza Crust
- 1/4 cup chunky red sauce
- 3 slices provolone cheese
- 1/4 cup mozzarella, shredded
- 30 pepperoni mini slices
- Heat oven or grill to 375°F.
- Place flatbread on cookie sheet. Bake 2 minutes. Remove from oven. Spread sauce on flatbread. Lay provolone on top of sauce. Top with mozzarella and pepperoni. Return to oven and bake 4 more minutes, or until cheese melts.

- 6 grape tomatoes

- Heat grill or oven to 375°F.

- Warm mushrooms in microwave or pan. Top flatbread with arugula, tomatoes and mushrooms. Sprinkle with cheese and drizzle with balsamic vinegar. Cut into slices.

Mini Pecan Crusts:
- 2 cups pecan pieces or halves
- 1/4 cup butter, melted
- 2 tablespoons sugar
- 24 Mini Pecan Crusts
- 1/2 cup lemon curd
- 1/2 cup blueberries or raspberries
- powdered sugar, for dusting (optional)
- To make Mini Pecan Crusts: Heat oven to 350° F. Line mini muffin tin with paper liners.
- In food processor, blend pecans, butter and sugar until mixture forms coarse dough.
- Scoop about 2 teaspoons pecan mixture into each muffin tin. Use back of wooden spoon or fingers to press mixture evenly along bottom and up sides of each muffin cup.
- Bake 12 minutes, or until crusts are golden brown. Allow crusts to cool completely before removing from pan.
- Spoon 1 teaspoon lemon curd into each Mini Pecan Crust. Top each with one raspberry or three small blueberries. Dust with powdered sugar, if desired.

- 1 teaspoon extra-virgin olive oil

Sheet Pan Eggs:
- 12 eggs, beaten
- 3/4 cup fat-free or low-fat milk

- Heat oven to 325° F.

- In food processor, pulse onion mixture and pecans until consistency of ground beef is reached, about 8-10 pulses.

Storing

- 1/2 teaspoon black pepper
- 1 link (13.5 ounces) Andouille sausage, sliced
- 1 pound large shrimp, peeled and deveined
- 1 tablespoon Cajun seasoning blend
- linguine noodles, cooked according to package directions
- 1-2 lemons, sliced in thin wedges
- 2 green onions, sliced
- fresh chopped parsley
- Heat oven to 400° F.
- Line 13-by-18-inch sheet pan with parchment paper.
- In large bowl, combine onion, bell peppers, celery, garlic, jalapenos, tomatoes, 2 tablespoons olive oil, salt and pepper until evenly combined. Spread out evenly on pan in single layer. Add slices of Andouille sausage. Roast 15-20 minutes, or until vegetables are tender and start to brown.
- Toss shrimp with Cajun seasoning and prepare linguine noodles.
- When ready, remove baking sheet from oven. Place shrimp on top of vegetable and sausage mixture in single layer. Top with half the lemon wedges. Return to oven and cook about 5-8 minutes, or until shrimp is no longer pink.
- Serve over linguine garnished with green onions and parsley with remaining fresh lemon wedges on side.
Easy Drumstick-Quinoa Sheet Pan Supper

- 8-10 chicken legs
- 1 fennel bulb
- 1 large yellow onion, sliced
- 1 large red onion, sliced
- 2 garlic cloves, sliced
- 3 medium-sized potatoes, cubed
- 1 orange (1/4 cup juice and zest)
- 1/4 teaspoon thyme, dried
- 2 tablespoons olive oil
- 1 teaspoon sea salt
- 1/2 teaspoon black pepper
- 2 tablespoons fresh chopped parsley
- orange rind curls
- brown rice, cooked according to package directions
- quinoa, cooked according to package directions
- Heat oven to 400° F.
- Line 13-by-18-inch sheet pan with parchment paper.
- Place chicken legs on pan. Spread fennel, yellow onion, red onion, garlic and potatoes around and in between legs.
- In small bowl, whisk together orange juice and zest, thyme and olive oil. Pour mixture over chicken and vegetables. Season with salt and pepper.
- Roast 45 minutes, or until chicken is cooked through and vegetables are tender. Cook rice and quinoa.
- Garnish chicken with parsley and orange curls. Serve over brown rice and quinoa.
Sheet Pan-Style Buddha Bowls

- 2 yellow onions, peeled and cut into 1/2-inch wedges
- 1/2 head of red or purple cabbage, cut into wedges
- 2 red potatoes, cut into 1/2-inch wedges
- 1 small butternut squash, peeled and 1/2-inch diced
- 1 pound Brussels sprouts, halved
- extra-virgin olive oil
- salt, to taste
- black pepper, to taste
- 1 1/2 cups quinoa, cooked according to package directions
Tahini sauce:
- 1 tablespoon tahini
- 1/2 lemon, juiced
- 1 teaspoon Dijon mustard
- 1/2-1 teaspoon maple syrup
- 2 avocados, peeled and sliced
- fresh parsley
- Heat oven to 400° F.
- Line 13-by-18-inch sheet pan with parchment paper.
- Place onion, cabbage, potatoes, squash and Brussels sprouts in single layer on pan. Drizzle with olive oil and season with salt and pepper. Roast vegetables 40 minutes, or until tender. Add more salt and pepper if needed.
- While vegetables roast, cook quinoa.
- To make tahini sauce: In small bowl, whisk tahini, lemon juice, mustard and syrup until smooth.
- To assemble Buddha bowls: Spoon quinoa into bowls. Add roasted veggies and garnish with avocado and parsley. Drizzle tahini sauce over each bowl and serve.

Pull-Apart Rosemary Sausage Rolls

- 1 pound Smithfield Hometown Original Fresh Sausage Roll
- 2 teaspoons finely chopped rosemary leaves, plus sprigs for garnish (optional)
- 1/2 teaspoon freshly ground black pepper
- 1 egg
- 1 teaspoon water
- 2 cans (12 ounces each) refrigerated small biscuits (20 biscuits total)
- Heat oven to 400° F. In bowl, unpackage sausage and lightly mix with rosemary and pepper. Divide into 20 pieces, rolling into little balls; refrigerate until needed.
- In small bowl, whisk egg and water until frothy. Remove biscuits from packaging and carefully dimple centers with thumbs. Insert sausage balls in centers and place biscuits close together on lightly sprayed or greased cookie sheet. Brush exposed biscuit dough with egg wash and top with rosemary sprigs, if desired. Bake 12-15 minutes, or until biscuits are golden and sausage is cooked through. Serve warm.

Bacon Lattice Breakfast Tart with Spinach and Mushrooms
Prep time: 20 minutes
Cook time: 45 minutes
Servings: 4
- 6 slices Smithfield thick-cut bacon, any flavor
- 1 cup sliced cremini or button mushrooms
- 3 cups lightly packed baby spinach
- 1 refrigerated prepared pie crust
- 6 large eggs
- 1 cup half and half
- 1/4 cup grated Parmesan cheese
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- Heat oven to 350° F.
- In skillet, cook bacon over medium heat 5-6 minutes, or until slightly rendered and beginning to curl. Remove bacon from pan and drain on paper towels until cool enough to handle. Drain all but 1 tablespoon fat from pan and cook mushrooms over high heat 4-5 minutes, or until softened and any moisture in pan has evaporated, stirring occasionally. Add spinach leaves and cook 1 minute, or until just wilted.
- Line 9-inch pie plate with pie crust, working crust up sides with fingers; refrigerate until needed. In bowl, lightly whisk eggs and stir in half and half, Parmesan, salt and pepper; reserve.
- Add mushrooms and spinach to egg mixture and stir to combine. Pour into pie crust and bake 20-25 minutes, or until eggs are begin to set. Increase oven temperature to 400 F. Arrange bacon loosely in woven lattice form on top of pie and return to oven. Bake 18-20 minutes, or until bacon begins to crisp and crust is golden brown.
- Let cool on wire rack 10-15 minutes before serving.
Substitutions: Whole milk can be substituted for half and half. Baby kale can be substituted for baby spinach.

Grilled Sausage Skewer Sandwiches

- 1 regular size package Eckrich Smoked Sausage
- 1 small red onion, cut into 1-inch pieces
- 1 red bell pepper, seeded, cut into 1-inch pieces
- 6 wooden skewers, 10 inches long
- 1/2 cup Italian salad dressing, divided
- 6 bolillo or sandwich rolls, split
- 1 avocado, cut into 1/2-inch thick slices
- 1/4 cup cilantro leaves
- Heat grill to medium-high.
- Cut sausage into 1/2-inch thick slices. Thread sausage, onion and bell peppers alternately onto skewers. Brush 1/4 cup salad dressing on skewered sausage and vegetables.
- Grill until sausage is golden brown and vegetables are crisp-tender, about 10 minutes, turning once.
- Brush remaining salad dressing on rolls. Fill rolls with grilled sausage and vegetables. Divide avocado and cilantro onto each.
Tip: To broil sausage rather than grill, heat broiler to medium-high, follow the same skewer preparation instructions and broil about 10 minutes, or until sausage is golden brown and vegetables are crisp-tender.
Ham and Turkey Roll-ups

- 3 small red potatoes (about 2 1/2 pounds), cooked and quartered

- 1 clove garlic, minced
- 2 teaspoons ground black pepper
- In large skillet over medium heat, cook sausage 6 minutes, stirring occasionally. Stir in potatoes; cook until heated through, stirring occasionally. Remove from heat.

Cheesy Bacon Jalapeno Corn Muffins
- Nonstick cooking spray
- 1 package (16 ounces) Smithfield Hometown Original Bacon
- 3/4 cup all-purpose flour
- 3/4 cup yellow cornmeal
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup shredded sharp cheddar cheese
- 2 eggs
- 6 tablespoons butter, melted
- 1/3 cup honey
- 3/4 cup milk or buttermilk
- 1 can corn kernels, drained
- 2 medium jalapeno peppers, seeded and diced
- 1 medium jalapeno pepper, thinly sliced
- Heat oven to 375° F.
- Line rimmed baking pan with foil and set lightly sprayed baking rack in pan. Cut bacon crosswise into thirds and lay out bacon strips on rack, being careful not to overlap slices. Bake 10-12 minutes, or until bacon has just begun to crisp. Remove from oven and drain on paper towels. Increase oven temperature to 400 F.
- In large bowl, stir together flour, cornmeal, baking powder, salt and cheese until well mixed.
- In small bowl, whisk eggs until frothy and stir in melted butter, honey and milk. Add milk mixture to dry ingredients and stir until combined. Fold in corn and diced jalapeno and reserve.
- Lightly spray or butter 12-cup muffin tin and line each cup with two slices of bacon. Evenly divide muffin batter into cups, filling about three-fourths full and top with remaining bacon and sliced jalapeno. Bake muffins 20 minutes, or until golden brown, using toothpick to test doneness. Let cool briefly, remove muffins from tin and serve while still warm.
Sausage and Egg Tarts with Asparagus and Tomatoes
- Flour, for dusting
- 1 package (about 1 pound) frozen prepared puff pastry, thawed
- 9 eggs, brought to room temperature for 30 minutes, divided
- 1 teaspoon water
- 1 Smithfield Hometown Original Fresh Sausage Roll, sliced into 8 patties, cooked and halved
- 1 pound fresh asparagus spears, cut into pieces
- 1 pint grape tomatoes, halved lengthwise
- salt, to taste
- freshly ground black pepper, to taste
- 1/2 cup shredded Parmesan cheese (optional)
- Heat oven to 400° F.
- On lightly floured surface, roll out pastry and cut into eight 4-5-inch squares and transfer to greased or parchment-lined baking sheets spaced about 1 inch apart. Using small knife, lightly score line 1/2-inch inside edges of squares to create framed border. With fork, prick several holes in center of pastry squares.
- Bake squares 7-8 minutes, or until pastry has puffed substantially yet not begun to brown. Remove from oven and immediately tamp down centers inside of scored line carefully with back of fork.
- Lightly beat 1 egg with water and brush outside frames of pastry with egg wash. Slightly overlapping framed pastry borders, equally divide and arrange sausage, asparagus and tomatoes in pastry squares, leaving centers open for eggs. Top each with cracked egg, seasoning with salt and pepper and sprinkling with cheese, if desired.
- Return to oven and bake 8-10 minutes, or until puff pastry is golden brown and eggs have just set. Let cool slightly and transfer tarts with spatula to serving plate and serve warm.
Cinnamon French Toast Sausage Roll-Ups
- 12 Smithfield Fresh Sausage Links
- 2 eggs
- 2/3 cup milk
- 3 tablespoons almond liquor (optional)
- 1/2 teaspoon ground cinnamon
- 6 slices whole-wheat bread, crust removed and cut in half
- 3 tablespoons butter
- Cook sausage according to package directions; keep warm.
- Beat together eggs, milk, almond liquor and cinnamon. Dip one bread slice half in egg mixture and wrap around one sausage link. Press bread edges together where they overlap to keep from unrolling. Repeat with remaining bread and sausage links.
- Heat large skillet over medium heat; add butter and let melt. Place French toast-wrapped sausages in skillet, seam-side down. Cook until browned on all sides, about 10 minutes total.
Scrambled Eggs and Ham in a Waffle Cup
- 6 eggs
- 1/2 cup milk
- 1/2 cup sharp cheddar cheese, shredded
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 2 cups Smithfield Honey Cured Boneless Ham Steak, diced
- 1 tablespoon butter
- 8 waffle cups (4 ounces each)
- 4 teaspoons maple syrup, warm, divided
- 1 teaspoon fresh thyme, chopped
- In bowl, whisk together eggs, milk, cheese, salt and pepper; stir in ham.
- In 10-inch, nonstick skillet, melt butter over medium-high heat. Add egg mixture; reduce heat to medium-low.
- Using wooden spoon, scrape eggs from edges of pan to center. Continue stirring eggs 3-5 minutes, or until fluffy.
- Scoop 1/2 cup warm scrambled eggs into waffle cup and drizzle with 1/2 teaspoon maple syrup. Garnish with fresh thyme leaves. Repeat for each waffle cup.
