Backyard Brunch Wakes Up Summer Grilling

Cedar Plank Grilled Egg in Toast

Makes 4 servings
Prep Time: 15 minutes
Cook Time: 20 minutes

  • 2 cedar planks (about 12x6 inches each)
  • 4 slices bread, such as brioche or challah (3/4-inch thick slices)
  • 7 eggs, divided
  • 2 tablespoons milk
  • 2 tablespoons plus 1/2 teaspoon McCormick Grill Mates Applewood Rub, divided
  • 1/2 cup grated smoked Cheddar cheese
  1. Soak cedar planks in water for at least 4 hours or overnight. Drain and pat dry.
  2. Remove centers of each slice of bread with 3-inch round cookie cutter. Beat 3 eggs with milk and 2 tablespoons of the Applewood Rub in medium bowl until well blended.
  3. Lightly oil 1 side of each of planks. Place planks, oil side up, on preheated grill over medium heat. Dip bread in egg mixture. Place on planks. Break an egg into each of holes. Sprinkle eggs with remaining 1/2 teaspoon Applewood Rub. Cover grill.
  4. Grill 10 minutes. Sprinkle eggs with cheese and additional Applewood Rub, if desired. Grill, covered, 10 minutes longer.

Candied Grilled Bacon

Makes 6 servings
Prep Time: 5
Cook Time: 15

  • 6 slices thick-cut applewood bacon
  • 3 tablespoons honey
  • 2 teaspoons McCormick Ground Cinnamon
  1. Arrange bacon slices in single layer on bacon grilling rack or shallow disposable foil pan. Grill over medium-high heat 10 to 12 minutes or until bacon edges begin to curl. Remove pan from grill. Drain drippings.
  2. Microwave honey and cinnamon in small microwavable bowl on high 30 seconds, stirring after 15 seconds. Brush bacon with honey mixture. Place bacon directly on grill over low heat. Grill 2 to 3 minutes per side or until crisp.

Sweet N Salty Popcorn Pretzel Sticks

Yield: 6 sticks

  • 6 tablespoons peanut butter
  • 6 large pretzel rods
  • 3 cups popped popcorn
  • Sugar sprinkles
  • 3/4 cup mini chocolate chips (optional)
  1. Spread 1 tablespoon of peanut butter over each pretzel, leaving a two-inch "handle" without peanut butter.
  2. Press and roll popcorn onto peanut butter to coat. Sprinkle with sugar sprinkles.
  3. For optional chocolate drizzle, place chocolate chips in small sealable plastic bag and seal. Microwave 30 seconds or until chocolate is melted. Clip small corner from bag and squeeze to drizzle chocolate over popcorn.
  4. Sprinkle with additional sugar sprinkles. Allow chocolate to harden before serving.

Chili Lime Popcorn Snack Mix

Yield: 1 quart

  • 1 quart popped popcorn
  • 1 teaspoon brewer's yeast powder
  • 1 teaspoon lime juice
  • 1/2 teaspoon chili powder
  • 1/4 teaspoon salt
  1. Preheat oven to 300°F.
  2. Spread popcorn on baking sheet. Sprinkle yeast powder, lime juice, chili powder and salt over popcorn.
  3. Heat about seven minutes and toss just before serving. Serve warm.

Blueberry & Pomegranate Power Bars

Yield: 12 bars

  • 8 cups popped popcorn
  • 1 1/2 cups old-fashioned rolled oats
  • 1 cup dried blueberries
  • 1/2 cup pomegranate seeds
  • 1/2 cup toasted and coarsely chopped whole natural almonds
  • 2/3 cup honey
  • 2/3 cup light brown sugar
  • 2 tablespoons butter or margarine
  • 6 ounces melted bittersweet chocolate
  1. Line 13-by-9-inch pan with foil; spray with cooking spray.
  2. Combine popcorn, oats, blueberries, pomegranate seeds and almonds in large bowl.
  3. Combine honey, brown sugar and butter in small saucepan. Cook over low heat to boiling; boil two minutes. Pour over popcorn mixture and mix thoroughly.
  4. Using damp hands, press mixture firmly into prepared pan. Refrigerate until firm, about two hours. Cut into 12 bars.
  5. Dip bottoms of bars into melted chocolate. Place on wax paper-lined pan. Store in tight covered container in refrigerator until ready to serve.

Popcorn Trail Mix

Yield: 5 cups

  • 1 quart popped popcorn (air popped)
  • 6 ounces diced, dried fruit (apricots, apples, etc.)
  • 8 ounces raisins
  1. Place freshly popped popcorn in large bowl. Add diced fruit and raisins. Toss popcorn and fruit until combined thoroughly.

Note: Add whatever fixings your family enjoys: dried fruits, seeds, nuts, etc.

Popcorn S'mores

Yield: 20 pieces

  • 1 cup firmly packed light brown sugar
  • 1/2 cup (1 stick) butter or margarine
  • 1/2 cup corn syrup
  • 1/2 teaspoon baking soda
  • 10 cups freshly popped popcorn
  • 1 package (10 1/2 ounces) miniature marshmallows
  • 2 cups mini graham cookies (teddy bears)
  • 1 cup chocolate chips
  1. Combine brown sugar, butter and corn syrup in medium saucepan. Cook over high heat for five minutes; remove from heat and stir in baking soda.
  2. Combine popcorn and marshmallows in large bowl. Pour sugar mixture over popcorn to coat.
  3. Gently stir in graham cookies and chocolate chips.
  4. Spread mixture evenly into greased 15-by-10-inch pan. Let cool completely, then break into pieces. Store in airtight container.

Grilled Honey Glazed Shrimp

Makes 6 servings

  • 1 cup orange juice
  • 3/4 cup 100% pure honey
  • 1/3 cup lime juice
  • 1/3 cup Dijon mustard
  • 2 tablespoons chili powder
  • 2 tablespoons paprika
  • 2 teaspoons black and red pepper blend
  • 2 teaspoons salt
  • 2 teaspoons oregano
  • 1 teaspoon California-style coarse onion powder
  • 30 jumbo shrimp
  • 12 bamboo skewers, soaked in water for at least 30 minutes
  1. Place orange juice, honey, lime juice, mustard and dry seasonings in a blender and blend on high for 1 minute until smooth. Pour into a saucepan and simmer over medium heat for 12 minutes or until thickened and reduced by half. Divide the glaze into 2 plastic containers, seal tightly and refrigerate until ready to use. Thread shrimp onto skewers. Cook shrimp over hot coals for about 3 minutes on each side or until completely pink, basting with one container of the glaze during grilling. Remove from grill and baste with remaining glaze.

Honey Marinated Chicken

Makes 4 servings

  • 1 cup vegetable oil
  • 2 tablespoons 100% pure honey
  • 2 tablespoons Dijon-style mustard
  • 2 cloves garlic, finely chopped
  • 2 teaspoons salt
  • 1/3 cup red wine vinegar
  • 2 tablespoons soy sauce
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon freshly ground black pepper
  • 4 boneless, skinless chicken breast halves
  • 1/3 cup 100% pure honey
  1. Blend all marinade ingredients (exclude the 1/3 cup honey); pour over chicken breasts. Marinate in refrigerator overnight in plastic bag. Remove chicken from marinade; discard marinade. Grill six to 10 minutes, turning once and basting occasionally with 1/3 cup honey during last five minutes of grilling.

Strawberry Chiffon Pie

Makes 8 servings

  • 2 cups (12 ounces) coarsely chopped strawberries, fresh or frozen
  • 3/4 cup 100% pure honey, divided
  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1 cup light sour cream
  • Prepared 9-inch crumb crust
  1. In small bowl, mash strawberries and 1/4 cup honey; set aside.
  2. In small saucepan, sprinkle gelatin over cold water; let stand five minutes. Stir in remaining 1/2 cup honey. Warm over low heat until gelatin dissolves. Transfer to large bowl; stir in sour cream. Cover and refrigerate 20 to 30 minutes or until mixture mounds on a spoon when tested.
  3. Using electric mixer, beat mixture at medium speed until light. Fold in strawberries; mix until well combined. Pour into prepared crust. Cover and refrigerate at least two hours.

Citrus Salad with Avocado

Makes 6 servings

  • 3 6-inch corn tortillas
  • 4 oranges
  • 4 grapefruits
  • 1/3 cup 100% pure honey
  • 1/4 cup raspberry vinegar
  • 2 tablespoons oil
  • 1/4 teaspoon salt
  • 1 avocado, sliced
  1. Preheat oven to 255°F. Slice tortillas into very thin strips. Dry strips by placing on a cookie sheet and baking for approximately 15 minutes. Set aside
  2. Peel oranges and grapefruits, then section, seed and place in large bowl; set aside. In small bowl, whisk together honey, raspberry vinegar, oil and salt.
  3. Pour over citrus sections and toss gently.
  4. Top with avocado slices and tortilla strips.

Honey Raspberry Iced Tea

Makes 4 servings

  • 2 cups freshly brewed tea
  • 2 cups cranberry-raspberry juice
  • 1/4 cup 100% pure honey
  1. In large, heat-proof pitcher, whisk together all ingredients until thoroughly combined and honey is dissolved. Chill until ready to serve. To serve, pour over ice.

Simple Summer Solutions

  • For this tropical dessert pizza, make the cookie crust the day before. Mix the filling and store it in an airtight plastic container, then cut up fruit and store in individual resealable plastic bags. Be creative and substitute your family's favorite fruits. Kids will have fun arranging the sliced fruit on this yummy dessert pizza!
  • Three ingredients plus three minutes equals one tasty marinade. Let the kids help pour the ingredients into a resealable plastic bag to flavor juicy pork tenderloins with a subtly sweet, spicy marinade.
  • The combination of crisp watermelon, juicy tomatoes and fresh basil with balsamic vinegar creates a fantastic and refreshing light salad. Just cut up ingredients and store in separate plastic containers, then toss together right before the party to keep the flavors fresh.

Simply Entertaining

  • For picnics on damp ground, placing an inexpensive plastic tablecloth under a blanket helps keep dampness from reaching picnickers - and keeps your blanket cleaner, too.
  • Wash, chop, measure and prepare your ingredients 1 to 2 days before an event or party. They can be stored in resealable plastic bags or airtight containers in the refrigerator to make putting together recipes much easier the day of the party.
  • Save plastic grocery bags to send guests home with leftovers. Placing an empty plastic grocery bag in a picnic basket is also a great solution for collecting trash after a picnic in the park - it doesn't take up much room and will act as a waterproof barrier to prevent spills.
  • Create a dipping station for barbeque and grill sauces using reusable plastic storage containers with lids. Guests can spoon sauces onto their plates; when the party is over, simply place the lids back on the sauces and store in the refrigerator. They come in all different shapes and sizes and even fun colors.
  • Use resealable plastic bags for marinades. Put meat in the bags with marinade and refrigerate overnight. It helps save space in the refrigerator and clean up is easy. This also works for coating and breading.

Tropical Fruit Dessert Pizza

Makes 12 servings

  • 1 18-ounce roll refrigerated ready-to-slice sugar cookie dough
  • 1/3 cup sugar
  • 1 8-ounce package fat-free cream cheese
  • 1 teaspoon coconut extract
  • 1 1/2 teaspoons grated orange rind
  • 1 cup fat-free frozen whipped topping, thawed
  • 1 26-ounce jar mango slices, drained, or 2 fresh mangoes, sliced
  • 1 16-ounce can pineapple slices, drained, or 1 fresh pineapple, sliced
  • 1 11-ounce can mandarin orange segments, drained
  • 1/2 cup apricot preserves
  • 2 tablespoons orange liqueur or orange juice
  • 2 tablespoons coconut, toasted, optional
  1. Preheat oven 350°F.
  2. Press cookie dough into a 12 to 14-inch pizza pan coated with nonstick cooking spray. Bake 12 minutes, cool completely.
  3. In medium mixing bowl, blend together sugar, cream cheese, coconut extract until well mixed. Stir in orange rind and whipped topping, mixing until smooth. Spread cream cheese mixture on top of cooled crust.
  4. Arrange mango slices around edge of iced pizza. Then, arrange pineapple slices around edge. Next, arrange mandarin orange slices in another ring to fill center of pizza.
  5. In small saucepan or in microwave, heat apricot preserves and orange liqueur just until melted. Spoon glaze over fruit. Sprinkle with toasted coconut, if desired. Refrigerate until serving.

Terrific Tidbit: Go ahead and grate more orange rind than you'll need for the recipe - you can grate a whole orange or lemon and freeze the rind in a plastic freezer bag until needed.

Watermelon and Tomato Salad

Makes 10 (1/2-cup) servings

  • 4 cups scooped out watermelon balls or chunks
  • 1/2 cup chopped red onion
  • 1 pint cherry tomatoes, halved
  • 2 tablespoons fresh chopped basil
  • 1 tablespoon olive oil
  • 2 tablespoons balsamic vinegar
  • Salt to taste
  • 1/3 cup crumbled reduced fat feta cheese, optional
  1. In bowl, combine watermelon, onion, tomatoes and basil. Whisk together oil and vinegar and toss with salad. Season to taste. Refrigerate until serving.

3-Ingredient Marinade for Pork Tenderloin

Makes 6 to 8 servings

  • 2 1-pound pork tenderloins, trimmed of excess fat
  • 1/4 cup reduced sodium soy sauce
  • 1/4 cup roasted garlic seasoned rice vinegar
  • 2 tablespoons honey
  1. Preheat oven 350°F.
  2. In bowl, combine all ingredients except tenderloins. Place meat in dish or large resealable plastic bag, pour marinade over meat. If time permits, refrigerate overnight, turning meat several times.
  3. Bake 40 to 45 minutes or until meat thermometer inserted into the thickest portion of the tenderloin registers 160°F. Slice tenderloin, serve.

Quick Tip: Tenderloins come two to a package. If one will be enough for you to serve, halve recipe, freeze other tenderloin in freezable plastic bag.

Fresh Fruit Cream Cheese Pie

Prep Time: 10 Minutes
Chilling Time: 3+ hours
Yield: 8 servings

  • 1 8-ounce package cream cheese, softened
  • 1 14-ounce can Eagle Brand Sweetened Condensed Milk OR 1 14-ounce can Eagle Brand Low Fat Sweetened Condensed Milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
  • 1 9-inch frozen deep-dish pie crust, baked
  • Fresh fruit (blueberries, strawberries, bananas*)
  • Seedless red raspberry jam
  1. BEAT cream cheese in large bowl with an electric mixer until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and vanilla. Pour into baked pie crust.
  2. REFRIGERATE 3 hours or until set. Arrange fruit on top of pie. If coating berries, stir jam until smooth. Brush berries with jam and serve.

*If using bananas, dip in lemon juice before placing on pie to keep them from turning brown. Do not coat with jam.

Butter Pecan Ice Cream

Prep Time: 15 minutes
Freezer Time: 6+ hours
Yield: 1 3/4 quarts

  • 2 cups heavy cream
  • 1 14-ounce can Eagle Brand Sweetened Condensed Milk
  • 1 to 1 1/2 cups chopped pecans, toasted*
  • 3 tablespoons butter, melted
  • 1 teaspoon maple extract
  1. WHIP heavy cream to stiff peaks in large bowl. Combine sweetened condensed milk, pecans, butter and maple flavoring in large bowl. Mix well. Fold in whipped cream.
  2. POUR into 9 x 5-inch loaf pan or 2-quart container; cover. Freeze 6 hours or until firm. Store in freezer.

*To toast nuts: Place nuts in dry nonstick skillet. Cook over medium heat, shaking pan until nuts are lightly browned. To avoid over-browning, remove from pan immediately.

Raspberry Mocha Mousse Parfaits

Prep Time: 40 Minutes
Chilling Time: 20 Minutes
Yield: 8 servings

  • 4 1-ounce squares unsweetened chocolate
  • 1 14-ounce can Eagle Brand Sweetened Condensed Milk
  • 1 1/2 teaspoons vanilla extract
  • 1 tablespoon Folgers® Instant Coffee Crystals
  • 1 teaspoon hot water
  • 1 cup (1/2 pint) heavy cream
  • 1 can refrigerated whipped cream
  • 2 cups Nature's Peak® Frozen Raspberries OR 2 cups fresh raspberries
  1. MELT chocolate in a microwave-safe dish on HIGH (100% power) in 20 second intervals until melted. Stir until smooth.
  2. POUR sweetened condensed milk into large bowl. Beat in melted chocolate and vanilla. Dissolve coffee in hot water. Add to chocolate mixture, beating until smooth. Chill 15 min­utes. Chill beaters and mixing bowl from electric mixer 10 minutes in preparation for next step.
  3. BEAT cream in chilled bowl with chilled beaters until stiff. Fold into chilled choco­late mixture. Reserve 8 raspberries for garnish. Layer parfait glasses as follows: 1/4 cup chocolate mousse, refrigerated whipped cream, 1/4 cup rasp­berries, 1/4 cup chocolate mousse. Refrigerate parfaits 20 minutes before serving. Just before serving, garnish each with refrig­erated whipped cream and a single raspberry.

Creamy Mini Tarts

Prep Time: 1 hour
Chilling Time: 2 hours
Yield: 60 mini tarts

  • 1 8-ounce package cream cheese, softened
  • 1 14-ounce can Eagle Brand Sweetened Condensed Milk
  • 1/3 cup lemon juice
  • 1 teaspoon vanilla extract
  • 4 1.9-ounce boxes mini phyllo shells
  • 2/3 cup Smucker's® Blueberry Preserves
  1. BEAT cream cheese in large bowl until fluffy. Gradually beat in sweetened con­densed milk until smooth. Stir in lemon juice and vanilla until blended. Spoon about 2 teaspoons into each mini shell. Refrigerate 2 hours or until firm.
  2. MAKE a slight indentation in the filling using the back of small round measuring spoon. Fill with 1/2 teaspoon preserves. Refrig­erate until ready to serve.

Variations
Fresh Fruit: Top mini tarts with fresh fruit such as strawberries, blueberries, bananas, raspberries, cherries, kiwi, grapes or pine­apple. Garnish with mint leaves.

Hot Fudge: Place 2 tablespoons hot fudge topping into corner of resealable plastic bag. Cut small corner off bag. Squeeze to drizzle over top of mini tarts.

Preserves: Use different flavors of preserves or orange marmalade to create a colorful assortment. Garnish with mint leaves.

  • 1          piece (12 inches) cracker bread or flatbread
  • 1          tablespoon olive oil, plus additional for brushing
  • 1          package (8 ounces) Borden Cheese Mild Cheddar Shreds, divided
  • 8          strips thick-sliced bacon, cooked crisp and broken into 1-inch pieces
  • 4          whole garlic cloves, sliced
  • 4          plum tomatoes, sliced
  • 1/2       red onion, cut in strips
  • 1/4       cup chopped Italian parsley
  • fresh basil leaves (optional)
  1. Heat oven to 400° F.
  2. Brush bread with small amount of olive oil and place on cookie sheet. Spread 1 1/2 cups cheese evenly around bread. Top evenly with bacon pieces.
  3. In small skillet over medium heat, heat 1 tablespoon olive oil until hot. Add garlic and saute until lightly browned. Sprinkle onto pizza. Arrange sliced tomatoes and red onions on pizza.
  4. Add parsley to remaining cheese and spread over ingredients.
  5. Bake 10 minutes, or until cheese is melted. Cut into squares and serve immediately. Garnish with fresh basil leaves, if desired.  

Tip: For a different flavor profile, try grilling pizza rather than baking. Brush raw side of dough with olive oil and grill until bottom of crust is golden brown.

Parrillada Mixta with Garlic and Sweet Chipotle Marinades

Servings: 6-8

Garlic Chipotle Marinade:

  • 14        garlic cloves, peeled
  • 1          medium white onion, quartered
  • 1 1/2    cups light Mexican beer
  • 3/4       cup olive oil
  • 1          tablespoon coarse black pepper
  • 4          tablespoons Tabasco Chipotle Pepper Sauce 
  • 1          teaspoon salt 
  • 2          flank steaks (1 pound each)

Sweet Chipotle Marinade:

  • 8          garlic cloves, peeled
  • 1          red bell pepper, de-seeded and stemmed 
  • 1          small white onion
  • 1          teaspoon ground cinnamon
  • 1          teaspoon smoked paprika
  • 8          tablespoons olive oil
  • 8          tablespoons agave syrup
  • 4          tablespoons fresh lime juice
  • 1 1/4    cups orange juice
  • 1 1/4    cups cold water
  • 4          tablespoons Tabasco Chipotle Pepper Sauce 
  • salt, to taste 
  • 2          pounds extra-large shrimp, peeled, deveined and tails on
  • 4-6       boneless, skinless chicken breasts
  1. To make Garlic Chipotle Marinade: In blender, puree garlic, onion, beer, olive oil and pepper. Transfer puree to large mixing bowl; add chipotle sauce and salt.
  2. Place steaks in re-sealable plastic bag and pour in marinade.

Note: Marinating time depends on the cut of beef selected. For fajitas or skirt steak, marinate at least 6 hours. 

  1. To make Sweet Chipotle Marinade: In blender, puree garlic, bell pepper, onion, cinnamon, paprika, olive oil, agave, lime juice, orange juice, water and chipotle pepper sauce.
  2. In separate re-sealable plastic bags, divide marinade over chicken and shrimp. Allow shrimp to marinate 8 hours and chicken 24 hours.
  3. To prepare meat: Remove steak, shrimp and chicken from marinade and set aside. Heat grill to medium-high heat. Brush off excess marinade and grill chicken first, to desired doneness, then steak and shrimp.

Note: Cooking times will vary depending on cuts of meat and desired doneness. For best results, use a meat thermometer.

Serving suggestion: Place steak, shrimp and chicken on large platter and serve with side items such as fresh guacamole, pico de gallo, grilled onions, fresh limes and fresh corn tortillas.

Triple Threat Burger

Prep time: 30 minutes
Cook time: 8 1/2 hours
Servings: 6

Pulled Pork:

  • 1             Farmer John Boneless Fresh Pork Shoulder Roast
  • 1/4          cup barbecue seasoning blend
  • 3/4          cup pale lager beer
  • 1 1/2       teaspoons liquid hickory smoke

Triple Threat Sauce:

  • 1             jar (12 ounces) seedless raspberry jam
  • 1             cup barbecue sauce
  • 3/4          cup pale lager beer
  • 1             teaspoon dry mustard
  • 1/4          teaspoon chipotle powder

Burgers:

  • 1             pound Farmer John Ground Pork
  • 1             pound 80 percent lean ground beef
  • 1/4          cup pale lager beer
  • 2             tablespoons barbecue seasoning blend
  • 6             slices cheddar cheese
  • 6             sandwich buns, toasted
  • 6             slices Farmer John Bacon, cooked crisp
  • 6             dill pickle planks
  1. To make pulled pork: Rub pork roast with seasoning and place in 4-5-quart slow cooker. Pour beer and liquid smoke around sides. Cover and cook 8-10 hours on low or 4-5 hours on high. 
  2. Remove roast from slow cooker with tongs and place in large container. Using tongs or two forks, shred pork and set aside 2 cups. Cover and refrigerate.
  3. To make sauce: In medium saucepan, combine raspberry jam, barbecue sauce, beer, mustard and chipotle powder; bring to boil over medium-high heat; boil 5 minutes, stirring constantly. Reduce heat and simmer 15 minutes. Stir 1/2 cup sauce into reserved pulled pork.
  4. To make burgers: Heat charcoal or gas grill to medium. Combine ground pork, ground beef, beer and seasoning; form into six (1-inch thick) burger patties. Grill 5 minutes per side until internal temperature reaches 160° F. Top each burger with slice of cheese; let melt.
  5. Place burgers on bottom buns; spoon about 1/3 cup pulled pork with barbecue sauce onto each burger. Top each with one slice bacon and one pickle plank then close with top bun.

Chipotle Glazed Spare Ribs

Prep time: 25 minutes
Cook time: 1 hour, 40 minutes
Servings: 6

  • 2          racks Farmer John Pork Spareribs, membranes removed 
  • 4          tablespoons salt
  • 4          tablespoons pepper
  • 6          cloves chopped garlic
  • 1          cup honey
  • brown sugar
  • 1/2       can (7 ounces) chipotle chilies in adobo sauce
  • 1/2       cup barbecue sauce
  • 2          limes, zest and juice only, plus additional lime juice
  • 1/2       cup cilantro, chopped
  1. Heat oven to 325° F. Season ribs with salt and pepper. Place on rimmed baking sheet and cover tightly with foil. Bake 1 1/2 hours until ribs reach internal temperature of 195° F. Let cool.
  2. While ribs bake, blend garlic, honey, brown sugar, chipotle chilies, barbecue sauce and lime zest and juice. Blend until smooth. Set aside.
  3. Heat charcoal or gas grill to medium-high. Place ribs on grill and baste with sauce mixture, turning frequently until well-coated with sauce and charred, about 10 minutes. Transfer to cutting board and let rest. Serve with remaining sauce mixture, additional lime juice and chopped cilantro.

Mini Pierogy Slider Kebabs

Prep time: 15 minutes
Total time: 20 minutes
Servings: 4-6

  • 1          box Mrs. T’s Mini Classic Cheddar Pierogies
  • 2          tablespoons olive oil
  • kosher salt
  • freshly ground black pepper
  • 1          pound ground beef
  • 1 1/2    teaspoons Worcestershire sauce
  • 1          tablespoon minced red onion
  • 4          deli slices Colby Jack cheese, quartered
  • 4-6       skewers
  • 14        pieces curly leaf lettuce
  • 7          cherry tomatoes, halved
  • 14        cornichon pickles
  1. Heat grill or indoor grill pan to medium heat. Toss pierogies with oil and season with salt and pepper. Grill 8-10 minutes, flipping halfway through. Remove.
  2. In medium bowl, combine ground beef, Worcestershire sauce, onion, salt and pepper. Form into 14 equal sized patties.
  3. Add patties to grill and cook 3-4 minutes per side. Add one slice of cheese to each during last minute of cooking to melt. Remove and cool slightly to handle.
  4. To assemble: skewer one pierogy, flat-side down, then one piece of lettuce, tomato, pickle, burger and another pierogy, flat-side down, to sandwich it all together. Repeat with remaining ingredients.

Farmers Market Mini Pierogy Salad

Prep time: 12 minutes
Total time: 18 minutes
Servings: 4

  • 1          box Mrs. T’s Mini Classic Cheddar Pierogies
  • 1/2       cup white balsamic or cider vinegar
  • 1          small garlic clove, crushed
  • 1/4       teaspoon salt
  • 1/4       teaspoon dried oregano
  • 1/3       cup extra-virgin olive oil
  • 1          large tomato, coarsely chopped
  • 1          medium cucumber, seeded, if necessary, and coarsely chopped
  • 1/4       cup red onion, thinly sliced
  • 4          ounces feta cheese, crumbled
  1. Saute pierogies according to box directions; place in large bowl.
  2. In small bowl, combine vinegar, garlic, salt and oregano; whisk in olive oil until well-blended.
  3. Add tomato, cucumber, red onion, feta and vinaigrette to bowl with pierogies; toss to mix well.

Peanut Butter and Jelly Pancake Dippers

Servings: 5 (2 pancake dippers per serving)

  • 1/4       cup old-fashioned rolled oats
  • 1/2       cup whole-wheat flour
  • 1/4       cup all-purpose flour
  • 1/4       teaspoon salt
  • 2          teaspoons brown sugar, packed
  • 1          teaspoon baking powder
  • 1          large egg
  • 1          tablespoon vegetable oil
  • 4          tablespoons reduced-fat creamy peanut butter
  • 1          cup fat-free milk
  • nonstick cooking spray
  • 1/3       cup sugar-free raspberry preserves, for dipping
  • 1          glass (8 ounces) fat-free milk
  1. In blender, combine oats and flours and pulse 3-4 times. Add salt, brown sugar, baking powder, egg, vegetable oil, peanut butter and 1 cup milk. Pulse several times until combined and no lumps in batter.
  2. Heat nonstick skillet to medium-low heat and lightly grease with cooking spray. Pour 1/4 cup batter onto skillet, cook 1-2 minutes until bubbles appear around edges then flip and cook another 1-2 minutes until golden. Immediately roll up pancake and secure with toothpick. Repeat process with remaining batter.
  3. Serve with raspberry preserves for dipping and pair with remaining 8-ounce glass of milk.
