Enjoymint Peppermint Pie

Prep time: 15 minutes
Cook time: 20 minutes

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 2 1/2 cups DairyPure Heavy Whipping Cream, divided
  • 8 ounces soft peppermint candy
  • 1 chocolate cookie crust
  • crushed peppermint candies, for garnish
  1. Soften gelatin in water; set aside.
  2. In small saucepan over low heat, cook 1/2 cup whipping cream with candy until candy melts.
  3. Add gelatin; mix well.
  4. Whip remaining whipping cream. Let gelatin mixture cool and fold in whipped cream, reserving 1/2 cup for garnish.
  5. Pour into crust. Chill.
  6. Before serving, top with reserved whipped cream and crushed peppermint candies.

Homemade Whipped Cream

  • 2 tablespoons granulated or confectioners' sugar
  • 2 cups DairyPure Heavy Whipping Cream
  • 1 teaspoon vanilla extract or liqueur
  1. In chilled glass bowl, add sugar to whipping cream. Using whisk or hand mixer, incorporate sugar into heavy whipping cream until it begins to thicken, leaving visible trails. Continue to whip until soft peaks start to form.
  2. Fold in vanilla extract or liqueur. Serve immediately or refrigerate and remix 1-2 minutes before serving.

Frosted Banana Cake

  • 2          medium ripe bananas
  • 1/2       cup butter, softened
  • 1 1/2    cups sugar
  • 2          eggs
  • 1          cup sour cream
  • 1/4       teaspoon vanilla extract
  • 2          cups flour
  • 1          teaspoon baking soda
  • 1/4       teaspoon salt

Frosting:

  • 1          package (8 ounces) cream cheese, softened
  • 1/2       cup butter, softened
  • 2          teaspoons vanilla extract
  • 3          cups powdered sugar
  1. Heat oven to 350° F.
  2. Peel, slice and mash ripened bananas; set aside.
  3. In large bowl, beat butter and sugar until fluffy. Add eggs, sour cream and vanilla; blend well. Gradually add in flour. Stir in bananas. Add baking soda and salt; mix well.
  4. Pour batter into baking pan. Bake 20-25 minutes, or until toothpick inserted into center of cake comes out clean. Let cool.
  5. To make frosting: In large bowl, beat cream cheese, butter and vanilla extract until fluffy. Gradually add powdered sugar. Mix until well combined.
  6. Frost cake. Store in refrigerator until ready to serve.

Caramel French Toast

  • 6          slices white bread, halved
  • 1/4       cup butter, cubed
  • 1/2       cup brown sugar
  • 1          tablespoon corn syrup
  • 3          eggs
  • 3/4       cup half-and-half
  • 1/2       teaspoon vanilla extract
  • 1/2       teaspoon cinnamon
  • 1/4       teaspoon salt
  • powdered sugar (optional)
  1. Cut bread slices in half.
  2. In saucepan, melt butter. Add brown sugar and corn syrup. Bring to boil, stirring frequently.
  3. Pour into 8-inch square baking dish. Arrange bread slices over caramel mixture.
  4. In small bowl, whisk eggs, half-and-half, vanilla extract, cinnamon and salt. Pour over bread slices. Cover with aluminum foil and refrigerate overnight.
  5. Heat oven to 350° F.   
  6. Remove from refrigerator 30 minutes before baking and remove aluminum foil.
  7. Bake 25-35 minutes, or until toothpick inserted into center comes out clean.
  8. Sprinkle with powdered sugar, if desired; serve.

Chocolate Caramel Pie

  • 1          package (15 ounces) pie crust

Filling:

  • 24        caramels, unwrapped
  • 1/3       cup water
  • 2/3       cup brown sugar
  • 2/3       cup sour cream
  • 1          teaspoon vanilla extract
  • 2          eggs, beaten
  • 1/2       cup walnuts, chopped
  • 1/3       cup grated sweet baking chocolate, divided

Topping:

  • 1          cup white chocolate chip morsels
  • 1/4       cup milk
  • 1          cup whipping cream
  • 2          tablespoons grated sweet baking chocolate
  1. Heat oven to 450° F. Prepare pie crust in 9-inch glass pie dish. Bake 8-9 minutes, or until lightly brown.
  2. To make filling: In medium bowl, combine caramels and water. Melt in microwave, stirring frequently. Stir in brown sugar, sour cream, vanilla extract, eggs and walnuts.
  3. Reduce oven to 350° F. Pour filling into cooled pie shell. Return to oven. Bake 30-40 minutes, or until edges of filling are set.
  4. Cool 15 minutes. Sprinkle 3/4 cup grated chocolate over pie. Refrigerate 2 hours.
  5. To make topping: In small glass bowl, combine white chocolate morsels and milk. Melt in microwave, stirring frequently. Set aside.
  6. In small bowl, beat whipping cream until peaks form. Fold in melted white chocolate mixture. Spread over cooled filling. Sprinkle with remaining grated chocolate.
  7. Refrigerate until ready to serve.

Peanut Butter Breakfast Bread Pudding with Maple Peanut Sauce

  • Butter
  • 2/3       cup creamy peanut butter, divided
  • 2          eggs
  • 1/2       cup granulated sugar
  • 2/3       cup milk
  • 1 1/2    teaspoons pure vanilla extract
  • 1/2       teaspoon salt
  • 4          cups cubed brioche or challah bread, cut into 3/4-inch cubes
  • 2/3       cup pure maple syrup
  • 1/3       cup crushed peanuts
  • powdered sugar, for garnish
  1. Heat oven to 350° F. Butter four 4-ounce ramekins.
  2. In bowl, mix 1/3 cup peanut butter, eggs, sugar, milk, vanilla and salt. Toss bread cubes in mixture until thoroughly coated. Divide evenly among prepared dishes. Bake until custard is set in middle and tops are golden, about 35-40 minutes. If tops of bread brown too quickly, cover ramekins loosely with aluminum foil.
  3. In small saucepan over low heat, combine remaining peanut butter and maple syrup until thoroughly warmed.
  4. To serve, drizzle ramekins with maple-peanut sauce and garnish with chopped peanuts and powdered sugar.

Substitution: Whole wheat rolls may be used in place of brioche or challah bread.

Easy Strawberry Shortcake

  • 1          can (5-8) Pillsbury flaky buttermilk biscuits
  • 2          tablespoons butter, melted
  • 1/4       cup sugar

Strawberry mixture:

  • 3          cups fresh strawberries, sliced
  • 1/3       cup sugar

Whipped cream:

  • 1/2       cup whipping cream
  • 2          tablespoons sugar
  • 1/4       teaspoon vanilla
  1. Heat oven to 375° F.
  2. Separate biscuits. Dip tops and sides of biscuits in melted butter. Dip biscuits, covering tops and sides, in sugar. Place sugar-side up on ungreased baking sheet. Bake 13-17 minutes, or until golden brown.
  3. To make strawberry mixture: In medium bowl, mix strawberries and sugar. Set aside.
  4. To make whipped cream: In small bowl, beat whipping cream and sugar until soft peaks form. Add vanilla and beat into mixture.
  5. On plate, split biscuits and put dollop of whipped cream mixture on bottom half of biscuit. Add strawberry mixture. Replace biscuit top and dollop with whipping cream.

Acai Bowl with Whole-Wheat Toast

  • 1          frozen acai smoothie pack (100 milligrams)
  • 1          cup low-fat milk
  • 1          medium frozen banana, sliced
  • 1          cup fresh or frozen mixed berries
  • 2          slices whole-wheat bread
  • fresh blueberries
  • granola
  • coconut flakes
  1. Under warm water, thaw frozen acai smoothie pack about 5 seconds.
  2. In blender, combine acai, milk, banana and mixed berries. Blend until smooth.
  3. Toast bread slices to desired doneness.
  4. Pour acai mixture into bowl and garnish with blueberries, granola and coconut flakes before serving. Serve with toast.

Overnight Oats

  • 1/3       cup old-fashioned rolled oats
  • 1/2       cup low-fat milk
  • 1/4       teaspoon vanilla extract
  • 2          tablespoons mixed dried fruit
  • 1          tablespoon walnuts, chopped
  • 1          tablespoon honey
  1. In bowl or jar, combine oats, milk and vanilla extract. Cover and refrigerate overnight.
  2. Before serving, stir in dried fruit, walnuts and honey.

Grilled Banana Pound Cake Kabobs

  • 1          loaf (10 3/4 ounces) frozen pound cake, thawed and cubed
  • 2          large bananas, cut into 1-inch slices
  • metal or soaked wooden skewers
  • 1/4       cup butter, melted
  • 2          tablespoons brown sugar
  • 1/2       teaspoon vanilla extract
  • 1/8       teaspoon ground cinnamon
  • ice cream
  • desired toppings
  1. Heat grill to medium heat.
  2. Alternately thread cake and bananas on skewers.
  3. In small bowl, mix butter, brown sugar, vanilla extract and cinnamon. Brush mixture over kabobs.
  4. Place kabobs on greased rack and grill for up to 1 minute, turning once.
  5. Serve with ice cream and desired toppings.

Apple-Cranberry Cobbler

  •             Nonstick cooking spray
  • 5          apples, peeled, cored and cut into 1/2-inch thick slices
  • 1 1/2    cups fresh or frozen cranberries
  • 2          teaspoons lemon juice
  • 1          teaspoon vanilla extract
  • 1/2       cup granulated sugar
  • 2          tablespoons cornstarch
  • 1/2       teaspoon ground cinnamon
  • 1          container (10.2 ounces) refrigerated home-style biscuits, quartered
  • 2          tablespoons butter, melted
  • 2          tablespoons sparkling sugar
  1. Heat oven to 375 °F.
  2. Prepare pie pan with nonstick cooking spray.
  3. In large bowl, mix apple slices, cranberries, lemon juice and vanilla extract.
  4. In small bowl, whisk sugar, cornstarch and cinnamon. Stir into fruit mixture.
  5. Spoon mixture into prepared pan. Cover with foil. Bake on cookie sheet 40-45 minutes. Remove from oven.
  6. Toss biscuits in melted butter. Distribute cut biscuits over fruit.
  7. Sprinkle biscuits with sparkling sugar. Return to oven and bake 18-20 minutes. Remove from oven.
  8. Let cool 15 minutes before serving.

Cinnamon Rolls with Caramel Glaze

Servings: 1 dozen rolls

Rolls:

  • 1 1/3 cups warm milk (105°F)
  • 2 packages (1/4-ounce each) active dry yeast
  • 1/4 cup granulated sugar, divided
  • 1/2 cup (1 stick) butter, softened
  • 2 egg yolks
  • 1 teaspoon Wilton Pure Vanilla Extract
  • 3/4 teaspoon salt
  • 4 cups bread flour, plus more for dusting

Filling:

  • 1/2 cup (1 stick) butter, softened
  • 1/3 cup granulated sugar
  • 2 tablespoons bread flour
  • 2 tablespoons ground cinnamon

Glaze:

  • 1/4 cup (1/2 stick) butter
  • 1/2 cup lightly-packed light brown sugar
  • 1/2 cup heavy whipping cream
  • 1 teaspoon Wilton Pure Vanilla Extract
  • 1/4 teaspoon salt
  • 1 cup confectioners' sugar (about 1/4 pound)
  1. For rolls, stir together warm milk, yeast and 1 tablespoon sugar in large bowl. Let stand 5-10 minutes or until foamy. Add butter, remaining 3 tablespoons sugar, egg yolks, vanilla and salt. Mix with electric mixer using dough hook on medium speed until combined. Gradually add flour, 1 cup at a time, and mix on medium speed until smooth, elastic dough forms, about 5 minutes.
  2. Spray large bowl with vegetable pan spray. Form dough into ball, place into bowl and cover with plastic wrap. Let stand in warm place for 45 minutes or until doubled in size.
  3. For filling, stir together butter, sugar, flour and cinnamon in medium bowl until well-combined.
  4. Prepare 13-by-9-inch pan with vegetable pan spray.
  5. Punch dough down and roll out to 18-by-14-inch rectangle on floured surface. Spread filling onto dough and roll up from long end, like a jelly roll. Pinch seam to seal, trim ends and cut into 12 equally-sized pieces.
  6. Place rolls into prepared pan; cover with plastic wrap and let rise 25-30 minutes or until doubled in size.
  7. Meanwhile, heat oven to 350°F. Remove plastic wrap from rolls and bake 25-29 minutes or until golden brown. Cool in pan on wire rack while preparing glaze.
  8. For glaze, melt butter in saucepan over medium heat. Add brown sugar and cream. Cook over medium-high heat until mixture reaches a simmer; cook for 1 minute, stirring constantly. Remove from heat and stir in vanilla and salt. Whisk in confectioners' sugar until smooth. Pour glaze over warm rolls. Serve warm.
