Blueberry Pancakes

Description
For a healthy start to the day, try these Blueberry Pancakes made with soymilk.

Ingredients
  • 1 cup all-purpose flour
  • 2 tablespoons cornstarch
  • 1-1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 eggs
  • 1 cup vanilla or plain soymilk
  • 2 tablespoons vegetable oil
  • 2 tablespoons honey
  • 3/4 cup blueberries

Preparation
    1. Combine flour, cornstarch, baking powder and salt in a medium mixing bowl. In a small bowl, whisk eggs, soymilk, oil and honey until thoroughly combined.
    2. Pour soymilk mixture over dry ingredients and whisk gently until barely combined - the batter should be slightly lumpy. Gently fold in blueberries. Cook on a hot, oiled griddle.

Serves
Yield 10-12 pancakes
