Avocado and Bean Salad
Ingredients
- 2 ripe avocados diced into
- 1/2-inch cubes
- 1 tomato diced into 1-inch cubes
- 1/4 cup sliced red onion
- 2 cups canned kidney or white beans
- Salt and pepper
- 2 tablespoons finishing oil (such as walnut oil or a fruity light olive oil)
- 1 tablespoon sherry vinegar
- 1 teaspoon chopped rosemary and thyme
Preparation
- Mix all ingredients together and serve.
