  • 2 cups carrots, grated
  • 1 1/2 cups apples, grated
  • 1/3 cup maple syrup
  • 1/2 cup plain or vanilla WholeSoy yogurt
  • 1 tablespoon canola oil
  • 1 1/2 cups flour
  • 3/4 cup walnuts, chopped
  • 1/4 cup brown sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon nutmeg
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1/2 cup raisins

    1. Preheat oven to 400°F. Lightly oil a muffin pan.
    2. In a large bowl, mix carrots, apples, maple syrup, yogurt and oil.
    3. In a separate bowl, combine flour, walnuts, sugar, baking powder, baking soda, nutmeg, cinnamon, ground ginger and salt.
    4. Fold the wet ingredients into the dry ingredients until just combined. Then fold in the raisins.
    5. Spoon the batter into the muffin pan.
    6. Bake for 20-25 minutes until golden, or until a toothpick comes out clean.
