Goat Cheese and Sun-Dried Tomato Crostini

Description
A wonderful appetizer or first course raises the standard for the rest of your holiday meal.

Ingredients

  • 12 slices French bread, cut 3/4 inch thick
  • 3 tablespoons olive oil
  • 4 ounces goat cheese, room temperature
  • 2 tablespoons finely chopped sun-dried tomatoes, packed in oil
  • 2 tablespoons chopped fresh basil
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • Basil leaves, for garnish
  • Sun-dried tomatoes, for garnish

Preparation
Lightly brush both sides of bread with olive oil. Place on baking sheet and broil 8 minutes or until golden. Remove from oven.

Meanwhile, in medium bowl, blend goat cheese, sun-dried tomatoes, chopped basil, salt and pepper until smooth and uniformly combined. (The mixture will become pink.) Spread goat cheese mixture evenly over crostini. Broil 7 minutes or until bubbly.

Remove to serving tray. Garnish with basil leaves and additional sun-dried tomatoes.
