Double Cranberry Bread

A recipe for Double Cranberry Bread
Ingredients
- 1-3/4 cups flour
- 1 cup sugar
- 1 tablespoon baking powder
- 2 cups Post Selects Cranberry Almond Crunch Cereal
- 1 cup milk
- 1 egg
- 1/3 cup orange juice
- 2 tablespoons oil
- 1 cup fresh cranberries, coarsely chopped
Preparation
Prep: 20 minutes Bake: 1 hour
1. MIX flour, sugar and baking powder in large bowl. Mix
cereal and milk in medium bowl; let stand 3 minutes. Add
egg, orange juice and oil; mix well. Add to flour mixture;
stir just until moistened. (Batter will be lumpy.) Gently
stir in cranberries.
2. POUR into greased 9x5-inch loaf pan.
3. BAKE at 375°F for 50 minutes to 1 hour or until toothpick
inserted in center comes out clean. Cool 10 minutes. Remove
from pan. Cool completely on wire rack. Cut into 16 slices
to serve.
