Black Bean-Blue Cheese Burgers

Description
A recipe for Black Bean-Blue Cheese Burgers

Ingredients

  • 1 (12-ounce) package Quorn Beef-Style Grounds, divided
  • 3 large cloves garlic, finely chopped
  • 3 large eggs
  • 2 tablespoons barbecue sauce
  • 2 cups drained and rinsed canned black beans
  • 2 tablespoons minced fresh cilantro or 1 tablespoon dried
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 2 ounces sliced blue cheese
  • 6 hamburger buns
  • Lettuce leaves
  • Dijon-style mustard

Preparation
Combine half the grounds with garlic, eggs, sauce, beans, cilantro and salt and pepper in a blender or food processor, pulsing until smooth. Transfer mixture to bowl and add remaining grounds.

Divide mixture into 6 portions and shape into burgers. Place on baking sheet and refrigerate 10 minutes. Meanwhile, preheat grill to high.

Grill burgers 5 minutes on each side. Top with cheese and grill an additional minute or until cheese is melted. Meanwhile, halve buns horizontally and toast on cool side of grill. Top burgers with lettuce leaves and mustard and serve on buns.
