Turkey Tomato Florentine Burgers Description
A recipe for Turkey Tomato Florentine Burgers

Ingredients

  • 1 6-ounce package Uncle Ben's Long Grain & Wild Rice Sun-Dried Tomato Florentine
  • 1 1/2 cups water
  • 1 5.5 ounce can of low-sodium tomato juice (about 2/3 cups)
  • 1 pound ground turkey
  • 1/4 cup fresh parsley, chopped
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 8 hamburger buns
  • 2 cups baby spinach
  • 2 tomatoes, sliced

Preparation
Prep time: 10 minutes | Cook time: 30 minutes

1. Combine rice, contents of seasoning packet, 11/2 cups water and tomato juice into a medium saucepan. Stir well. Bring contents to a boil. Reduce heat and simmer covered 25 minutes or until water is absorbed.

2. While the rice is cooking, combine the turkey, parsley and spices in a large mixing bowl.

3. Once the rice is cooked, allow it to cool by spreading out the rice on a large baking sheet for about 5 minutes. Scoop the rice into the turkey mixture mixing bowl and combine well with your hands. Form the mixture into 8 burgers. Spray the burgers with cooking spray and heat over a medium grill or broil for about 4 minutes on each side.

4. Serve on your favorite toasted bun with baby spinach leaves and a slice of tomato, or try just serving the burger over a bed of baby spinach leaves.

Nutrition
Each serving has only 290 calories, 2 grams of saturated fat, 3 grams of fiber and is an excellent source of Vitamin A, Iron and Vitamin C.
