A recipe for Grilled Peaches With Honey Amaretto Sauce

Ingredients

  • 2 large ripe peaches
  • 1 tablespoon honey
  • Sauce
  • 1/3 cup honey
  • 1/4 cup butter (no substitutions)
  • 2 tablespoons amaretto liqueur
  • 1/4 cup heavy cream
  • Almonds
  • 1 tablespoon melted butter
  • 1 tablespoon honey
  • 1 tablespoon brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 cup slivered almonds
  • 4 small scoops vanilla ice cream

Preparation
Prep time: 10 minutes Cook time: 15 minutes

Wash peaches and cut in half; discard pits. Brush lightly with honey and set aside. Heat grill to medium-low. To make sauce, bring honey to boil in heavy saucepan; reduce heat and simmer 3 to 4 minutes until deep golden brown. Add butter and stir until melted. Add liqueur and cream; simmer 2 minutes more, stirring frequently. Remove from heat and let cool slightly.

To make almonds, preheat oven to 350°F, and in an oven proof bowl, stir together melted butter, honey, brown sugar and cinnamon. Toss with slivered almonds. Bake 15 to 20 minutes, stirring twice. Spread almonds onto buttered piece of foil and let cool completely, then break apart.

Place peaches cut-side down on medium-low heated grill. Cook 3 to 4 minutes or until lightly charred. Remove from grill and place on 4 dessert plates. Top each with ice cream and drizzle with warm sauce. Sprinkle with almonds and serve.
