Caribbean Salsa of the Sea

Description
A recipe for Caribbean Salsa of the Sea

Ingredients

  • 1 can (1 pound 4 ounces) pineapple tidbits, drained
  • 2 cans (6 ounces each) Chicken of the Sea Shrimp, rinsed and drained
  • 1 large tart green apple, peeled, cored and diced
  • 1 cup diced, peeled mango*
  • 1/3 cup chopped fresh cilantro
  • 1/3 cup seasoned rice vinegar
  • 1 tablespoon granulated sugar
  • 1/4 to 1/2 teaspoon red pepper flakes
  • Tortilla chips

Preparation
In large bowl, combine pineapple, shrimp, apple, mango and cilantro. In small bowl, whisk together vinegar, sugar and red pepper flakes. Pour vinegar mixture over fruit, tossing well to coat. Cover; chill one hour. Serve with tortilla chips.

Variations
*This recipe may be prepared with fresh or canned mango or mango found in the refrigerated produce section. For another flavor, substitute fresh or canned peaches.
