Orange-Parsley Hummus

Description
A recipe for Orange-Parsley Hummus

Ingredients

  • 1/3 cup fresh parsley leaves
  • 1 teaspoon minced garlic
  • 1 can garbanzo beans (15 ounces), rinsed and drained
  • 1/4 cup fresh orange juice
  • 2 tablespoons tahini (sesame seed paste)
  • 1 1/2 tablespoons rice wine vinegar
  • 1 teaspoon low-sodium soy sauce
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon ground cumin
  • 1/8 teaspoon ground pepper

Preparation
With food processor on, drop parsley through chute; process until minced. Add all remaining ingredients and process until smooth. Refrigerate 1-2 hours before serving. Serve with favorite crackers.
