Ingredients
- 1 large onion, chopped
- 1 teaspoon prepared chopped garlic
- 2 tablespoons vegetable oil
- 1 pound boneless sirloin, sliced into 2- x 1- x 1/8-inch strips
- 1 tablespoon curry powder
- 1 cup unsweetened coconut milk
- 1 teaspoon chili powder
- 1 can (14.5 ounces) diced tomatoes, drained
- 2 cans (15 ounces each) Veg-All Original Mixed Vegetables, drained
- 1 cup fresh or canned pineapple chunks
- 1/2 cup chopped cilantro
Preparation
Prep time: 10 minutes | Cook time: 20 minutes
1. In large skillet, sauté onion and garlic in vegetable oil over medium-high heat until tender.
2. Add sirloin strips and brown over high heat for about 5
minutes.
3. Stir in remaining ingredients except cilantro.
4. Bring to boil. Reduce heat, cover, and simmer on low heat 15 minutes.
5. Serve in large soup bowls garnished with cilantro.
Serving suggestion: Serve with rice or couscous. Shredded
coconut may also be sprinkled over top when serving.
