Pork Fajitas

Pork Fajitas Description
Eat these tasty fajitas as is or top them with chopped lettuce, fresh cilantro or salsa.

Ingredients

  • 4 (8-inch) whole-wheat tortillas
  • 1 tablespoon plus 2 teaspoons fresh lime juice, divided
  • 1 tablespoon plus 1 1/2 teaspoons extra virgin olive oil, divided
  • 1 garlic clove, minced
  • 1 teaspoon chili powder
  • 1 1/2 pounds pork cutlets, about 1/2 inch thick
  • 1 large red bell pepper, cut into thin strips
  • 1 small onion, thinly sliced
  • Salt and freshly ground black pepper

Preparation
PREP TIME: 10 minutes | COOK TIME: 25 minutes

Heat oven or toaster oven to 200°F. Roll tortillas in foil and place in oven to warm.

Whisk together 1 tablespoon lime juice, 1 tablespoon oil, garlic and chili powder in large mixing bowl. Add pork and stir to coat. Cover with plastic wrap and marinate at room temperature 15 minutes.

While pork is marinating, heat remaining oil in a medium nonstick skillet over medium-high heat. Add bell pepper and onion. Cook, stirring occasionally, until vegetables are softened and lightly browned, 10 to 12 minutes. Add remaining lime juice, stir and remove from heat; season with salt and pepper. Transfer to cutting board and let rest 2 minutes.

Slice pork into thin strips, place on platter with peppers and onions and serve with warmed tortilla.
