Old Fashion Potato Salad

A recipe for Old Fashion Potato Salad
Ingredients
- 9 cups cubed unpeeled redskin potatoes (about 3 lbs.)
- 1/2 cup diced onion
- 1/2 cup diced celery
- 1/4 cup sweet or dill pickle relish, drained
- 1 hard cooked egg, chopped
- 2 hard cooked egg whites, chopped
- 1 clove garlic, minced
- 3/4 cup fat free sour cream
- 1/3 cup low fat mayonnaise
- 2 tablespoons chopped fresh parsley
- 1 teaspoon dry mustard
- 1 teaspoon salt (or to taste)
- 1/4 teaspoon pepper (or to taste)
Preparation
Total preparation and cooking time: 45 minutes
1. Place potatoes in large pot, cover with water and bring to boil. Cook 8 minutes or until tender. Drain.
2. Mix potatoes with next 6 ingredients; toss gently.
3. Combine sour cream and next 5 ingredients; stir well.
4. Pour sour cream mixture over potato mixture and toss gently to coat. Cover and chill.
