Ingredients
- 1 (12-ounce) bag pita chips
- 1/2 cup diced red pepper
- 1/2 cup diced yellow pepper
- 1/2 cup matchstick carrots
- 1 (14-ounce) can chickpeas, rinsed and drained
- 1/2 packet Hidden Valley Original Ranch Salad Dressing and Seasoning Mix
- 2 cups reduced-fat shredded Cheddar cheese
- Low-fat sour cream to taste (optional)
- Olives to taste (optional)
Preparation
Pile pita chips in a shallow serving dish. Mix peppers, carrots and chickpeas together in a bowl; combine with chips.
In small bowl, sprinkle Hidden Valley Original Ranch Salad Dressing and Seasoning Mix over cheese. Microwave on high about 45 seconds; stir. Microwave another 45 seconds or until melted. Immediately pour cheese mixture over chips and veggies. If desired, top with low-fat sour cream and olives.
