Lemon Icebox Pie Description
A recipe for Lemon Icebox Pie

Ingredients

  • 1 1/2 cups vanilla wafer crumbs (about 40 wafers)
  • 1/4 cup margarine or butter, melted
  • 1 envelope unflavored gelatin
  • 1 3/4 cups water, divided
  • 1 (14-ounce) can Eagle Brand Sweetened Condensed Milk (NOT evaporated milk)
  • 1 (3-ounce) package or 6 tablespoons presweetened lemonade-flavor drink crystals

Preparation
Prep Time: 30 minutes | Chill Time: 3 hours

1. Combine crumbs and margarine; press firmly on bottom and up side of 9-inch pie plate. Chill.

2. Meanwhile, in small saucepan, sprinkle gelatin over 1/4 cup water; let stand 1 minute. Over low heat, stir until gelatin dissolves; set aside.

3. In medium mixing bowl, combine sweetened condensed milk, remaining 1 1/2 cups water and lemonade crystals; mix well. Stir in gelatin mixture. Pour into prepared crust.

4. Chill at least 3 hours or until set. Garnish as desired. Refrigerate leftovers.
