A recipe for Crunchy Vidalia Sweet Onion Salad

Ingredients

  • 1 Vidalia Sweet Onion
  • 1 zucchini
  • 1 carrot
  • 1 cup plain yogurt
  • 2 tablespoons chopped parsley
  • 1 tablespoon each: chopped fresh dill and lemon juice
  • 1 teaspoon Dijon mustard
  • 1/4 teaspoon each: sugar, salt and pepper
  • Cayenne pepper to taste
  • Dill sprigs for garnish, optional

Preparation
Cut onion, zucchini and carrot into 1/4-inch-wide matchstick strips. Combine yogurt, parsley, chopped dill, lemon juice, mustard, sugar, salt and pepper. Season dressing with cayenne pepper. Pour over vegetables; toss well. Serve immediately, or chill several hours before serving.
