Ingredients
- 1 Vidalia Sweet Onion
- 1 zucchini
- 1 carrot
- 1 cup plain yogurt
- 2 tablespoons chopped parsley
- 1 tablespoon each: chopped fresh dill and lemon juice
- 1 teaspoon Dijon mustard
- 1/4 teaspoon each: sugar, salt and pepper
- Cayenne pepper to taste
- Dill sprigs for garnish, optional
Preparation
Cut onion, zucchini and carrot into 1/4-inch-wide matchstick
strips. Combine yogurt, parsley, chopped dill, lemon juice,
mustard, sugar, salt and pepper. Season dressing with
cayenne pepper. Pour over vegetables; toss well. Serve
immediately, or chill several hours before serving.
