A recipe for Steak and Vidalia Sweet Onion Salad

Ingredients

  • 1 pound flank steak
  • 1 1/4 teaspoons salt, divided
  • 1/4 teaspoon ground black pepper, divided
  • 4 cups leaf lettuce torn in bite-size pieces
  • 1 medium Vidalia Sweet Onion, thinly sliced (about 2 cups)
  • 2 cups cucumber, thinly sliced
  • 1 cup sweet red bell pepper, thinly sliced
  • 1/4 cup olive oil
  • 3 tablespoons lime juice
  • 1/4 cup fresh dill, chopped

Preparation
Preheat broiler. Season steak with 1/4 teaspoon salt and 1/8 teaspoon ground black pepper. Broil 1 to 2 inches from heat until desired doneness (3 to 4 minutes per side for medium- rare). Cut into thin slices; cool slightly. Place in large salad bowl with lettuce, onion slices, cucumber and sliced red bell pepper; set aside. Combine olive oil, lime juice, dill and remaining 1 teaspoon salt and 1/8 teaspoon black pepper; pour over salad; serve immediately.
