A recipe for Chilled Rustic Potato Salad
Ingredients
- 4 pounds new potatoes, cleaned and quartered, with skin on
- 1 1/4 whole celery stalks, finely diced
- 1/2 tablespoon salt, to taste
- 1 tablespoon freshly ground black pepper, to taste
- 2 tablespoons sugar
- 1/2 cup coarsely chopped crisp, tart pickles
- 1/2 cup capers
- 1/2 cup finely sliced fresh chives
- 2 1/2 whole red bell peppers, chopped
- 1/2 red onion, chopped
- 1/2 cup sour cream
- 1/4 cup prepared whole grain mustard
- 1 cup mayonnaise
Preparation
Preparation time: 2 hours to cool or overnight
Cooking time: 15 minutes
Ease of preparation: easy
Place potatoes in pot of cold water and bring to boil. Cook
until just tender. Do not overcook.
Once potatoes are tender, drain and rinse potatoes in cold
water. Place drained potatoes in refrigerator to cool
completely.
In large bowl, combine all remaining ingredients and mix
well. Add chilled potatoes and coat thoroughly.
