A recipe for Greek-Style Summer Beet Salad
Ingredients
- 1 cup diced seedless cucumber (large dice)
- 3/4 cup sliced celery
- 1/2 cup sliced radishes
- 1/3 cup thinly sliced green onions
- 1 jar (16 ounces) Aunt Nellie's sliced pickled beets OR sliced beets, drained, patted dry and cut in half
- 1/4 cup fresh lemon juice
- 1 large garlic clove, crushed
- 3/4 teaspoon dried oregano leaves, crushed
- 1/8 to 1/4 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 3 tablespoons olive oil
- 1/2 cup (2 ounces) crumbled feta cheese
- 1/4 cup coarsely chopped toasted walnuts
Preparation
Preparation Time: 20 minutes
1. In large bowl, combine cucumber, celery, radishes, green onions and beets.
2. In small bowl, whisk together lemon juice, garlic, oregano, salt and pepper. Gradually whisk in olive oil.
3. Pour dressing over vegetables; mix gently. Cover and chill until ready to serve.
4. To serve, spoon salad into serving bowl. Sprinkle with cheese and walnuts.
