Spring Greens With Wild Berry Dressing

Description
A recipe for Spring Greens With Wild Berry Dressing

Ingredients

  • 1/2 cup boiling water
  • 6 Lipton Bavarian Wild Berry Pyramid Tea Bags
  • 1 small shallot or onion, peeled and halved
  • 2 tablespoons white wine vinegar
  • 4 teaspoons granulated sugar
  • 1 teaspoon Dijon mustard
  • 1/3 cup Bertolli Classico Olive Oil
  • 6 ounces spring mix or salad greens
  • 1 small red onion, thinly sliced
  • 2 oranges, peeled and sectioned
  • 4 ounces herbed goat cheese, sliced
  • 1/2 cup toasted chopped pecans

Preparation
Prep Time: 15 minutes

Pour boiling water over tea bags; cover and brew 5 minutes. Remove tea bags and squeeze; let cool.

In blender, process tea, shallot, vinegar, sugar and mustard until smooth. While processing, slowly drizzle in olive oil. Season, if desired, with salt and pepper.

On serving platter, arrange spring mix. Evenly top with onion, oranges and cheese, then sprinkle with pecans. Just before serving, drizzle with dressing.
