Ingredients
- 12-16 ounces salmon fillet
- 2 6-ounce packages Fresh Express Garden Salad
- 2 cups cherry tomatoes, halved
- Honey Ginger Dressing:
- 5 tablespoons salad oil
- 1 1/2 tablespoons sesame oil
- 1/3 cup seasoned rice vinegar
- 1 1/2 tablespoons honey
- 1 tablespoon grated gingerroot
- Dash hot pepper sauce, or to taste
Preparation
Prepare grill with a fairly hot fire. Arrange Garden Salad in large shallow bowl with tomatoes, set aside. In a screw-top jar combine all Dressing ingredients; cover and shake well; reserve 5 tablespoons dressing for salmon.
Place salmon skin side down on hot grill, cover and grill for 10 minutes. Uncover grill, brush salmon with reserved Dressing; remove from grill to cutting board.
Toss Salad and tomatoes with some of remaining Dressing; portion onto 4 dinner plates. Top each salad with a portion of salmon, serve immediately with whole wheat dinner rolls. Refrigerate any remaining Dressing.
